I've had this recipe since 1938, when the girls I worked with game me a bridal shower. One of their presents was a recipe box filled with their favorites. Inside, I found this recipe, and I've used it for just about every occasion since. They're always well received.

- In a large bowl, combine the sugar, flour, baking powder, salt, dates and nuts. Add the eggs, butter and vanilla; stir just until dry ingredients are moistened (batter will be very stiff). , Spread in a greased 15x10x1-in. baking pan. Bake at 350° for 20-25 minutes or until golden brown. Cool bars on a wire rack. Dust with confectioners' sugar. ,

CHEWY DATE NUT BARS
You'll need just six ingredients, including a convenient boxed cake mix, to bake up these chewy bars chock-full of walnuts and dates. They are my husband's favorite snack, and he loves to take them to work. I often whip up a batch for bake sales or to share with my co-workers at our local car dealership.

This is a family recipe but I am not sure where it came from. I love dates, so this is a favorite of mine for holidays (and it is easy).

- Mix all ingredients.
- Bake in greased layer cake pans or square pans at 375 degrees for 35 minutes.
- Cool for 15 minutes.
- Slice into squares and roll bars in confectioner's sugar so they don't stick together when stored.
MOM'S DATE NUT BARS
These are the bars that I like the best they are so moist and so easy to make - this recipe is often doubled during the holiday as they taste so good and go fast off the cookie and bar tray.

- 1. Butter or spray a 13x9-inch baking pan;set aside. Heat oven to 350^.
- 2. Beat eggs until foamy and then beat in granulated sugar in gradually. Stir dry ingredients together. Add dates and nuts to flour mixture, then stir into egg mixture.
- 3. Spread mixture(which is thick) into the prepared pan. Bake until firm and delicately brown, bake about 25-30 minutes, so they do not get dry. When just a tad warm and not hot cut into long finger shape bars and roll in powdered sugar.;or place some powdered sugar in a small bag and add a piece or 2 and gently shake to coat evenly, shake off any excess.

- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. In a small bowl, whisk flour, oats and salt; gradually add to creamed mixture, mixing well. Putting this here so that the recipe for one of my dad's favorite Christmas cookies doesn't get lost. I remember chopping the dates (no packages of chopped dates when I was little!) and the nuts for these as one of the first things I did to help Mom with her Christmas baking.

APPLE DATE-NUT BARS

- In a heavy saucepan combine the apples, the granulated sugar, the lemon juice, and the water and simmer the mixture, covered, stirring occasionally, for 5 to 10 minutes, or until the apples are tender. Add the dates, simmer the mixture, uncovered, stirring it and mashing the dates, for 3 to 5 minutes, or until the dates are soft and the mixture is almost smooth, and let the purée cool. In a bowl combine the butter, the brown sugar, the salt, the flour, the pecans, and the cinnamon and blend the mixture well. Press half the flour mixture evenly into a buttered 13- by 9-inch baking pan, spread the purée over it, and crumble the remaining flour mixture over the purée, pressing it lightly to form an even layer. Bake the mixture in the middle of a preheated 375°F oven for 35 to 40 minutes, or until it is golden, let it cool completely in the pan on a rack, and cut it into 36 bars.
OLD FASHIONED DATE NUT BARS
A little different from other recipes I've seen here, because the nuts are in the crust and there's the addition of lemon. They sound great. Wish I knew where the recipe came from! Read all the way through--notes at the end are from the original author.

- Combine filling ingredients in a saucepan, bring to a boil, reduce heat and simmer a few minutes till thickened. Set aside and let cool.
- For the base, sift together dry ingredients.
- Cream sugar and butter. Add eggs, and dry ingredients and walnuts. Add lemon juice and zest to moisten.
- Spread on a cookie sheet and up the sides.
- Spread cooled filling over crust.
- Combine filling ingredients with a fork until crumbly. Sprinkle on top and bake at 375 F for 35-40 minute.
- Original recipe calls for the bars to be baked on a cookie sheet pan. We like them thicker, so I put them in a 9 X 13 cake pan.
- Cool and cut unto bars.
- To serve sprinkle liberally with 10X sugar.

- In a small bowl, pour boiling water over dates, and set aside to cool. Preheat oven to 325 degrees F (165 degrees C). Grease a 10x10 inch baking pan.
- In a medium bowl, cream together the shortening and white sugar. Add eggs, one at a time, beating after each addition. Add the dates, including any water; mix well. Sift together the flour, cinnamon, nutmeg, and baking soda; stir into the date mixture. Then stir in the nuts.

- 1. Heat oven to 375^. Spray a 9x13 inch baking pan; set aside.

DATE NUT DREAM BARS
There are many variations of this recipe and I have tried several. This is the one I like best. It is a very versatile recipe because you may substitute whatever dried fruits or nuts you have on hand for what the recipe calls for. The base is a delicious, buttery shortbread and I love the butter icing. Store these in the fridge so that the icing stays firm.

- Line a 9" x 13" metal cake pan with parchment paper and set aside.
- In a bowl, beat together the butter, sugar and salt until fluffy.
- Using a wooden spoon, stir in the flour.
- Press into the prepared pan and bake in the centre of a 350 degree F oven until golden, about 20 minutes.
- Let cool in the pan on a rack.
- To make the filling, whisk together the eggs, brown sugar and almond extract in a bowl.
- Stir in the flour and baking powder until smooth.
- Stir in the walnuts, cherries and dates.
- Spread over the cooled base and bake in the centre of a 350 degree F oven until firm to the touch, about 20 minutes.

OLD FASHIONED DATE NUT BARS
Old Fashioned Date Nut Bars - An old fashioned treat that has never gone out of favor; sweetened dates are combined with a crumbled oat topping. Perfection.

- Boil dates, sugar, and water until thick, about 5-10 minutes. Add the butter, vanilla, walnuts and coconut and mix thoroughly.
- Set aside to cool a bit.
- Combine the dry ingredients and mix well. Add the melted butter and mix until thoroughly combined.
- Firmly press half of the mixture into a lightly greased 13 x 9 pan.
- Cover with filling mixture.
- Top with remaining half of crust mixture. Press lightly.
- Bake at 350 degrees for 25 minutes; watch carefully and do not overbake.
- Cut into squares when cool and store in an airtight container.
DATE AND NUT BARS
Steps:
- Preheat oven to 350 F. Lightly grease a 9 x 9 inch baking pan. Place dates in a small bowl. Pour boiling water over dates; let stand, stirring occasionally, until ready to use. Beat shortening with sugar in a medium-sized bowl until light and fluffy. Beat in eggs, one at a time. Stir together flour, salt, cinnamon, nutmeg and baking soda in a small bowl until well combined. Beat flour mixture into shortening mixture until well blended. Stir in nuts and dates. Turn mixture into prepared pan and smooth the top. Bake in the centre of oven for 35 to 40 minutes, until top is golden and a cake tester inserted in centre comes out clean. Cool squares completely in pan on a rack. Cut into bars. Roll in icing sugar if you wish.

- In the bowl of a food processor, combine flour, salt, and sugar. Add the butter, and pulse until the mixture resembles small peas, 8 to 10 seconds.
- With the machine running, add 1/4 cup ice water through the feed tube until the dough just starts to come together when you press it with your fingers. If necessary, add up to 2 more tablespoons ice water.
- Divide dough into two equal balls. Flatten each ball into a disk, and wrap in plastic. Chill at least 1 hour. Dough may be frozen up to 1 month.
