HEARTY OLD-FASHIONED VEGETABLE BEEF SOUP



Hearty Old-Fashioned Vegetable Beef Soup image

Made with meaty soup bones, this soup is loaded with vegetables, making it a fabulous cold-weather meal.

2 to 3 pounds beef shanks
8 cups beef stock (unsalted or low sodium)
3/4 cup onion (chopped)
3/4 cup celery (chopped)
1/4 teaspoon pepper (coarsely ground)
1 bay leaf
Kosher salt (to taste)
2 (14.5-ounce) cans tomatoes (diced)
2 cups cabbage (shredded)
1 1/2 cups green beans (fresh cut or frozen)
1 1/2 cups potatoes (diced, raw)
1 cup carrots (thinly sliced)
2 teaspoons Worcestershire sauce
Optional: 1 teaspoon sugar

Steps:

  • Gather the ingredients.
  • In a large stockpot or Dutch oven , combine the beef shanks, beef stock, onion, pepper, bay leaf, and salt. Cover the pot and bring it to a boil over medium-high heat. Reduce the heat to low, and skim off and discard any foam. Simmer, partially covered, stirring occasionally, for 3 hours, or until the meat is mostly tender.
  • Remove the beef shanks from the soup. Skim excess fat from the surface of the soup with a ladle or spoon. Remove the meat from the bones, cut it into small pieces, and add it back to the broth. Add the tomatoes, cabbage, green beans, potatoes, carrots, celery, Worcestershire sauce, and sugar, if using. Continue to simmer for about 45 minutes longer, or until the vegetables and meat are tender. Taste and adjust the seasonings.
  • Remove the bay leaf and ladle the soup into bowls. Serve hot and enjoy.

1 ½ pounds beef chuck roast (trimmed and cubed into ½" pieces)
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon olive oil
1 onion (chopped)
2 cloves garlic (minced)
6 cups beef broth
15 ounces canned tomatoes (with juices)
1 teaspoon Italian seasoning
2 cups potatoes (cubed ½")
3 carrots (sliced ½")
1 rib celery (sliced ½")
1 cup green beans (cut into 1" pieces)
½ cup frozen corn (thawed or canned )

Steps:

  • Season beef with salt & pepper.
  • Heat olive oil over medium-high heat in a large pot and add beef in small batches cooking until browned, about 2 minutes per side.
  • Add cooked beef back to the pan, reduce heat to medium and add onion and garlic. Cook 2 minutes more.
  • Add broth, tomatoes with juices, and Italian seasoning, scraping up any brown bits from the bottom of the pan. Bring to a boil, reduce heat, and simmer 45-65 minutes or until beef is fork-tender.
  • Add potatoes, carrots, and celery and simmer 15 minutes more. Add beans and corn, simmer 10 minutes more. (If you prefer softer beans, they can be added earlier).
  • Season with salt & pepper to taste and serve.

1 ½ pounds beef stew meat, cut into 1/2-inch cubes
2 (14 ounce) cans beef broth
1 (15 ounce) can green beans, drained
1 (15.25 ounce) can whole kernel corn, drained
1 (14.5 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 (46 fluid ounce) bottle tomato-vegetable juice cocktail (such as V8®)
¼ teaspoon garlic powder, or to taste
¼ tablespoon onion powder, or to taste

Steps:

  • Mix beef broth and beef stew meat in a large pot over medium heat. Bring broth to a simmer, reduce heat to low, and cook beef at a simmer until tender, about 45 minutes.

Better than Campbell's but just as comforting! Loosely based on a gourmet cooking magazine's recipe for Beef Barley soup, I didn't have any barley or okra, so I added root veggies to make it more hearty, like a rich broth with the chunkyness of stew. It turned out to be the best soup I've ever made! DH, stepson and baby girl kept coming back for more.

1 lb beef stew meat
1 onion
3 celery ribs
10 baby carrots (or a couple regular carrots)
2 potatoes (peeled if you like)
1 cup frozen corn
1 cup frozen peas
2 (14 ounce) cans diced tomatoes (I use salt-free)
3 1/2 cups beef broth (or 2 14-oz cans)
2 small bay leaves
2 teaspoons garlic powder
2 tablespoons olive oil (or any cooking oil)
4 cups water
2 teaspoons hot pepper sauce

Steps:

  • Cut meat into small, bite-size (1/2") pieces.
  • In a large pot or dutch oven, saute meat in 1 T oil on medium-high heat until all sides are brown.
  • Set aside on a plate.
  • Chop celery, onion, potatoes, and carrots into bite-size pieces.
  • Saute celery and onion in remaining 1 T oil until onion is golden (about 10 minutes).
  • Add browned beef, water, broth, tomatoes with juices, carrots, potatoes, corn, bay leaves and garlic.
  • Bring to a boil.
  • Reduce heat and simmer uncovered until beef is almost tender, about an hour.
  • Add peas and hot sauce to soup.
  • Cover and simmer until beef is tender, about 30 minutes longer.
  • Serve and season with freshly ground black pepper, hot sauce, or crumbled saltines, if desired.

3-4 lb beef chuck roast
3 Tbsp bacon grease
2 can(s) beef broth
2 Tbsp chicken base
1 can(s) diced tomatoes
2 large potatoes, diced
4 stalk(s) celery, sliced
1 large onion, diced
1 large family size bag mixed frozen vegetables
1 tsp garlic, minced
1/2 c red wine
8 c water
1/2 tsp of each, white pepper, black pepper, onion powder, garlic powder
1 Tbsp salt

Steps:

  • 1. Prep ingredients and measure everything first.
  • 2. Sear the chuck roast in bacon grease in a large dutch oven.
  • 3. Pour off the grease after searing, leaving the roast in the dutch oven.
  • 4. Add the beef broth, chicken base, tomatoes, onions, garlic, wine and all the spices.
  • 5. Turn your heat medium-low and let everything simmer for at least 3 hours or longer, depending how tender the roast is.
  • 6. When the roast starts getting tender, you can take a slotted spoon and take out pieces of meat and pick off the fat pieces that's still attached to the roast and put the meat back into the pot. (I've used leaner cuts of beef roasts, but it's the marbling in a chuck roast that makes this soup wonderful)
  • 7. Add the rest of the chopped and frozen vegetables and the 8 cups of water. Turning up the heat to start another good simmer.
  • 8. During the cooking phase of the vegetables, start taste testing for desired seasonings. I usually add additional salt, pepper, and garlic, a little at a time at this point, if needed.
  • 9. This soup gets better overnight. After refrigeration the next day, the fat rises to the top. Take a spoon and skim the grease and discard.
  • 10. Note: This is a thick, hearty, soup, so it needs a lot of seasonings. After everything is in the pot, then begin to add additional seasoning and spice, a little at a time to your liking. Enjoy!
