2 cups mashed potatoes
salt and pepper, to taste
cheese, any type (optional)
1/2 cup flour
1 egg
1 teaspoon salt
1/2 cup milk
oil (for deep frying)

Steps:

  • Make mashed potatoes into golf-ball or small balls.
  • Add cheese, as per taste.
  • Freeze for 2 hours, or more.
  • Mix together the flour, milk, egg and salt to make the batter.
  • Gently dip mashed potato balls in batter, being careful that all exposed potato is coated with batter.
  • Deep fry in hot oil until golden-brown.

These are so good. Crispy on the outside cheesy and creamy on the inside. Got to try these

2 c cold mashed potatoes put through a ricer or food processor
3 large eggs divided
1 Tbsp parsley minced
1/4 c parmesan cheese
2 tsp dried minced onion
3 clove garlic minced
1/4 c cooked and crumbled bacon
salt and pepper to taste
1 c panko bread crumbs
oil for frying

Steps:

  • 1. Mix together mashed potatoes, 1 egg, parsley, parmesan cheese, onion, bacon, garlic, and salt and pepper. Place mixture in freezer for 20 minutes.
  • 2. Whip the 2 remaining eggs in one bowl. Add bread crumbs to another bowl. Take mashed potatoes and roll them into a ball. Dip in egg mixture then roll in bread crumbs. Place back in freezer for 15 minutes.
  • 3. Deep fry 375 degrees for about 3 or 4 minutes. Serve
