I don't know too many great dishes that are any easier than this one. Just choose your favorite box pasta dish and go for it! I do have a long version of a shrimp/pasta with angel hair pasta, portobello mushrooms, parmesan cheese with a butter/garlic sauce if anyone is interested, leave me a message. Bon Appetite!

1 c shrimp, peeled and deveined (add more shimp if you like)
1 pkg pasta roni, any style, any flavor

Steps:

  • 1. boil water and follow directions on the box of pasta
  • 2. As soon as the noodles are soft and your box seasonings have been added, add the shrimp
  • 3. Garnish with parsley or green onions

This is a really easy recipe and comes together quite quickly. It makes a nice, healthy weeknight meal. I got this recipe from my sister and have no idea where she got it from.

1 lb spaghetti
cooking spray
2 teaspoons olive oil
2 teaspoons blackening seasoning (I use Paul Prudhomme's Blackened Steak Magic)
3/4 lb shrimp, peeled and deveined
2 tablespoons lemon juice
1 (14 1/2 ounce) can diced tomatoes with garlic, drained
1/4 teaspoon pepper

Steps:

  • Cook spaghetti according to package directions, drain and set aside -OR- **If you're good at multi-tasking, you can cook the spaghetti noodles and the shrimp at the same time and they should both be done at the same time.
  • Sprinkle blackening seasoning evenly over shrimp and set aside.
  • Coat a large, non-stick skillet with cooking spray and add oil. Place over medium-high heat until hot.
  • Add shrimp to skillet; cook 2 minutes on each side or until shrimp turn pink.
  • Stir in lemon juice, tomatoes and pepper. Turn heat down to simmer and cook until thoroughly heated.
  • Spoon shrimp mixture over drained pasta and serve immediately.

This particularly American combination of flavors - shrimp and corn - is light, summery and very tasty, both sweet and slightly spicy. If you are feeling flush, you can make this pasta with lobster instead.

Salt and pepper
1 pound pasta, such as linguine or spaghetti
3 tablespoons extra-virgin olive oil
1 small garlic clove, minced
1 1/2 pounds small shrimp, preferably wild, peeled and deveined, patted dry
Generous pinch of red-pepper flakes
2 cups tender corn kernels (from 2 or 3 ears)
2 tablespoons thinly sliced scallions
2 tablespoons roughly chopped basil, plus more basil leaves for garnish

Steps:

  • Bring a pot of well-salted water to a boil over high heat. Cook pasta to al dente according to package instructions.
  • As pasta cooks, put oil in a large skillet over medium. Add garlic. Cook gently without coloring, about 1 minute.
  • Raise heat to medium-high and add shrimp. Season with salt, pepper and red-pepper flakes. Cook, stirring, until shrimp puff and turn pink, 1 to 2 minutes. Add corn and continue cooking until warmed through.
  • Drain cooked pasta and transfer to a warm serving bowl. Pour skillet contents over pasta and toss. Sprinkle with scallions and chopped basil. Garnish with basil leaves.
