DARK CHOCOLATE CHEESECAKE

Nonstick cooking spray, for the pan
5 chocolate graham crackers
4 tablespoons salted butter, melted
2 ounces 70% dark chocolate
12 ounces cream cheese, at room temperature
1/3 cup granulated sugar
1 teaspoon cocoa powder
1/2 teaspoon vanilla extract
1/4 teaspoon kosher salt
1 large egg
1 cup canned cherry pie filling
1 sprig fresh mint, for garnish

Steps:

  • For the crust: Position an oven rack in the center of the oven and preheat to 350 degrees F. Spray a 6-inch springform pan with cooking spray to coat the bottom and sides.
  • Add the graham crackers to a resealable plastic bag. Using your hands or a rolling pin, crush the graham crackers into crumbs. Transfer them to a mixing bowl and add the melted butter. Fold and press together with a spatula until a loose, crumbly mixture is made. Pour the mixture into the bottom of the prepared pan and press to create an even base for the cheesecake. Chill the crust in the fridge while you make the filling to set the base.
  • For the filling: Add the chocolate to a heatproof bowl and set the bowl over a pan of simmering water. Heat, stirring with a spatula, until the chocolate is melted and completely smooth. Set aside.
  • Mix the cream cheese, sugar and cocoa powder in a food processor until smooth. Remove the lid and scrape down the sides of the bowl. Add the vanilla, salt and egg and process until completely incorporated. Scrape down the sides once more. Turn the machine back on and while the machine is running, drizzle in the melted chocolate and allow it to completely incorporate into the mixture.
  • Pour the chocolate filling over the prepared crust and smooth out the top with a spatula. Transfer the cheesecake to the center rack and bake until the filling is no longer soupy but still slightly jiggly, about 32 minutes. Turn off the oven and open the door just a hair. Allow the cheesecake to sit in the warm oven for 15 more minutes with the door ajar.
  • Transfer the cheesecake to a cooling rack and let cool for 30 minutes.
  • Run a sharp knife around the edge of the pan to help free the cheesecake, but keep it in the pan. The cheesecake will continue to shrink while it cools and this step makes it easier to separate the cheesecake when you are ready to serve it.
  • For the topping: Pour the cherry pie filling onto the cooled cheesecake and smooth into an even layer, leaving a bit uncovered around the edges. Cover the springform pan with plastic wrap and refrigerate for at least 2 hours.
  • When you are ready to eat, remove the cheesecake from the fridge and transfer to a serving platter. Garnish with a sprig of mint and serve.

24 chocolate wafer cookies (from one 9-ounce package)
1 tablespoon sugar
1/4 cup (1/2 stick) butter, melted
Filling
1 9.7-ounce bar Scharffen Berger 70% Cocoa Bittersweet Chocolate,* chopped
4 (8-ounce) packages cream cheese, room temperature
1 1/4 cups plus 2 tablespoons sugar
1/4 cup unsweetened cocoa powder (preferably Scharffen Berger)
4 large eggs
Topping
3/4 cup whipping cream
6 ounces Scharffen Berger 70% Cocoa Bittersweet Chocolate,* chopped
1 tablespoon sugar
Bittersweet chocolate curls
*If unavailable, substitute another high-quality bittersweet chocolate.

Steps:

  • For crust:
  • Preheat oven to 350°F. Butter 9-inch-diameter springform pan with 3-inch-high sides. Blend cookies in processor until finely ground; blend in sugar. Add melted butter and process until well blended. Press crumbs evenly onto bottom (not sides) of prepared pan. Bake just until set, about 5 minutes. Cool while preparing filling. Maintain oven temperature.
  • For filling:
  • Stir chopped chocolate in metal bowl set over saucepan of simmering water until melted and smooth. Remove bowl from over water; cool chocolate until lukewarm but still pourable. Blend cream cheese, sugar, and cocoa powder in processor until smooth. Blend in eggs 1 at a time. Mix in lukewarm chocolate. Pour filling over crust; smooth top. Bake until center is just set and just appears dry, about 1 hour. Cool 5 minutes. Run knife around sides of cake to loosen. Chill overnight.
  • For topping:
  • Stir cream, 6 ounces chocolate, and sugar in heavy medium saucepan over low heat until smooth. Cool slightly. 16 ounces canned pumpkin puree
1/2 teaspoon ground cinnamon
1/2 teaspoon grated fresh nutmeg
1 pinch ground cloves

Steps:

  • Make the crust: Heat oven to 325*F. Lightly butter a 9" springform pan.
  • In a medium saucepan, melt the butter with the chocolate over low heat, stirring constantly, until melted and smooth.
  • Remove pan from heat and cool slightly; stir in the sugar and egg until blended.
  • In a small bowl, whisk the flour, baking powder, and salt; add to the chocolate mixture and mix until combined.
  • Spread batter in the prepared pan and smooth top with a spatula; bake 10 minutes, or until risen and dry to the touch. Let cool completely.
  • Wrap the outside of the springform pan in a large sheet of foil. Leave the oven on.
  • Make the cheesecake: Melt the chocolate, stirring, until smooth; set aside.
  • In a large bowl, using an electric mixer on medium speed, beat the cream cheese until smooth.
  • Add sugar and beat until light and fluffy.
  • Add the eggs, 1 at a time, beating well after each addition; blend in the cornstarch and vanilla.
  • Add 1 cup of the cheesecake batter to the melted chocolate; stir until well blended.
  • Beat the pumpkin, cinnamon, nugmeg, and cloves into the remaining batter.
  • Pour 3/4 of the pumpkin batter over the crust.
  • Pour the chocolate batter over the pumpkin batter. (If the chocolate batter is too thick to pour easily, heat in the microwave for 10 seconds.).
  • Spoon the remaining pumpkin batter over the chocolate batter; use a table knife to make a few decorative swirls. Do not overswirl.
  • Set the pan in a medium roasting pan; add enough hot water to the roasting pan to reach halfway up the sides of the springform.
  • Bake the cheesecake in the water bath in the center of the oven for 90 minutes, or until firm around the edges but slightly jiggly in the center.
  • Turn the oven off, prop the door open a few inches, and let the cake stand in the water bath for 1 hour, or until completely set.
  • Remove cake from the water bath and refrigerate at least 4 hours. Remove the foil and sides of springform; transfer cake to a platter, cut and serve.
  • If desired, serve with a drizzle of caramel, or a mocha fudge sauce.

2 -3 cups chocolate wafer cookies, crushed finely (I like a lotta crust)
1/2 cup salted butter, melted for greasing pan(s)

2 lbs cream cheese, softened
1 1/3 cups granulated sugar
4 eggs, room temperature
1 cup sour cream
1/3 cup whipping cream
1 teaspoon vanilla
1 cup peanut butter
10 mini butterfinger candy bars, crushed in food processor
1/2 cup butterscotch caramel sauce
3 1/2 ounces dark chocolate, melted

Steps:

  • Crush the wafer cookies in a food processor or a large ziplock bag. Set aside.
  • Repeat process with the mini Butterfinger bars, crushing them as finely as you'd like.
  • Preheat the oven to 350ºF. Place a rack in the middle of the oven. Grease 10" springform pan with butter. Double layer foil wrap the bottom of the pan.
  • Mix the crushed wafer cookies with the melted butter and press into the bottom and up the sides of your springform pan. Set aside.
  • Blend the cream cheese until it's creamy.
  • Gradually add the sugar.
  • Add eggs, one at a time, and only blend until each egg is incorporated.
  • Add the sour cream, whipping cream and vanilla.
  • Remove 1 1/2 cup of the cream cheese mixture and set aside in a bowl. Add the peanut butter to the original mixture and blend until incorporated. Add the crushed Butterfinger bites.
  • Blend the melted chocolate into the reserved 1 1/2 cup batter and then spread evenly over the cookie crust.
  • Pour the peanut butter batter over the chocolate layer and spread evenly.
  • Dollop the butterscotch-caramel sauce over the top and then using a toothpick or the tip of a thin knife, swirl the sauce into the batter.
  • Place the springform pan into roasting pan then fill the roasting pan with 1 1/2 - 2 inches of hot water.
  • Carefully place roasting pan onto middle rack and bake for 1 hour, 5 minutes or until the cake is set and a toothpick inserted into the middle comes out clean. Be careful to not over bake.
  • Cool the cake at room temperature for about an hour, then using a very thin knife, run along the edges of cake to loosen it from the springform pan. Remove the ring of the springform and place cake on dish or serving platter and chill over night.

1 cup hazelnuts
1 stick butter, melted
1/4 cup sugar
1 1/2 cups of heavy cream
3 tablespoons cocoa powder
3 tablespoons espresso powder (you can use instant coffee)
1/8 teaspoon salt
2 pounds cream cheese, softened
1/2 cup dark rum
1 1/4 cups sugar
1 pound chocolate melted - bittersweet chocolate should be cooled to warm
4 eggs

Steps:

  • Preheat the oven to 350 degrees. For the crust, grind the chocolate cookies and hazelnut with the sugar into a coarse crumb. Add the melted butter and combine. Press into the bottom of a 9-inch spring form pan. Bake crust for 10 minutes until set and place on a rack to cool. Once the crust is cool, wrap the outside of the pan in a double layer of aluminum foil to seal it. To make the water bath for baking the cake, place the spring form pan in a roasting pan and fill the roasting pan with water until it reaches half way up the side of the spring form pan. For the Espresso Chocolate Cream, heat 1/2 cup cream and add cocoa, espresso and salt. Whisk until smooth, let cool and add remaining cream and rum. Beat the cream cheese in an electric mixer until smooth and fluffy. Add sugar and beat well. Mix in melted chocolate and, once incorporated, add espresso cream mixture. Mix thoroughly, making sure there are no clumps. Add eggs 1 at a time. Pour mixture into crust resting in the water bath. Bake for 1 hour and 15 minutes and then turn off oven and leave cake in for another hour. Cool and chill, at least overnight.;

1 1/2 cups chocolate graham cracker crumbs
6 tablespoons butter, melted
10 ounces bittersweet chocolate chips (60% cocoa (or more)
32 ounces cream cheese, at room temperature
4 large eggs, at room temperature
1 cup granulated sugar
1 teaspoon pure vanilla extract or 1 teaspoon vanilla bean paste
1 cup tart dried cherries

Steps:

  • For Crust: Preheat oven to 350 degrees.
  • Lightly butter a 9 inch springform pan.
  • Pour graham cracker crumbs into bottom of pan. Drizzle with melted butter and press to form a thin crust.
  • Bake for 10 minutes, then remove from oven.
  • Reduce oven temperature to 325 degrees.
  • For Filling: Melt chocolate in a double boiler until smooth. Remove from heat, and bring to room temperature. Consistency should be pourable.
  • Meanwhile, whip cream cheese until light and fluffy.
  • Add sugar, and blend at medium-high speed until smooth and creamy.
  • Blend in eggs, one at a time. Beat until fluffy.
  • Add vanilla extract, and whip to combine.
  • Be sure to scrape down the sides of the bowl frequently as you are adding ingredients, to ensure that everything is well incorporated.
  • Gently stir in the melted chocolate, just until combined.
  • Carefully stir in the dried cherries.
  • Pour filling into room temperature crust.
  • Wrap bottom of springform pan with heavy duty aluminum foil, and place in a large roasting pan. Set on center oven rack. Carefully fill roasting pan with boiling water, about 1 inch up the side of the springform pan.
  • Bake 1 1/2 hours at 325 degrees, or until center is just set.
  • Remove from oven, and allow to cool about 5 minutes.
  • Run a knife around the edge of the cheesecake. Do not remove the springform pan.
  • Cover, and chill overnight.

A galette is basically a rustic, freeform pie, which means it's super-easy to roll out and shape. In this version, sweet cherries and chocolate balance out the rich, tangy cheesecake filling.

1 1/4 cup all-purpose flour, plus more for rolling (see Cook's Note)
1 tablespoon granulated sugar
1/4 teaspoon kosher salt
1 stick (8 tablespoons) cold unsalted butter, diced
1 large egg beaten with 1 tablespoon cold water
8 ounces cream cheese, at room temperature
2 tablespoons plus 2 teaspoons granulated sugar
1/2 teaspoon pure vanilla extract
1 large egg, separated
Pinch of kosher salt
One 10-ounce bag frozen cherries, thawed and drained
2 teaspoons lemon juice
1/2 teaspoon almond extract
2 ounces chopped semisweet chocolate (about 1/3 cup)
Coarse sugar, for sprinkling

Steps:

  • Pulse the flour, sugar and salt in a food processor until combined. Add the butter and pulse until it resembles coarse meal mixed with pea-size bits of butter, 10 to 15 times. Add the egg mixture and pulse until the dough just starts to come together, about 10 times. Turn the dough out onto a piece of plastic wrap, using the plastic to help form it into a disk. Wrap tightly and refrigerate until chilled, at least 1 hour or up to overnight.
  • Whisk together the cream cheese, sugar, vanilla, egg yolk and salt in a medium bowl until smooth. Cover with plastic wrap and chill in the refrigerator, about 45 minutes. Toss the cherries with the sugar, almond extract and lemon juice and set aside.
  • Position a rack in the center of the oven and place a rimmed baking sheet on it. Preheat the oven to 375 degrees F.
  • Sprinkle the dough lightly with flour on both sides and roll out on a lightly floured surface into a 12-inch round that is about 1/8-inch thick. Transfer the dough to a piece of parchment and place on an inverted baking sheet.
  • Spread the cream cheese mixture over the center of the dough, leaving a 2-inch border on all sides. Sprinkle the chopped chocolate over the cream cheese and top with the cherries. Fold the edges of the dough over the filling, pleating as needed. Brush the crust with the egg white and sprinkle with coarse sugar. Refrigerate for 15 minutes.
  • Slide the galette and parchment paper onto the preheated baking sheet and bake until the crust is golden and the filling is bubbling, about 40 minutes. Transfer the baking sheet to a wire rack to cool slightly before serving, about 30 minutes.

This is very similar to recipe #414264, but I've altered the ingredients somewhat and include how to make the fun chocolate leaves to put on top. It's a snap to pull together with your mixer and doubles beautifully so you can gift one or freeze one for the future. I don't remember the recipe's providence, but EVERYONE, short of small children, loves this divine dessert.

1 1/2 cups chocolate cookies, finely crushed
1/3 cup butter, softened
1/2 tablespoon sugar

16 ounces cream cheese, softened (about 500 g)
4 eggs, room temp
3/4 cup sugar
2 teaspoons instant coffee (decaf works fine)
2 -3 tablespoons powdered sugar
1 ounce dark chocolate

Steps:

  • Butter sides & bottom of an 8" springform pan.
  • Combine cookie crumbs, butter & sugar in mixer.
  • Press mixture evenly onto pan bottom.
  • Melt chocolate in double-boiler & stir smooth.
  • Beat cream cheese until smooth, then add eggs, one at a time.
  • Gradually add sugar, mixing well until blended.
  • Add melted chocolate, coffee & stir to blend.
  • Turn mixture into prepared pan.
  • Bake at 350° (180°C) for 1 hour or until center is almost set. Firms when chilled.
  • Cool on counter for 45 min., cover & chill overnight.
  • Remove pan sides. Sprinkle with powdered sugar from a sieve to prettify and decorate with chocolate leaves (see below.).
  • CHOCOLATE LEAVES:.
  • Melt chocolate in double-boiler.
  • Brush on cleaned & dried fresh leaves (Ficus work well).
  • Place on small, paper-lined pan & freeze overnight.

1 (18.25-oz.) package devil's food cake mix
1 (3.4-oz.) package chocolate instant pudding mix
3 large eggs
1 1/4 cups milk
1 cup canola oil
1 tablespoon vanilla extract
1 1/2 teaspoons chocolate extract (optional)
1 teaspoon almond extract
3 (1.55-oz.) milk chocolate bars, chopped (we tested with Hershey's)
3 (16-oz.) cans homestyle cream cheese frosting
3 (7.75-oz.) boxes frozen cheesecake bites, coarsely chopped (we tested with Sara Lee)
1 (12-oz.) jar dulce de leche caramel sauce (we tested with Smucker's)
Double chocolate rolled wafer cookies, coarsely broken (we tested with Pirouline)
Chocolate fudge rolled wafer cookies, coarsely broken (we tested with Pepperidge Farm)

Steps:

  • Grease 2 (9") round cakepans, and dust with cocoa. Beat cake mix and next 7 ingredients at low speed with an electric mixer 1 minute; then beat at medium speed 2 minutes. Fold in chopped milk chocolate bars. Pour batter into prepared pans. Bake at 350° for 32 minutes or until cake springs back when lightly touched. Cool cake in pans on wire racks 10 minutes; remove from pans, and cool completely on wire racks. Wrap and chill cake layers at least 1 hour or up to 24 hours. (This step enables you to split cake layers with ease.) Using a serrated knife, slice cake layers in half horizontally to make 4 layers. Place 1 layer, cut side up, on a cake plate. This recipe is originally a Karin Goren masterpiece. Karin Goren is a local Israeli food personality, always smiling, always baking the most wonderful things. I watched her do this cheesecake on her show, Sweet Secrets, and was able to recreate this wonderful dish over the past weekend. Of course, not being able to leave well enough alone, I played around with her recipe, made a few changes, and here is my version

150 g cookie crumbs
100 g melted butter
1 kg soft white cheese (I used 9% fat, can use cream cheese)
3/4 cup sugar
6 eggs
300 g white chocolate chips
1/3 cup cream (unwhipped)
1 tablespoon cornflour
300 g dark chocolate chips
1/3 cup cream (unwhipped)

Steps:

  • Preheat the oven to 200 degrees Celsius.
  • To make the base:.
  • Mix the cookie crumbs with the melted butter and pat into the bottom of a 26 cm diameter springform pan.
  • Place in the oven to "set" for about 7 minutes.
  • Remove and set aside to cool.
  • To make the filling base:.
  • Beat all the ingredients together until well blended.
  • Pour half into a large, 4 cup measure cup, pour the other half into another 4 cup measuring cup. Alternatively, you can use jugs, pitchers, whatever is available, as long as it has a handle and a spout.
  • Melt the white chocolate chips together with the cream and stir to blend.
  • Add the cornflour and stir again.
  • Add this mixture into one of the cheese filling jugs. Stir to blend.
  • Melt the dark chocolate chips together with the cream and stir to blend.
  • Add this mixture into the other of the cheese filling jugs. Stir to blend.
  • Okay, here comes the fun part --
  • Carefully pour a portion of the white chocolate filling into the middle of the crust.
  • Now carefully (I mean CAREFULLY) pour a portion of the dark chocolate filling into the middle of the white filling.
  • Now CAREFULLY pour some of the white chocolate filling into the dark chocolate filling.
  • Now CAREFULLY pour some of the dark chocolate filling -- okay you get the picture?.
  • Keep this up until you have a series of concentric circles. Again, I cannot mention it enough, do this carefully so you don't mess up the circles.
  • Very carefully transfer this to the oven.
  • Bake at 200 degrees C for 10 minutes.
  • Turn the oven down to 120 degrees C and bake for a further 60 minutes.
  • Turn the oven off and let the cheesecake hang out in the cooling oven for another 2 hours.
  • Transfer to the refrigerator and let it hang out there for another 24 hours.
  • When you cut slices you will have the most gorgeous white and dark "zebra-ed" portions.

4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened

1 tsp. vanilla
4 eggs
1 tub (8 oz.) COOL WHIP Whipped Topping (Do not thaw.)
6 oz. BAKER'S Bittersweet Chocolate
1 cup fresh raspberries

Steps:

  • Heat oven to 325°F.
  • Mix graham crumbs, 3 Tbsp. sugar and butter; press onto bottom of 9-inch springform pan.
  • Beat cream cheese, 1 cup sugar and vanilla with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
  • Bake 55 min. or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate cheesecake 4 hours.
  • Microwave COOL WHIP and chocolate in microwaveable bowl on HIGH 2 to 2-1/2 min. or until chocolate is completely melted and mixture is well blended, stirring after each minute. Cool 15 min.; slowly pour over cheesecake. Garnish with raspberries.

FOR THE CRUST:
- 20 chocolate wafer cookies
- 1 tablespoons sugar
- 4 tablespoons unsalted butter, melted
FOR THE FILLING:
- 10 ounces DOVE® 71% Silky Smooth Dark Chocolate, chopped
- 4 8-ounce packages cream cheese, fat-free
- 1 cup sugar
- 1/3 cup cocoa powder
- 4 eggs
FOR THE GANACHE
- ½ cup heavy cream
- 5 ounces DOVE® 71% Silky Smooth Dark Chocolate
- 1 teaspoon sugar
- 9-inch spring form baking pan
- Reynolds® Parchment Paper

Steps:

  • Preheat oven to 350 degrees F.
  • Line the bottom of a 9-inch spring form pan with Reynolds® Parchment Paper.
  • Place the cookies and sugar in a food processor and process until finely ground. While the processor is running, drizzle in the melted butter and continue processing until well-mixed. Press the crumb mixture into the bottom of the buttered pan, packing well and making sure to leave a level surface. Bake 5-7 minutes, until set. Let crust cool while you make the filling. Do not turn off the oven.
  • Melt the 71% chocolate in a double boiler or in a glass bowl over simmering water. When it's melted, remove from heat and allow it to cool until it is lukewarm but still liquid.
  • While the chocolate cools, cut or tear the cream cheese into chunks and place it in the food processor. Add the sugar and cocoa powder and process until blended. Add eggs, one at a time, processing thoroughly between each one. While processor is running, drizzle in the lukewarm chocolate and continue processing until thoroughly mixed.
  • Pour the filling over the crust and smooth the top. Bake at 350 degrees F for 55-60 minutes, until center is lightly set and looks dry. Run a knife around the edge of the cheesecake to make sure it doesn't stick as it cools. Cool on a rack for one hour, then refrigerate for at least four hours or overnight. Do not remove the ring of the springform pan and refrigerate for at least four hours or overnight.
  • To make the ganache, stir together the chocolate, cream and sugar in a heavy saucepan over medium-low heat until smooth. Cool slightly, then pour the ganache over the cheesecake, spreading it to the edge of the top, but not over. Chill for one hour, until the topping is set.
  • Before serving, allow the cake to sit at room temperature for one hour.
