In the 70's, Ortega published a recipe for taco filling with their ads. I made them for years according to their recipe(sort of). I lost the recipe and have tweaked it over the years to this result. I have done searches and can't find the recipe. I even wrote to Ortega and nothing. These are even better than the original recipe in my opinion. I hope u try them and love then as much as we do.

Number Of Ingredients 16

2 pound(s) ground beef or 1 lb each grnd beef & grnd turkey
1 - 15 oz can(s) rotel diced tomatoes with chilis
1 - 15 oz can(s) tomato sauce & 1 sauce can of water
2 can(s) diced green chilis
1 teaspoon(s) seasoning salt
1/2 teaspoon(s) pepper
1 tablespoon(s) chili powder
1 teaspoon(s) cumin
1/2 teaspoon(s) mexican oregano or regular oregano
1 teaspoon(s) garlic powder
1/4 - 1/2 teaspoon(s) cayenne pepper
1 dozen - 7 inch white corn tortillas or any you like
- canola oil for frying shells
- parmesan cheese
TOPPINGS
- diced tomatoes, shreaded lettuce, pico de gallo, shreaded cheddar cheese, sour cream, avacado, fresh squeezed lime juice, more parmesan cheese

Steps:

  • Brown meat in large skillet. Drain off fat. Add tomatoes, sauce, water, and seasionings. Bring to boil and reduce heat to simmer. Cook covered for 20 minutes. Uncover and continue to cook until the liquid is absorbed and meat is tender, about another 20 minutes. Taste and adjust seasonings to your taste.
  • Fry tortillas in canola oil until desired crispness. Blot on paper towels and sprinkle with parmesan cheese. Fill with taco filling and garnish as desired. We like ours as my picture shows...with shreaded lettuce, diced tomatoes, shreaded cheddar cheese, pico de gallo, sliced avacado and sour cream, more parmesan cheese, and a squeeze of fresh lime. YUMMMM
  • An alternative to frying the tortillas: place several tortillas between damp paper towels in the microwave for 20 seconds or until soft and pliable. Stack 2 together and build your taco(sometimes one cracks and leaks). If I have leftover taco filling, I make taco salad or taco omlettes.

This is a dish that will make your tongue jump out of your mouth, slap you in the face, and say 'Oh yeah'. Put meat and maybe some Pico De Gallo or salsa into warm tortillas to make tacos.

4 pounds pork shoulder roast
2 (4 ounce) cans diced green chilies, drained
¼ cup chili powder
1 teaspoon dried oregano
1 teaspoon taco seasoning
2 teaspoons minced garlic
1 ½ teaspoons salt, or to taste

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C).
  • Place the roast on top of a large piece of aluminum foil. In a small bowl, stir together the green chiles, chili powder, oregano, taco seasoning and garlic. Rub onto the roast. Wrap foil around the roast so that it is completely covered, using additional aluminum foil if necessary. Place on top of a roasting rack in a baking dish, or place a cookie sheet on an oven rack below to catch any leaks.
  • Roast the meat for 3 1/2 to 4 hours in the preheated oven, until falling apart. Cook to at least 145 degrees F (63 degrees C). Remove from the oven, and shred into small pieces using two forks. Season with salt to taste.

The Best Homemade Tacos - Ground beef and homemade taco seasoning make the best taco meat in this classic easy recipe that's better than take out.

1 lb. 90% to 93% lean ground beef
1 Tablespoon chili powder
1 teaspoon ground cumin
3/4 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon ground black pepper
1/2 cup tomato sauce
1/4 cup water
12 taco shells - either hard shells or small 6-inch soft flour tortillas will work
Optional Taco Toppings: shredded cheese

Steps:

  • Add the beef to a large skillet over medium-high heat. Break the meat apart with a wooden spoon. Add the chili powder, cumin, salt, oregano, garlic powder, and pepper to the meat. Stir well. Cook until the meat is cooked through, about 6-8 minutes, stirring occasionally.
  • Reduce the heat to medium. Add the tomato sauce and water. Stir to combine. Cook, stirring occasionally, for 7-8 minutes, until some of the liquid evaporates but the meat mixture is still a little saucy. Remove from the heat.
  • Warm the taco shells according to their package directions.
  • Fill the taco shells with 2 heaping tablespoons of taco meat. Top with desired taco toppings: shredded cheese, shredded lettuce, chopped tomatoes, diced red onion, taco sauce, sour cream, guacamole, etc.
