GRANDMA'S DATE-FILLED COOKIES



Grandma's Date-Filled Cookies image

Relish these date-filled cookies that are baked to perfection-a great dessert to serve at your party.

1 cup butter, softened
1 1/2 cups packed brown sugar
1 teaspoon vanilla
3 eggs
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1 3/4 cups chopped dates (from 8-oz bag)
3/4 cup granulated sugar
3/4 cup water

Steps:

  • In large bowl, beat softened butter and brown sugar with electric mixer on medium speed until light and fluffy, scraping bowl occasionally. Beat in vanilla and eggs until well blended. On low speed, beat in flour and baking soda until well combined, scraping bowl occasionally. Dough will be soft. Divide dough into 4 pieces; flatten each piece, and wrap in plastic wrap. Refrigerate about 3 hours or until dough is firm and cold.
  • Meanwhile, in 2-quart saucepan, mix Filling ingredients. Heat to boiling; boil 1 minute, stirring constantly. Reduce heat to low; simmer about 10 minutes, stirring occasionally, until mixture is darkened in color and thickens slightly. Pour filling mixture into small bowl; refrigerate uncovered until ready to use (mixture will thicken as it cools).
  • Heat oven to 375°F. Remove 1 piece of chilled dough from refrigerator, and unwrap. On work surface generously sprinkled with flour, roll out dough with floured rolling pin to 1/8 inch thick. Using floured 2 1/2-inch round cutter, cut out rounds. In half of the rounds, cut out and remove 1-inch round or desired shape of hole from center. Place whole rounds on ungreased cookie sheet.
  • Spoon 1 generous teaspoonful cooled filling onto center of each round; top with cut out dough round. With fingertips or floured fork, press edges of dough to seal. Return dough centers and leftover dough to refrigerator for rerolling.
  • Bake 7 to 9 minutes or until light golden brown. Cool 1 minute; remove from cookie sheet to cooling rack.
  • Meanwhile, repeat steps on assembling and baking with each portion of refrigerated dough, refrigerated leftover dough and remaining filling.
  • Cool cookies completely, about 1 hour. Store covered in airtight container.

3 cups coarsely chopped dates
1/4 cup granulated sugar
1 1/2 cups water
1 cup firmly packed brown sugar
1 3/4 cups flour
1/2 teaspoon baking soda
1 teaspoon salt
1 1/2 cups old-fashioned rolled oats
3/4 cup (1 1/2 sticks) very cold butter, cut into small cubes

Steps:

  • Preheat oven to 400 degrees F.
  • In a nonreactive medium saucepan over low heat, combine dates, granulated sugar, and water. Cook, stirring constantly, until thickened, about 15 minutes. Cool completely. In a large bowl or bowl of an electric mixer, place brown sugar, flour, baking soda, salt, and oats. Mix on low speed until combined. While mixer is running, add butter, 1 piece or 2 at a time. Mix until crumb like, with some lumps of butter no larger than pea size.
  • Using your hands, press and flatten half of crumb mixture into a greased 9 by 13-inch pan. Spread cooled filling over crust. Cover with remaining crumb mixture, patting lightly. Bake until lightly browned, 25 to 35 minutes. Cool slightly and cut into bars while still in the pan. Gently remove cut bars from pan. Serve warm or at room temperature. Date bars, stored in an airtight container, refrigerate and freeze well.

I have no idea where this recipe originated but my twin sister gave me this recipe over 35 years ago and it has remained one of my favorites ever since!!

COOKIES:
3 1/2 c ap flour or ww works good too
1/8 tsp cinnamon
1/8 tsp cardamom
1 tsp salt
1 tsp baking soda
1 c butter
2 c brown sugar
2 large eggs, beaten
1/2 c buttermilk or sour milk
1 1/2 tsp vanilla
FILLING:
2 c chopped dates
3/4 c water
3/4 c sugar
1/2 c chopped pecans or whatever you like....walnuts are good too

Steps:

  • 1. Combine all filling ingredients and cook in a small pot till thick, stirring constantly. Set aside to cool.
  • 2. Stir together, flour, cinnamon, cardamom, salt and baking soda. Cream together butter and brown sugar....add eggs, milk and vanilla. Add dry ingredients and mix well. Drop dough by teaspoon full on an ungreased cookie sheet, flatten a little , place 1/2 tsp date mixture on top of dough followed by 1/2 tsp more dough Bake 350 for approx 15 mins

3/4 cup chopped Medjool dates (about 5 dates)

Steps:

  • Mix the butter, brown sugar and granulated sugar in a large bowl with an electric mixer on medium speed until creamy. Turn the mixer to low, add the egg and mix well to combine. Add the oats, flour and cinnamon and mix on low until combined. Fold in the dates and walnuts with a wooden spoon or rubber spatula. 1 large egg
¾ cup (100 g) Sonora wheat flour, or any other heirloom wheat flour
¾ cup (80 g) old-​fashioned rolled oats
1 cup (145 g) chopped pitted Medjool dates (about 16 )

Steps:

  • In a stand mixer fitted with a paddle attachment, cream the butter and both sugars at medium speed until smooth, about 3 minutes. Add the salt, baking soda, and cinnamon and mix until well combined, 1 minute. Add the egg and mix for another minute. Add the flour and oats and mix on low speed until combined. Finally, add the dates in two additions to make sure they're distributed evenly throughout. The dough will be very soft at this point.
  • Transfer the dough to a sheet of parchment paper or plastic wrap. Flatten into a disk with your hands, then wrap tightly and refrigerate for at least 30 minutes (and up to 2 days)-​chilled dough will be much easier to handle.
  • Place two racks in the middle positions and preheat the oven to 350ºF. Line two baking sheets with parchment paper.
  • Divide the dough into 16 equal portions, about 1½ ounces (45 g) each. Working quickly so that the dough doesn't warm up, shape each portion into a ball with your hands. You can freeze the cookie dough balls for up to 2 weeks in a freezer bag to be baked from frozen at a later time. Place cookies on the prepared baking sheets, at least 3 inches apart to prevent the cookies from touching as they spread when they bake. Bake for 10 minutes, rotate the baking sheets and switch their positions in the oven, and bake for another 6 to 8 minutes, until the edges are brown and the middle is golden.
