You can make these lower in sugar or make the traditional way. Either way these are just scrumptious! With lots of options, it is easy to find the right mix for what is in your pantry!

Steps:
- Preheat oven to 350°F.
- In a stand mixer, cream the softened butter, shortening, and Splenda (or sugars).
- When creamy, add eggs, vanilla, and instant coffee granules.
- Mix together baking soda, baking powder, salt, and flours.
- Gradually add flour mixture to mixer.
- Gradually add remaining ingredients until it just comes together.
- Drop batter by tablespoonfuls onto parchment paper or silicone lined baking sheets, about 2 inches apart.
- Flatten dough with a buttered spatula.
- Bake at 350F for about 12 minutes or until golden brown.
- Pull parchment paper with cookies on it onto cooling racks, and allow to cool before storing in an airtight container.

DECADENT OATMEAL
On a whim, I replaced the usual milk with a different ingredient and breakfast became as exciting as dessert. I noted the fresh fruit as optional, but it was mighty good with peaches and bananas.

DECADENT COCOA OATMEAL COOKIES

- Preheat oven to 350. Lightly grease or line cookie sheets with parchment paper. Beat butter in medium bowl with electric mixer at medium speed until light and fluffy. Add sugar and brown sugar; beat until well blended. Add egg and vanilla; beat just until combined. Add flour, cocoa, and baking powder; beat at low speed just until blended. (Dough will be sticky.) Stir in oats, chocolate chips, and nuts.
- Shape tablespoonfuls of dough into 1 inch balls. Place 2 inches apart on prepared cookie sheets. Slightly flatten each ball with back of spoon. Bake 8 minutes or until set. Cool on cookie sheets 5 minutes. Remove to wire racks; cool completely.
DECADENT BAKED OATMEAL
Low fat, not too sweet and the almonds give it a nice crunch. Try substituting dried blueberries, currants or raisins for the dried cranberries. You can also vary the nuts by substituting walnuts or pecans. This makes an excellent dessert when topped with vanilla pudding (or yoghurt) and sliced fresh fruit - I use strawberries. This baked oatmeal can be divided into squares for reheating later with a little more added milk.

DECADENT TASTING GINGER PEAR OATMEAL
This was my decadent tasting gift to myself this morning (in an attempt to avoid all the baked goods that keep cropping up at work this holiday season). I modeled it on toni gifford's Ginger Peach Oatmeal #112474 which I love and eat often. But this is just enough different that I decided to post it so I'll remember. I loved it, but I love candied ginger. In fact, I may add more next time.

Steps:
- Place the 1 cup water in a pan and bring it to a boil.
- When it is boiling add the oatmeal and cook for 30 seconds to a minute. Then add the ginger and stir.
- Wait a moment and add the canned pears and stir.
- At this point the oatmeal should be done, but if you like it mushier feel free to let it cook longer.
- Transfer the oatmeal and fruit to a bowl. Sprinkle the brown sugar substitute (or real brown sugar if you are so inclined) over the top. Then drizzle the half and half over the top.
- Stir it all together and enjoy.
