Steps:

  • Mix together the potatoes, flour, baking powder, 3 eggs, and salt and pepper in a bowl.

Definitely a five star recipe that's base I found on another recipe site http://allrecipes.com where it had many rave reviews. I fixed it to be dairy & corn free. DH and I give this 5 stars. This is excellent served with my Recipe #362340 using the maple syrup option or drop a few blueberries on top of each pancake before flipping. They are already delicious with pure maple alone. These work with variations such as a delicious incorporation of chopped or mashed banana, alcohol free vanilla and a dash of coconut milk to taste almost like banana fritters. 4 Golden Delicious apples
1/2 stick butter, melted
1/4 cup maple syrup
2 cups ricotta
4 large eggs, separated
1 cup buttermilk
1 tablespoon lemon juice
1 teaspoon lemon zest
1 cup all-purpose flour
3 tablespoons sugar
1 teaspoon baking powder
Pinch salt
Butter, for cooking
Confectioners' sugar, for dusting, optional
1 cup maple syrup, warmed on stove-top

Steps:

  • Preheat oven to 400 degrees F.
  • On 1 tray lay the slices of prosciutto out in a single flat layer. Season with some salt and freshly ground black pepper, if desired, and pop into the oven. Roast the prosciutto until crispy, about 10 to 15 minutes.
  • Cut each apple into thirds, remove the cheeks and discard the core. Slice each piece into 4 and toss with butter and maple syrup in a large bowl. Transfer to a roasting pan and place in the oven. Roast the apples until they are fork-tender and slightly caramelized on the top, about 30 to 45 minutes depending on ripeness of the fruit.
  • Combine the ricotta, egg yolks, buttermilk, lemon juice, and lemon zest in a large mixing bowl. Sift the dry ingredients: flour, sugar, baking powder, and salt together into the ricotta mixture and stir until fully combined. In a separate bowl whisk the egg whites until stiff peaks form and then gently fold into the batter.
  • Heat a large nonstick pan over medium heat and add a little butter. Cook 2 to 3 pancakes at a time using a 6-ounce ladle or measuring cup to pour the batter into the pan. The trick to perfect round pancakes to carefully pour all the batter in the same spot and let it roll out to a complete circle. Cook the pancakes on 1 side until they set. When small bubbles appear on the uncooked surface, flip the pancakes and cook until golden on both sides, about 6 minutes. Keep the pancakes on a plate set at the back of the stove under a dry towel to keep warm while you make the rest.
  • To serve, lay the pancakes on a plate and dust with confectioners' sugar. Serve with roasted apples, crispy prosciutto strips and warm maple syrup.

  • In a large bowl, combine the flour, baking powder, salt, and sugar.
  • In a medium bowl, lightly beat the eggs then whisk them into the flour mixture.

1 c pumpkin puree
2 tsp pumpkin pie spice
2 Tbsp baking stevia or 1/4 cup sugar
2/3 c unsweetened applesauce
3 eggs
1 c skim milk
1 tsp vanilla extract
4 tsp baking powder
1/2 tsp salt
1 c all purpose flour
1 c whole wheat flour
butter flavored cooking spray
1/4 c walnuts, toasted (optional)
pure maple syrup (optional)

Steps:

  • 1. mix together we ingredients
  • 2. mix together dry ingredients
  • 3. combine wet and dry ingredients together.
  • 4. Spray a nonstick skillet with butter flavored cooking spray and heat over medium heat.
  • 5. Ladle on batter into the skillet and cook over medium heat for about 2-3 minutes until bubbling on top. Flip and cook for about 2 minutes on other side. Repeat process until all batter is used up.
  • 6. Sprinkle pancakes with toasted walnut pieces and ladle on a couple of Tablespoons of pure maple syrup if desired.

1 cup brown rice flour
3 tablespoons tapioca flour
1/3 cup potato four
4 tablespoons almond milk
1 tsp sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
3 tablespoons vegetable oil
2 cups water

Steps:

  • 1. In a bowl, mix or sift together the rice flour, tapioca flour, potato starch, dry buttermilk powder, sugar substitute, baking powder, baking soda, salt, and xanthan gum. Stir in eggs, water, and oil until well blended and few lumps remain. 2. Heat a large, well-oiled skillet or griddle over medium high heat. Spoon batter onto skillet and cook until bubbles begin to form. Flip, and continue cooking until golden brown on bottom. Serve immediately with condiments of your choice.

1 cup pumpkin puree
2 cups oat flour (coarsely grind oats)
1 cup ricotta cheese
1/2 cup brown sugar
1 cup craisins (optional)
1 cup walnuts (optional)
1 tablespoon oats
2 eggs (or 1/2 cup egg whites)
1 teaspoon cinnamon or 1 teaspoon pumpkin pie spice

Steps:

  • In a food processor process ricotta cheese, pumpkin puree, oat flour, cinnamon, and eggs. Process until all ingredients come together.
  • Stir in craisins and walnuts if using.
  • Fill muffin pan and top with craisins, walnut and oats.
  • Bake at 350 degrees for 23 minutes till a toothpick comes out clean, or melt butter over medium high heat in a skillet and use to make pancakes.

"Very yummy potato pancakes with ground beef inside. So good! My hubby, who doesn't like potato pancakes, loved this! You can change it up the way you like. Serve with sour cream. These are even good next day! "

Number Of Ingredients 12

8 potatoes, peeled and shredded
1/4 cup all-purpose flour
1/2 teaspoon baking powder
3 eggs
salt and black pepper to taste
Filling:
1/2 pound ground beef
1/2 onion, grated
1 pinch garlic salt
1 egg
1/4 cup bread crumbs
2 teaspoons vegetable oil

Steps:

  • Mix together the potatoes, flour, baking powder, 3 eggs, and salt and pepper in a bowl. In another bowl, mix the ground beef, onion, garlic salt, 1 egg, and bread crumbs until well-combined.
  • Heat the oil in a skillet over medium-low heat, and drop a rounded tablespoon of potato mixture into the hot skillet. Spread and flatten the pancake out a little, and place about 2 teaspoons of beef mixture on the pancake, spreading the filling out almost to the edges of the pancake. Drop another rounded tablespoon of potato mixture on top of the beef, and spread it out to completely cover the beef. Fry until the bottom of the pancake is golden brown, about 5 minutes, then flip and fry the other side until golden, 1 to 2 more minutes.
