JIMMY'S MEXICAN PIZZA

Jimmy's specially seasoned ground beef, refried beans, salsa and cheese layered in a deep dish style. A tasty and easy Mexican-style pizza with a flour tortilla crust I whipped up because I had the stuff to make it!!

½ pound ground beef
1 medium onion, diced
1 clove garlic, minced
1 tablespoon chili powder
1 teaspoon ground cumin
½ teaspoon paprika
½ teaspoon black pepper
½ teaspoon salt
1 (16 ounce) can refried beans
4 (10 inch) flour tortillas
½ cup salsa
1 cup shredded Cheddar cheese
1 cup shredded Monterey Jack cheese
2 green onions, chopped
2 roma (plum) tomatoes, diced
¼ cup thinly sliced jalapeno pepper
¼ cup sour cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat 2 pie plates with non-stick cooking spray.
  • Place beef, onion and garlic in a skillet over medium heat. Cook until beef is evenly browned. Drain off grease. Season the meat with chili powder, cumin, paprika, salt and pepper.
  • Lay one tortilla in each pie plate, and cover with a layer of refried beans. Spread half of the seasoned ground beef over each one, and then cover with a second tortilla. Bake for 10 minutes in the preheated oven.
  • Remove the plates from the oven, and let cool slightly. Spread half of the salsa over each top tortilla. Cover each pizza with half of the Cheddar and Monterey Jack cheeses. Place half of the tomatoes, half of the green onions, and half of the jalapeno slices onto each one.
  • Return the pizzas to the oven, and bake for 5 to 10 more minutes, until the cheese is melted. Remove from the oven, and let cool slightly before slicing each one into 4 pieces.

3 cups all-purpose flour
1/2 cup cornmeal
1 teaspoon salt
1 package (1/4 ounce) quick-rise yeast
2 cups warm water (120° to 130°), divided
1 tablespoon honey
1 pound ground beef
1 envelope taco seasoning
1 cup refried beans
1/3 cup taco sauce
2 cups shredded Colby-Monterey Jack cheese
OPTIONAL TOPPINGS:
Shredded lettuce
Chopped tomatoes
Crushed tortilla chips
Sliced ripe olives, drained
Diced avocado
Sour cream
Salsa

Steps:

  • Preheat oven to 400°. Combine 2-1/2 cups flour, cornmeal, salt and yeast. In another bowl, combine 1-1/4 cups warm water and honey. Gradually add dry ingredients; beat just until moistened. Stir in enough remaining flour to form a soft dough. Do not knead. Cover; let rest 20 minutes. , Meanwhile, in a small skillet over medium heat, cook and stir beef, crumbling meat, until no longer pink; drain. Add taco seasoning and remaining water. Cook and stir until thickened, about 2 minutes. , Press dough to fit a greased 13x9-in. baking pan. Combine beans and taco sauce; spread over dough. Top with beef mixture and cheese. Bake on a lower oven rack until crust is golden and cheese is melted, 15-18 minutes. Let stand 5 minutes. If desired, serve with optional toppings.

1 tablespoon extra-virgin olive oil, plus more for brushing
1 lb organic ground beef
1 tablespoon chili powder
1/2 teaspoon garlic powder
kosher salt
2 tablespoons adobo sauce from canned chipotle chiles in adobo
one 15 1/2 ounce can black beans, rinsed and drained
1/2 cup salsa
one 14-inch frozen thin crust cheese pizza, thawed, such as Mama Cozzi's Five Cheese Pizza from ALDI
2 cups shredded yellow cheddar cheese
sour cream, for serving
guacamole, for serving
fresh cilantro leaves, for serving

Steps:

  • Preheat the oven to 450 degrees F.
  • Heat a medium skillet over medium-high heat and add the olive oil. When the oil is hot, add the ground beef and cook, crumbling it with a wooden spoon, until well browned and cooked through, about 6 minutes. Drain off and discard any excess fat. Return the skillet to the heat, add the chili powder, garlic powder and 1/2 teaspoon salt and stir to incorporate. Add the adobo sauce and 2 tablespoons water. Cook 1 minute to blend the flavors, then remove from the heat.
  • Meanwhile, combine the beans and salsa in a small saucepan. Bring to a simmer and cook until thickened, 4 to 5 minutes. Keep warm.
  • Brush a 12-inch cast-iron skillet with oil. Cut six 2-inch snips in the pizza with scissors, spaced evenly around the edge. Fit the pizza into the oiled cast-iron skillet, pressing the edges to make a deep-dish-type crust. Bake the pizza until heated through and the cheese is just melted, about 10 minutes.
  • Remove the pizza from the oven, top with the beans and ground beef and sprinkle with the Cheddar. Return to the oven and bake until the edges of the crust are golden brown and the cheese is melted and bubbly, 5 to 6 minutes more. Let stand for 5 minutes.
  • Top with dollops of sour cream and guacamole and sprinkle with cilantro leaves. Cut into wedges in the skillet and serve with a pie server.
