2 1/2 cups cake flour
1 1/2 teaspoons baking soda
1 teaspoon salt
1 1/2 sticks unsalted butter, at room temperature
2 cups granulated sugar
3 1/2 ounces dark chocolate, melted and cooled
1 teaspoon vanilla extract
2 eggs
1 1/2 cups cold water
Raspberry liqueur, such as Chambord, for drizzling
Nonstick cooking spray
Chocolate Chip Buttercream, recipe follows
Dark chocolate shavings, for decoration
3 cups powdered sugar
7 tablespoons hot water
4 ounces dark chocolate, melted and cooled
2 teaspoons vanilla extract
1/2 stick unsalted butter, at room temperature
1/4 cup semisweet dark chocolate, finely chopped

Steps:

  • Position an oven rack in the center of the oven and preheat the oven to 350 degrees F.
  • In a large bowl, sift together the flour, baking soda and salt; set aside. In the bowl of an electric mixer, cream the butter and granulated sugar until light and fluffy. Add the cooled chocolate and vanilla and beat for 3 minutes to incorporate. Beat in the eggs one at a time. Scrape down the sides of the bowl and beat for another 3 minutes. Gradually mix in the dry ingredients in three batches, alternating with the cold water. Beat for 1 minute after each addition to incorporate the ingredients. Mix until the batter is smooth.
  • Coat two 9-inch round cake pans with nonstick cooking spray. Cut 2 circles of parchment paper to fit the pan bottoms and place them inside the pans; then spray the paper for added non-stick insurance. Pour the batter into the prepared pans and smooth the surface with a spatula; the pans should be two-thirds full. Bake for 30 to 35 minutes. The cake is cooked when a toothpick inserted in the center comes out clean and the cake springs back when touched. Leave to cool for 40 minutes.
  • Turn the cakes out of the pans and remove the paper. Drizzle them with a few tablespoons of raspberry liqueur. With a metal spatula, spread 1/2 cup Chocolate Chip Buttercream on top of one of the layers. Start in the center and work your way out. Carefully place the second layer on top. Smooth the sides with buttercream, and then spread the rest over the top so that the cake is completely covered. Refrigerate for 5 minutes before decorating or cutting.
  • With a large knife, scrape some shavings from a block of dark chocolate. Scatter the shavings over the cake.
  • In the bowl of an electric mixer, dissolve the powdered sugar and water at low speed. Beat in the dark chocolate and vanilla. Add the butter gradually in small bits. Mix until everything is completely incorporated. Using a spatula, fold in the chopped chocolate and give a final quick spin.

Nonstick cooking spray, for spraying the pans
2 cups all-purpose flour
2 cups granulated sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup milk
1 cup boiling water
1/2 cup vegetable oil
1 tablespoon vanilla
2 large eggs
1 3/4 cups powdered sugar
3 tablespoons unsalted butter, at room temperature
4 1/2 ounces bittersweet chocolate, melted
1/2 cup sour cream

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Spray two 9-inch cake pans with nonstick cooking spray.
  • Combine the flour, granulated sugar, cocoa powder, baking soda, baking powder and salt in the bowl of a stand mixer and mix on low until well combined (the mixture will be one uniform color). With the machine running on low, add the milk, boiling water, vegetable oil, vanilla and eggs. Mix on high, scraping down the sides as needed, until well combined and the mixture has air bubbles, about 1 minute.
  • Divide the batter between the prepared cake pans and bake until a knife inserted in the center comes out clean, about 40 minutes. Let cool about 10 minutes in the pans. Run a thin knife around the edge of each cake, then invert the cakes onto a rack and let cool completely, 20 to 30 minutes.
  • Using a serrated knife, cut a small portion from the top of each cake to completely flatten it. Save the trimmings for another use.
  • For the frosting: When ready to assemble the cake, combine the powdered sugar and butter in a food processor and pulse until well combined. Add the chocolate and continue to pulse, scraping down the sides as needed. Add the sour cream and process until very smooth, about 1 minute.
  • Place one cake layer on a platter and spread half of the frosting on top. Flip over the second cake layer, making sure the flattened side is facing the bottom, and place on top of the first cake layer. Spread the remaining frosting to cover only the top of the cake (leave the sides without frosting). Serve.

8 ounces bittersweet chocolate, coarsely chopped
6 large eggs
2-1/2 cups whole milk

WHITE CHOCOLATE BUTTERCREAM:
8 ounces white baking chocolate, chopped
1/2 cup heavy whipping cream
2-1/4 cups sugar
1 teaspoon cream of tartar
8 large egg whites
2 cups unsalted butter, softened
2 teaspoons vanilla extract
SEMISWEET CHOCOLATE GANACHE:
6 ounces semisweet chocolate, chopped
3/4 cup heavy whipping cream
2-1/2 teaspoons corn syrup
1/8 teaspoon salt

Steps:

  • In a microwave, melt butter and chocolate; stir until smooth. Set aside to cool. In a large bowl, whisk the eggs, milk, vanilla and cooled chocolate mixture. Combine the flour, sugar and salt; add to egg mixture and mix well. Cover and refrigerate for 2 hours or overnight. (Batter will appear curdled.), For buttercream, in a microwave, melt white chocolate with cream; stir until smooth. Set aside to cool. In a small bowl, combine sugar and cream of tartar., Place egg whites in a double boiler or metal bowl over simmering water; stir in the sugar mixture. Constantly whisk until mixture reaches 120-130° (do not overheat). Stirring gently, keep at 120-130° for 2 minutes. Immediately transfer to a mixing bowl., With a whisk attachment, beat on high speed for 5 minutes. Reduce speed and beat for 5 additional minutes or until cool and stiff. Transfer to a large bowl., In the same mixing bowl with the whisk attachment, beat butter and vanilla until light and fluffy. Beat in cooled white chocolate mixture. With a spatula, stir a fourth of the meringue into butter mixture until no white streaks remain. Fold in remaining meringue. Cover and refrigerate., Heat a lightly greased 8-in. nonstick skillet over medium heat; pour 2 tablespoons crepe batter into center of skillet. Lift and tilt pan to coat bottom evenly. Cook until top appears dry, about 2 minutes; turn and cook 15-20 seconds longer. Remove to a wire rack. Repeat with remaining batter, greasing skillet as needed., When cool, stack crepes with waxed paper or paper towels in between., To assemble, place one crepe on a cake plate. CAKE INGREDIENTS
3 c sifted all purpose flour
3/4 c cocoa
1 ½ tsp each baking soda, baking powder, and ground cinnamon
2¼ c buttermilk
1½ Tbsp instant-coffee powder dissolved in 1½ tablespoons hot water
1½ c sweet (unsalted) butter, softened
2¼ c sugar ( i use fine granulated baking sugar as it blends so well)
3 eggs, room temperature
SOUR CREAM FILLING
¾ c heavy cream
¾ c confectioners' sugar
¾ c thick sour cream
CHOCOLATE SOUR CREAM FROSTING
½ c sweet (unsalted) butter
1½ c confectioners' sugar, sifted and divided
½ c cocoa
1½ c heavy cream
¾ c thick sour cream

Steps:

  • 1. CAKE Preheat oven to 350〫. Grease three 9 inch round cake pans, line bottom with parchment paper; grease paper.
  • 2. In a large bowl, sift together flour, cocoa, soda, baking powder, and cinnamon. Mix buttermilk and dissolved coffee.
  • 3. In large mixing bowl, use mixer to cream butter and sugar until light and fluffy. Add eggs, one at a time, beating until thick. On low speed, alternately add dry ingredients with buttermilk mixture in four portions. Continue beating until well blended.
  • 4. Spread batter evenly into prepared pans. Bake for 35 minutes or until cake tester inserted in center comes out clean. Let cool on wire rack 10 minutes. Remove from pans to wire racks; cool completely. Slice each cake in half horizontally, forming 6 layers.
  • 5. To assemble cake, place one layer on serving plate. Top with ⅓ of the sour cream filling. Place second layer on filling, then frost with ⅔ cup Chocolate Sour Cream Frosting. Repeat this procedure two additional times. Frost entire care with remaining Chocolate Sour Cream Frosting. Chill Two hours before serving . Note: can withhold a little frosting to decorate top by beading a border along the outside of top layer, as shown in picture, and garnish with fresh raspberries if desired. **Cake layers are easier to slice in half if horizontally if placed in refrigerator for about 1 hour. 2 orange peels, cut into 1/4 inch strips
⅓ cup white sugar
¼ cup orange marmalade
¾ cup unsalted butter, softened
1 teaspoon vanilla extract
1 cup white sugar
4 eggs
2 ½ cups cake flour
½ teaspoon baking powder
¼ teaspoon baking soda
¾ cup orange juice
1 ¼ cups heavy cream
4 tablespoons unsalted butter
15 ounces semisweet chocolate chips
1 (8 ounce) package cream cheese, softened
1 tablespoon white sugar
2 tablespoons orange marmalade

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat two 8 inch round cake pans with cooking spray, and line bottoms with parchment paper.
  • Using a vegetable peeler, remove zest from oranges in strips. Place in food processor, and coarsely chop, stopping occasionally to scrape down sides of bowl. Add 1/3 cup sugar and blend until peel is minced. Add 1/4 cup marmalade, and pulse until mixture is pureed. Transfer to a large bowl. Add 3/4 cup unsalted butter, and 1 teaspoon vanilla.
  • With an electric mixer, cream mixture until light and fluffy. Beat in 1 cup sugar. Add eggs 1 at a time, beating well after each addition. Sift together flour, baking powder, and baking soda into small bowl. Beat in the flour mixture alternately with the orange juice, mixing just until incorporated. Divide batter into prepared pans.
  • Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
  • For the Chocolate Ganache: Bring cream and butter to simmer in heavy large saucepan. Remove from heat, add chocolate chips and stir until melted.
  • For Orange Cream Cheese Filling: in a small bowl, beat together cream cheese, 1 tablespoon sugar, and 2 tablespoons marmalade.
  • To assemble cake: Cut each cake into 2 layers. Place 1 layer on plate. Spread filling on the bottom cake. Pour hot ganache over bottom layer, let cool slightly. Top with second cake layer. Spread with filling. Pour hot ganache over second layer. Repeat for third layer. Top with fourth cake layer. Pour remaining ganache over entire cake for a shiny finish. Refrigerate uncovered cake until ganache is a hard coating.
