This is a recipe that we used in Pennsylvania for kids birthday parties. I remember my parents grinding the bologna in a old fashion meat grinder. They spread it on white bread and cut the sandwiches into triangles. Of course, we also had cake and ice cream.

1 pound bologna, cut into pieces
½ cup mayonnaise
¼ cup dill pickle relish

Steps:

  • Place the bologna in food processor, and pulse until smooth. Transfer to a medium bowl. Stir in mayonnaise and pickle relish.

For these sandwiches, look for soft, juicy dates. It's also worth seeking out natural cream cheese rather than the gummy commercial kind, or substitute fresh ricotta. The crisp, salty herbed pecans pair very nicely with the slightly sweet spread.

Number Of Ingredients 9

1 cup/8 ounces natural cream cheese, softened at room temperature
1/2 teaspoon lime or lemon zest
1 cup chopped dates, in biggish chunks, from 12 large dates
3/4 cup pecan halves
2 tablespoons rosemary leaves, from 1 average sprig
1 tablespoon olive oil
Salt and pepper
6 slices light or dark rye bread
Pinch of red-pepper flakes

Steps:

  • Set oven to 400. Put cream cheese, lime zest and dates in a small bowl. Use a fork to gently mix.
  • Put pecans on a rimmed baking sheet or in a skillet. Add rosemary leaves, olive oil and a generous pinch of salt and pepper. Toss to distribute seasoning and spread out in an even layer. Roast for 10 minutes or until lightly browned and fragrant. Set aside to cool.
  • Lay bread slices on a work surface. Spread each evenly with cream cheese mixture using 2 or 3 tablespoons per slice. Sprinkle with pecans and rosemary. Add a little more salt and a pinch of red pepper.
  • Cut on the diagonal to make 12 open face sandwiches, or cut into smaller bite-size triangles.

1 ½ cups dates, pitted and chopped
2 ¼ cups boiling water
3 teaspoons baking soda
1 cup chopped walnuts
2 cups white sugar
3 tablespoons margarine
2 eggs, beaten
1 teaspoon salt
4 ½ cups all-purpose flour
1 teaspoon vanilla extract

Steps:

  • Combine baking soda with the boiling water. Soak the dates in the water and baking soda solution for 30 minutes.
  • Cream sugar and butter together. Add eggs, vanilla, dates, nuts, flour, and salt.
  • Divide batter equally between two 9 x 5 (or 8 1/2 x 4 1/2) inch greased loaf pans. Bake 1 hour at 300 degrees F (150 degrees C) (or until loaf tests done). Can be frozen when cool.

3 tablespoons powdered sugar
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon ginger
1/4 cup walnuts
1/3 cup pitted dates

Steps:

  • In a small bowl beat together the neufchatel cheese, powdered sugar and spices.
  • In a food processor finely chop the walnuts. Add chopped nuts to cream cheese mixture then finely chop the dates. Add in dates and stir with a rubber spatula until blended.

Nonstick vegetable cooking spray
1 package (16.6 ounces) date muffin mix
1 cup wheat bran
1 cup whole milk
1 egg
1 cup shredded carrots
3/4 cup pitted dates, chopped (dates may be available already chopped)
1 tablespoon confectioners' sugar
1(8-ounce) package cream cheese, softened
3 tablespoon confectioners' sugar
1 cup carrot shavings

Steps:

  • Preheat oven to 400 degrees F.
  • Spray 12 muffin tins with nonstick spray. In a medium bowl, stir muffin mix, bran, milk, and egg until just blended. Fold in carrots, dates, and confectioners' sugar. Be careful not to over-mix; the batter should be lumpy. Divide batter equally among the muffin tins. Bake until a toothpick inserted into center of muffin comes out clean, about 20 minutes. Let cool slightly before frosting.
  • To make the cream cheese frosting, combine the softened cream cheese, confectioners' sugar, and carrot shavings in a medium bowl; stir until well blended.
  • Slice muffins in half, spread with the cream cheese frosting, and then sandwich together. Serve warm or at room temperature.
