DELICIOUSLY SEASONED CHICKEN / CROCK POT
This is one delicious bird...and easy to boot...you could serve with mashed taters, as it makes a wonderful gravy...enjoy doing something else, while the crock pot does the work. The broth this bird makes is delicious drizzled over the chicken when serving...Yummilicious!!! My photos

Steps:
- 1. Combine seasoning mix ingredients in a small bowl.
- 2. Melt butter over medium heat in a skillet. Add onion, red pepper and 3 tablespoons of the seasoning mix. Cook until the onions are golden brown, add garlic the last few minutes of cooking - approximately 20 minutes in total. Cool slightly.
- 3. Rinse chicken under cold water and remove any giblets that are in the cavity, pat dry with a paper towel.
- 4. Sprinkle the outside of the chicken with the remainder of the seasoning mix.
- 5. Stuff vegetable mixture into the cavity of a chicken.
- 6. Place chicken into the slow cooker. Cover and cook on low for 6 hours. I love to drizzle the delicious broth over the chicken...absolutely delicious!
- 7. Empty the vegetable stuffing from the cavity and pour juices from the bottom of the slow cooker into a medium saucepan. With the heat on medium high, whisk in flour and 1 cup of stock. Stir continuously until thickened and starts to bubble. Add more stock if you prefer a thinner gravy. Serve over mashed potatoes.

- Wash roast and pat dry with paper towels.
- Pour dressing into a gallon size zip-lock plastic bag. Add roast and refrigerate for a few hours (preferrably overnight).
- Remove roast from plastic bag, make several shallow slits in top of roast. Place prepared roast into your crock-pot.
- Mix together the remaining ingredients in a small bowl; pour over roast.
- Add bay leaves.
- Cover and cook on LOW for 8 to 10 hours. (HIGH = 4 to 5 hours).
- COOK'S TIP: To complete this meal, in last hour add small red potatoes (halved), mushrooms (halved) and carrots (diced). Sauce can be thickened with 2 tablespoons flour dissolved in 1/4 cup of water.
- COOK'S TIP: For leftovers, add tomatoes, corn, celery, green beans, etc. Add a gravy mix and you have a tasty stew or soup.
