DATE-PECAN PIE



Date-Pecan Pie image

Pureed dates add complexity to the sticky-sweet filling for this otherwise traditional pecan pie.

Number Of Ingredients 10

Unbleached all-purpose flour, for dusting
1/2 recipe Test Kitchen's Favorite Pate Brisee
2 1/2 cups whole pecans
8 ounces Medjool dates, pitted
1 tablespoon pure vanilla extract
3 large eggs
3/4 cup light corn syrup
3/4 cup packed light-brown sugar
4 tablespoons unsalted butter, melted
1 teaspoon kosher salt

Steps:

  • On a lightly floured piece of parchment, roll out dough into a 13-inch round, about 1/8 inch thick. Fit into a 9-inch pie dish. Using kitchen shears, trim to a 1-inch overhang; fold under. Crimp edges or decorate as desired. Lightly prick bottom of dough with a fork. Refrigerate 30 minutes.
  • Preheat oven to 375 degrees with a rack in lower third. Line dough with parchment; fill with dried beans or rice. Bake until edges begin to turn golden, 20 to 25 minutes. Remove beans or rice and parchment; bake until bottom and sides are golden brown, about 20 minutes more. Transfer to a wire rack; let cool completely. (Crust can be made up to a day in advance and covered tightly in foil.)
  • Reduce oven temperature to 350 degrees. Spread pecans on a rimmed baking sheet and toast until golden and fragrant, 10 to 12 minutes. Let cool completely. Reserve 1 cup for topping; coarsely chop remaining 1 1/2 cups.
  • In a small saucepan, bring dates, 1/2 cup water, and vanilla to a simmer over medium-high heat. Reduce heat to low; cook until almost all of liquid is absorbed, 7 to 9 minutes. Transfer dates and remaining liquid to a food processor; puree until smooth.
  • In a large bowl, whisk together eggs, 3/4 cup date puree (reserve remainder for another use), corn syrup, brown sugar, butter, and salt until smooth; stir in chopped pecans. Pour filling into crust; arrange reserved whole pecans over top. Place a foil-lined baking sheet below rack, then place pie dish directly on rack; bake until filling wobbles slightly in center when gently shaken, 50 minutes to 1 hour. (If crust is getting too dark, cover with a foil ring.) Transfer to wire rack; let cool completely, at least 4 hours. Serve room temperature.

1 cup pecans
1 cup walnuts
1 cup dates, pitted
1/4-1/2 cup honey, to taste
1/4-1/2 teaspoon sea salt, to taste

Steps:

  • Grind pecans, walnuts, and dates in a food processor until well chopped and blended. Add honey and continue to process until the mix forms a ball. Be careful not to overprocess.
  • Pie Crust:.
  • Press into bottom and sides of a pie pan before adding filling. Reserve some of the mix to crumble on top of finished pie. Fresh fruit makes a great filling, also a yogurt or tofu "cheesecake" is yummy!
  • Balls:.
  • Use as is or add 1 teaspoons cinnamon and/or 1/2 teaspoons nutmeg or 1 tbls. carob powder or 1-2 tbls. orange zest.
  • Roll the dough into balls, then in flaked coconut, ground nuts or carob powder. Have fun and enjoy!

1 cup heavy whipping cream, whipped

  • Line a 9-in. pie plate with pastry; trim and flute edges. Line pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5 minutes longer. 1/2 cup sugar
1 teaspoon cinnamon
1 1/2 cups dates, pitted and chopped
1 1/2 cups Granny Smith apples, peeled, cored and chopped
Crumble Topping (see recipe)

Steps:

  • Preheat the oven to 350 degrees. Roll the dough out to a disk 11 inches in diameter and ease it into a 9-inch pie pan. Trim the edges.
  • Sprinkle the sugar, cinnamon and 2 tablespoons of water over the dates and apples, and mix well. Transfer to the pie pan. Top with 1 cup of the crumb recipe. Bake until the filling bubbles, about 60 minutes.

3 teaspoons granulated sugar
1/4 teaspoon salt
3/4 cup cold butter or margarine, cut into pieces

3/4 cup light corn syrup
3/4 cup packed brown sugar
1/2 cup butter or margarine, melted
2 teaspoons vanilla
3 eggs
2/3 cup old-fashioned oats
1/2 cup chopped pitted dates
1/2 cup flaked coconut
1 cup whipping cream, whipped
1/2 cup chopped pecans, toasted

Steps:

  • In medium bowl, mix 1 1/4 cups of the flour, the granulated sugar and salt. Cut in 3/4 cup butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all water is absorbed and dough sticks together. On lightly floured surface, shape dough into a ball. Flatten to 1/2-inch thickness, rounding and smoothing edges. Wrap in plastic wrap; refrigerate 1 hour.
  • Heat oven to 350°F. Roll dough, using floured rolling pin, into 12-inch round on lightly floured surface. Fold pastry into quarters and place in 9-inch glass pie plate. Unfold pastry and ease into plate, pressing firmly against bottom and side and being careful not to stretch pastry; flute edges.
  • In large bowl, mix corn syrup, brown sugar, 1/2 cup butter, the vanilla and eggs. Stir in oats, dates and coconut. Pour filling into crustlined plate.
  • Bake 45 minutes or until set. Cool completely on cooling rack, about 2 hours. Garnish with whipped cream and toasted pecans.

3/4 c sugar
3 eggs ( separate egg whites from yolks)
4 oz butter or marg.
1 tsp vanilla
1 Tbsp lemon juice
1 c chopped walnuts
cool whip or whipped cream

Steps:

  • 1. Cream butter and sugar. Add well beaten egg yolks. Add dates, vanilla and lemon juice. Fold in the stiffly beaten egg whites. Add nuts. Pour into unbaked pie shell. Bake approx 40 min at 350* Serve with whipped cream or cool whip. Enjoy

1 1/3 cups small pieces pitted dates
1/4 cup brandy
1/2 cup (packed) golden brown sugar
1/4 cup (1/2 stick) unsalted butter, melted
3/4 teaspoon ground nutmeg
1/2 teaspoon salt
2/3 cup dark corn syrup
4 large eggs
1 2/3 cups walnut pieces (about 6 ounces)
Whipped cream

Steps:

  • Preheat oven to 375°F. Roll out dough on floured surface to 12-inch round. Transfer to 9-inch-diameter glass pie dish. Fold edge under; crimp. Pierce crust all over with fork. Freeze 10 minutes. Line with foil; fill with dried beans or pie weights.
  • Bake crust until sides are set, about 15 minutes. Remove foil and beans. Bake until bottom begins to color, piercing with toothpick if crust bubbles, about 10 minutes longer. Cool on rack 10 minutes.
  • Meanwhile, stir dates and brandy in small bowl to blend. Mix brown sugar, butter, nutmeg and salt in medium bowl until paste forms. Whisk in corn syrup, then 3 eggs. Add nuts and date mixture. Beat 1 egg to blend in small bowl for glaze.
  • Brush inside of crust with some of glaze. Pour filling into crust. Bake 15 minutes. Cover edges of crust with foil. Continue to bake pie until filling is puffed and set in center, about 20 minutes. Transfer pie to rack; cool. (Can be prepared 1 day ahead. Let stand at room temperature.)
  • Serve pie with whipped cream.

18 maria cookies or 18 vanilla wafers
1/4 cup melted butter or 1/4 cup melted margarine
milk, as needed
1 cup chopped pecans
1 cup chopped dates
5 eggs
10 ounces sweetened condensed milk
1 teaspoon vanilla

Steps:

  • Grind the cookies to fine crumbs
  • Combine cookies crumbs with the melted butter.
  • add a little milk to bind to cookies and butter.
  • With the cookie mixture cover the bottom and side of a 9" pie pan or 8" springform pan.
  • Place the chopped dates and pecans on the side and the bottom of the pan.
  • In a blender, blend together eggs, vanilla and sweetened milk. Blend about 2 minutes.
  • Pour egg and milk mixture over the pie.
  • Bake pie in a preheated 325 degree oven.
  • Approximately 40 minutes.
  • Allow to cool in the oven for 30 minutes after turing the oven off.

¾ cup white sugar
3 tablespoons cornstarch
3 egg yolks
1 teaspoon ground cinnamon
1 cup chopped dates
½ teaspoon vanilla extract

1 (9 inch) pie shell, baked
3 egg whites
¼ teaspoon cream of tartar
6 tablespoons white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • To Make Filling: Combine sour cream, 3/4 cup sugar, cornstarch, yolks and cinnamon in a heavy saucepan; cook until thick, stirring continously. Add Contreau (or any liquier, or fruit juice) a little at a time until mixture begins to form a ball. 16 slices regular white bread, crusts removed

1 cup pitted dates, chopped

Steps:

  • Preheat oven to 250 degrees.

1/2 cup light agave nectar
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
2 teaspoons vanilla extract
Soy whipped cream, for garnish (optional)

Steps:

  • Preheat the oven to 325°F.
  • Blend the pumpkin, tofu, canola oil, dates, agave nectar, cinnamon, cloves, nutmeg, and vanilla extract in a food processor until very smooth, scraping down the bowl occasionally, about 2 to 3 minutes. Make sure all the dates have been blended well. Pour the filling into the unbaked pie crust and bake for 40 to 45 minutes, until firm and golden. Cool before serving. Soy whipped cream makes a delicious accompaniment.

This is a delicious two-in-one pie!! the flavor of date and nut with the forever delicious flavor of pumpkin!! So Go-o-o-od!!

1 single crust pastry dough (9-inch)
1 (8 ounce) package pitted dates, chopped
3/4 cup water
1/3 cup brown sugar, firmly packed
1/3 cup butter or 1/3 cup margarine
1/2 cup walnuts, chopped
1/2 teaspoon cinnamon
2 eggs
1 1/2 cups mashed cooked pumpkin (not pumpkin pie filling) or 1 1/2 cups canned solid pack pumpkin (not pumpkin pie filling)
1 (270 ml) can evaporated milk
1/2 cup sugar
1/2 cup brown sugar, firmly packed
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon nutmeg
1/4 teaspoon salt
1/8 teaspoon clove

Steps:

  • Heat oven to 450°F.
  • DATE-NUT LAYER: In a medium saucepan combine dates and water; cook over medium heat until mixture comes to a boil and dates have softened.
  • Add 1/3 cup brown sugar and butter. Stir to blend. Remove from heat.
  • Stir in nuts and cinnamon. Cool while preparing filling.
  • FILLING: In a medium bowl, beat lightly, add pumpkin, evaportaed milk, granulated sugar 1/2 cup brown sugar, cinnamon, ginger, nutmeg, salt and cloves. Stir to blend.
  • Spoon date-nut mixture into unbaked pie crust. Pour in filling.
  • Bake at 450F for 10 minutes. Reduce oven temperature to 350°F Bake 45-50 minutes or until knife inserted in center comes out clean.
  • Cool to room temerature before serving.
  • GARNISH: Spoon whipped cream around outer edge of pie just before serving. Refrigerate leftover pie.
  • Flute edge or cut small leaves and pumpkins from pastry scraps and press around edge of unbaked pie crust.
