This was an adopted recipe from Recipe*zaar I made these delicious squares last night, they are really moist and tasty! I did change the recipe and I am happy with the results. I used butter, my two apples measured 1 1/2 cups.

1/2 cup butter or 1/2 cup margarine, softened
3/4 cup sugar
1 egg
1 teaspoon pure vanilla extract
2 apples, peeled finely chopped
1/2 cup nuts, chopped
1/2 cup dates, chopped
1 1/2 cups flour
1/2 teaspoon baking soda
1 teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees F.
  • Blend butter and sugar, then beat in egg and vanilla until mixture is light and fluffy
  • Stir in apples, dates and nuts. Set aside.
  • In a separate bowl, combine flour, baking powder and baking soda.
  • Gradually stir flour mixture into the fruit mixture. The batter will be very stiff, but it will mix together nicely, keep stirring!
  • Spread into a greased 9"x9" pan and bake until golden brown. 30 - 45 minutes (I used and 8" pan and it required 45 minutes to bake.

A crumbly crust of rolled oats holds a moist apple-date filling. To boost texture even more, stir 1/2 cup of chopped walnuts into the filling.

1/4 cup sugar
1 cup water
2 cups chopped peeled apples
1 (8-oz.) pkg. chopped dates
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup margarine or butter
1 1/2 cups rolled oats
1 cup firmly packed brown sugar

Steps:

  • In medium saucepan, combine all filling ingredients; mix well. Bring to a boil. Reduce heat to low; cook about 10 minutes or until thickened, stirring occasionally. Cool slightly.
  • Meanwhile, heat oven to 375°F. Grease and flour 13x9-inch pan. In large bowl, combine flour, baking soda and salt; mix well. With pastry blender or fork, cut in margarine until mixture resembles coarse crumbs. Add oats and brown sugar; mix well.
  • Press 3 cups crumb mixture evenly in greased and floured pan. Spread evenly with filling. Sprinkle with remaining crumb mixture; press lightly.
  • Bake at 375°F. for 18 to 28 minutes or until golden brown. Cool 1 hour or until completely cooled. Cut into bars.

3 medium juicy, sweet apples, such as Gala orFuji, peeled
1/2 cup (68 grams) all-purpose flour
1 teaspoon baking powder
2 large eggs, at room temperature
1/3 cup (67 grams) sugar
Pinch of fine sea salt
2 teaspoons pure vanilla extract
6 tablespoons whole milk at room temperature
2 tablespoons (1 ounce; 28 grams) unsalted butter, melted and cooled
Confectioners' sugar, for dusting (optional)

Steps:

  • Center a rack in the oven and preheat the oven to 400 degrees F. Butter an 8-inch square baking pan.
  • Slice the apples from top to bottom using a mandoline, Benriner or a sharp knife, turning the fruit as you reach the core. The slices should be about 1/16 inch thick-elegantly thin, but not so thin that they're transparent and fragile. Discard the cores.
  • Whisk the flour and baking powder together in a small bowl.
  • Working in a large bowl with a whisk, beat the eggs, sugar and salt together for about 2 minutes, until the sugar just about dissolves and, more important, the eggs are pale. Whisk in the vanilla, followed by the milk and melted butter. Turn the flour into the bowl and stir with the whisk until the batter is smooth. Add the apples to the bowl, switch to a flexible spatula and gently fold the apples into the batter, turning everything around until each thin slice is coated in batter. Scrape the batter into the pan and smooth the top as evenly as you can-it will be bumpy; that's its nature.
  • Bake for 40 to 50 minutes, or until golden brown, uniformly puffed- make sure the middle of the cake has risen-and a knife inserted into the center comes out clean. Transfer the cake to a rack and allow to cool for at least 15 minutes.
  • Using a long chefs knife, cut the cake into 8 squares in the pan (being careful not to damage the pan), or unmold the cake onto a rack, flip it onto a plate and cut into squares. Either way, give the squares a dusting of confectioners' sugar before serving, if you'd like.

¾ cup orange juice
½ teaspoon lemon juice
2 cups whole wheat flour
2 cups quick-cooking oats
¾ cup brown sugar

1 ½ cups unsalted butter, melted and cooled

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x11-inch baking pan and line with parchment paper.
  • Heat dates, orange juice, and lemon juice in a large saucepan over medium-low heat, stirring often, until dates are soft, about 6 minutes.
  • Stir whole wheat flour, oats, brown sugar, baking powder, baking soda, and salt together in a large bowl; stir in melted butter. Press half of the oat mixture evenly into the prepared pan.
  • Spread date mixture evenly over oat mixture; sprinkle remaining oat mixture evenly over date mixture and press down lightly.

2 large granny smith apples, peeled,cored and chopped fine
2 tablespoons sugar
2 tablespoons fresh lemon juice
2 tablespoons water
1 1/2 cups pitted dates, chopped
1 cup butter, cut into bits and softened
1 cup packed light brown sugar
1 teaspoon salt
2 1/2 cups all-purpose flour
1 1/2 cups finely chopped walnuts
2 teaspoons cinnamon

Steps:

  • Preheat oven to 375 degrees F.
  • Butter a 13 x 9 inch baking pan.
  • In a saucepan, combine apples, sugar, lemon juice and water and simmer, covered, stirring occasionally, for 5-10 minutes, or until apples are tender.
  • Add dates and simmer, uncovered, stirring and mashing dates, for 3-5 minutes, or until dates are soft and mixture is almost smooth and let puree cool.
  • In a bowl, combine butter, brown sugar, salt, flour, walnuts and cinnamon and blend well.
  • Press half of flour mixture evenly into prepared pan.
  • Spread puree over, and crumble remaining flour mixture over puree, pressing lightly to form an even layer.
  • Bake for 35-40 minutes, or until golden.
  • Let cool completely.
  • Cut into 36 bars.

1/2 cup packed brown sugar

1 cup Original Bisquick™ mix
1 cup granulated sugar
1 cup milk
2 tablespoons butter or margarine, melted
4 eggs, beaten

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In medium bowl, mix 1 cup Bisquick mix and the brown sugar. Cut in 1/4 cup butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until crumbly. Stir in nuts; set aside.
  • In large bowl, mix apples, cinnamon and nutmeg; spoon into pan. In medium bowl, stir remaining ingredients until well blended. Pour mixture over apples. Sprinkle with streusel.

This apple dessert is one of my family's favorites. If you're serving a larger group, I've found that it goes a little further when cut into squares rather than slices like a traditional apple pie."

FILLING:
1/4 cup packed brown sugar
2 tablespoons cornstarch
1 cup water
5 cups thinly sliced peeled apples
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon lemon juice
PASTRY:
2 cups all-purpose flour
1/2 teaspoon salt
2/3 cup cold shortening
2 large egg yolks, beaten
1/4 cup cold water
1 tablespoon lemon juice
GLAZE:
1/2 cup confectioners' sugar
1 tablespoon whole milk
1 tablespoon butter, melted
1/2 teaspoon vanilla extract

Steps:

  • For filling, combine sugar, cornstarch and water in a saucepan. Mix until well blended. Add apples; heat to boiling, stirring constantly. Reduce heat and simmer 5 minutes, stirring occasionally. Remove from the heat. Stir in spices and lemon juices; set aside., For pastry, combine flour and salt. Cut in shortening until mixture is crumbly. Combine egg yolks, water and lemon juice; blend into flour. Mixture will form a ball. Divided in half. , On a lightly floured surface, roll the dough between two pieces of waxed paper to fit the bottom and halfway up the sides of a 13x9-in. baking pan. Spread filling over pastry. Roll remaining pastry to fit pan exactly; place on top of filling. Fold bottom pastry over top and press to seal. Cut a few small slits in top crust. , Bake at 400° for about 40 minutes or until lightly browned. For glaze, combine all ingredients and drizzle over the warm pastry.
