This is the BEST! I was raised on this, and it is the best chicken Kiev you'll ever have. After you make it a few times it's a snap. I do this by memory. You can adjust the flavors to taste. This recipe tastes great as leftovers also!

¼ cup butter, softened
⅛ teaspoon garlic powder
1 tablespoon chopped fresh parsley
5 cups honey-sweetened corn flake cereal
3 tablespoons chopped fresh parsley
1 ½ teaspoons garlic powder
1 teaspoon paprika
1 teaspoon salt
6 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
¼ cup buttermilk

Steps:

  • In a small bowl, stir together the butter, 1/8 teaspoon garlic powder, and 1 tablespoon of parsley. Spread the butter mixture 1/2 inch thick onto a piece of aluminum foil, and place in the freezer to harden.
  • Place the cereal in a large plastic resealable bag, and crush with a rolling pin. Add the remaining parsley, 1 1/2 teaspoons garlic powder, paprika and salt, seal the bag, and shake to mix.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish.
  • Remove the slab of butter mixture from the freezer, and slice into 6 strips. Place one strip onto the center of each pounded chicken breast, roll up and secure with toothpicks. Dip rolled chicken breasts into buttermilk, then into the cereal mixture. Place coated breasts into the prepared baking dish.
  • Bake, uncovered, for 30 to 40 minutes until chicken is no longer pink, and the juices run clear. The outside should be crispy and golden.

This is SOOOO good! You can double the complete recipe and bake in a roaster pan, throw in a chopped green bell pepper and/or a jalapeno pepper also if desired! Four small turkey legs can be used in place of the chicken, if using larger turkey legs then double the cranberry sauce and BBQ sauce, also the cooking time will need to be increased.

6 -8 chicken pieces
1 tablespoon vegetable oil
2 tablespoons butter
salt and black pepper
1 onion, chopped
1 -2 tablespoon minced fresh garlic (or to taste)
1 large celery rib, finely diced
1 pinch cayenne pepper (optional)
1 (16 ounce) can ocean spray whole berry cranberry sauce
1 cup favorite barbecue sauce

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch baking dish.
  • Heat butter with oil in a large skillet over medium-high heat.
  • Season the chicken with salt and pepper, then add to the skillet; cook on both side until lightly browned, then place the chicken skin-side up into the baking dish (leave the drippings in the pan).
  • Add in the onion, celery, garlic and cayenne pepper (if using) adding in a little more oil if needed; sate for about 3 minutes; stir in the cranberry sauce and BBQ sauce; bring to a light simmer, stirring until completey combined, then pour over the chicken.
  • Bake uncovered for about 50 minutes or until chicken is tender and cooked through, basting with the sauce a couple times during baking.

4 bone-in chicken breast halves, with skin
1 tablespoon olive oil
1 pinch garlic powder
salt and pepper to taste
¾ cup Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Rub each chicken breast with olive oil, then place in a lightly greased 9x13 inch baking dish. Season with garlic powder, salt and pepper to taste. Pour Worcestershire sauce over each breast. Cover dish with aluminum foil and bake in the preheated oven for 45 minutes. Check chicken and remove cover if desired. Bake for another 15 minutes.

I found this recipe online: Baked flautas/taquitos stuffed with seasoned, shredded chicken, spinach, and cheese are crispy, but don't have the greasiness of fried versions. To shred poached chicken easily, put it into the bowl of a stand mixer fitted with the paddle attachment and mix on medium for 45 seconds. Store-bought rotisserie chicken can be substituted for the poached chicken to save time.

16 ounces beer
2 cups water
1 teaspoon paprika

It's not a quicky but most of the time it's in the oven so you're not actually doing anything but waiting. I like to serve this with buttered egg-noodles. If you like chicken cacciatore, give this one a try- it's kinda in the same family.

2 1/2-3 lbs chicken pieces
2 tablespoons shortening (I use olive oil)
1/2 cup onion, sliced
3 garlic cloves, minced
1 (14 1/2 ounce) can chopped tomatoes
1/4 cup parmesan cheese, grated
3 tablespoons flour
1/2 cup sour cream

Steps:

  • Season your chicken the way you like it.
  • Brown it in the shortening or olive oil.
  • Place browned chicken in a 13 x 9 inch baking dish.
  • Cook the onion and garlic in the drippings until tender.
  • Add tomatoes and parmesan cheese; bring to a boil.

The crazy ingredient in this recipe is dry mashed potato flakes. Before you say "ewww......", I know it sounds very weird, but in the end, you don't end up with mashed potato-tasting chicken. You have a mixture of the potato flakes along with the grated Parmesan cheese plus the spices, and I'm telling you.... the end result is amazing! This chicken is just packed with flavor and goodness. This is one of my all time favorite chicken recipes.

3 pound(s) chicken parts (your favorites... i prefer thighs and legs, but you can use whatever you like best)
2 - eggs
1/4 cup(s) milk
1-1/2 cup(s) instant mashed potato flakes
1 teaspoon(s) garlic powder
1 teaspoon(s) seasoned salt (such as mccormicks)
1/2 teaspoon(s) paprika
2 teaspoon(s) poultry seasoning
3/4 cup(s) grated parmesan cheese
4 tablespoon(s) melted butter

Steps:

  • Remove skin from chicken, rinse, and pat dry. Set aside.
  • In a bowl, beat eggs and milk.
  • In a separate bowl, combine potato flakes, garlic powder, seasoned salt, paprika and poultry seasoning. (You can add a little pepper, too, if you'd like to!)
  • Pour Parmesan cheese into the mixture, then mix together well with a fork.
  • Line a large baking sheet with aluminum foil, and spray well with cooking spray. (using foil makes for much less sticking and easier clean-up!)
  • Dip chicken pieces in egg mixture, then roll each piece in the potato flake mixture to coat evenly on all sides. (Try not to touch coated chicken too much with your fingers if they're wet. I use two forks to roll the chicken and lift it onto the baking sheet, or you could use tongs. The potato flakes melt a little bit if your fingers are wet.)
  • Put butter into a measuring cup (only because it makes for easier drizzling), and melt for a few seconds in your microwave.
  • When done, remove from microwave and carefully drizzle a little bit over top of each coated piece of chicken. You don't need to saturate chicken with the butter or it will get too greasy. A little bit goes a long way.
  • Bake chicken, uncovered, on middle rack of oven at 400 degrees for 35 minutes, turning chicken once after about 15 minutes.
  • After 35 minutes, turn chicken once again, increase oven temperature to 425 degrees and bake 10-15 minutes longer, or until chicken is tender and done.
