DEEP-DISH TRADITIONAL CHICKEN CORDON BLEU CRESCENT CASSEROLE

I adapted this recipe from one that I found on the Pillsbury website to get a casserole that is more like the traditional chicken cordon bleu. The flaky, sweetness of the crescent rolls in this recipe knocks the taste out of the park! Serve with broccoli for a complete meal.

1 (8 ounce) can refrigerated crescent dinner rolls (I used the reduced fat variety)
2 tablespoons salted butter
1 tablespoon olive oil
1 medium onion, finely chopped
1 garlic clove, finely chopped
1 lb chicken, cooked and shredded
16 slices swiss cheese (8 slices for bottom and 8 for top)
1/3 cup mayonnaise
1/4 cup parmesan cheese, grated
1/3 cup light sour cream
2 -3 tablespoons Dijon mustard (to taste)
1 teaspoon lemon juice
1 teaspoon honey (optional. We didn't use it)
1 teaspoon horseradish sauce (we used regular prepared horseradish)
1/8 teaspoon dried thyme
1 lb deli ham (we used thin shaved honey ham)

Steps:

  • Heat oven to 375. Spray 13x9" (3 qt) casserole dish with non-stick cooking spray.
  • Unroll crescent rolls in baking dish; press perforations to seal.
  • Bake 10 to 13 minutes or until light golden brown.
  • Meanwhile, in 10-inch skillet, heat butter and oil over medium heat.
  • Add onion and garlic; cook 2 to 3 minutes, stirring frequently, until softened.
  • Remove from heat; stir in shredded chicken.
  • Place 8 slices of the Swiss cheese over baked crust.
  • In small bowl, stir, mayo, Parmesan cheese, sour cream, Dijon mustard, lemon juice, honey, horseradish sauce and thyme until well blended.
  • Spoon half of the mayonnaise mixture evenly over cheese on crust.
  • Spoon chicken mixture evenly over mayonnaise mixture on crust.
  • Spoon remaining mayonnaise mixture evenly over chicken.
  • Cover chicken evenly with ham.
  • Top with remaining 8 slices Swiss cheese.
  • Bake 15 to 20 minutes longer or until cheese is melted and filling is thoroughly heated.

1 tablespoon(s) olive oil
1 - medium onion, sliced thin
1 clove(s) garlic, finely chopped
1 - box (13.25oz) frozen baked honey battered chicken tenders, thawed, cut into 1/2 inch pieces or 1 2-2 1/2 lb deli rotisserie chicken, shredded
16 slice(s) swiss or muenster cheese
1/4 cup(s) grated parmesan cheese
1/4 cup(s) mayo or miracle whip
2 tablespoon(s) dijon mustard
2 tablespoon(s) lemon juice
1 tablespoon(s) honey
1/8 teaspoon(s) thyme
1 pound(s) shaved brown sugar deli ham,

Steps:

  • preheat oven to 375 degrees. Spray 13x9 baking dish with cooking spray. Unroll crescent rolls into dish and press perferations to seal. Bake 10-13 minutes or till light brown.
  • Meanwhile, heat butter and oil over medium heat in a 10 in. skillet. Cook onion and garlic 2-3 minutes or till softened, remove from heat and stir in chicken.
  • Place 8 slices of cheese over the crust. In a small bowl combine parmesan, mayo, mustard, lemon juice, honey, and thyme. Spoon 1/2 of mixture evenly over the cheese. Spoon chicken mixture over the mayo mixture. Place the ham on top of that and add the remaining cheese on top.
  • Bake 15-20 minutes or till cheese is melted and bubbly
