TOMATO BASIL SOUP

Number Of Ingredients 9

2 Tablespoons coconut oil or olive oil
2 cups of cooked chicken breast (shredded)
1 cup sweet onion (chopped)
2 cloves garlic (minced)
2 cups chicken or vegetable stock
1 28 oz can of whole plum tomatoes
1 12 oz can of diced tomatoes
1/4 cup basil pesto
Parmesan cheese (grated (optional))

Steps:

  • In a stockpot, add olive oil, garlic and onions and cook on medium heat for about 5 minutes.
  • Stir in stock of choice, tomatoes and diced tomatoes.
  • Brig to a boil.
  • Cover pot and simmer for about 15 minutes.
  • In small batches, add the soup to a blender and blend until smooth.
  • Return the soup to pot and add basil pesto and shredded chicken.
  • Simmer for an additional 5-10 minutes.
  • Top with parmesan cheese if desired
  • ENJOY!!

2 cans (14-1/2 ounces each) chicken broth
3 cups cubed cooked chicken
2 cups frozen corn
1 can (10-3/4 ounces) tomato puree
1 can (10 ounces) diced tomatoes and green chiles
1 large onion, finely chopped
2 garlic cloves, minced
1 bay leaf
1 to 2 teaspoons ground cumin
1/2 teaspoon salt
1/2 to 1 teaspoon chili powder
1/8 teaspoon pepper
1/8 teaspoon cayenne pepper
4 white or yellow corn tortillas (6 inches), cut into 1/4-inch strips

Steps:

  • In a 5-qt. slow cooker, combine the first 13 ingredients. Cover and cook on low for 4 hours. , Place the tortilla strips on an ungreased baking sheet. Bake at 375° for 5 minutes; turn. Bake 5 minutes longer. Discard bay leaf from soup. Serve with tortilla strips.

I LOVE chicken along with tomato and basil.....heck I just love tomato with basil! I whipped this up last night and hubby loved it so I thought I would post it. Hope you enjoy!!

2 lbs ground chicken (or what ever ground meat you prefer)
14 ounces mushrooms
1 large red onion, chopped
3 garlic cloves, chopped
1 teaspoon olive oil
salt, to taste
pepper, to taste
1/2 cup marsala wine
3 (14 1/2 ounce) cans diced tomatoes, with juice
4 cups chicken broth
7 large basil leaves, chopped (~ 1 cup)
3 green onions, chopped
1 tablespoon olive oil
2 tablespoons Worcestershire sauce
2 tablespoons hot sauce (or less if you don't want a "bite")
1 tablespoon oregano
1/2 cup parmesan cheese, grated
1 cup mozzarella cheese, shredded
1 cup cooked penne (or your choice of pasta)

Steps:

  • Combine meat, mushrooms, onion, garlic, oil, salt, pepper and wine in a pan and sautee until meat is just about done and veggies are soft.
  • While the meat+ are cooking add the remainder of the ingredients to a crock pot or regular pot.
  • When meat is done, add it to the pot.
  • Cook on low on the stove for 2 hours or high in the crock pot for 4 hours.
  • An hour before the soup is done, cook pasta.
  • When ready to eat, add pasta to soup and garnish with shredded mozz. cheese.
  • ENJOY!

1 Tbsp. minced garlic
1 cup loosely packed fresh basil, chopped
2 cups fat-free reduced-sodium chicken broth
1 can (14.5 oz.) diced tomatoes, undrained
1/2 cup KRAFT Grated Parmesan Cheese

Steps:

  • Heat 1/4 cup dressing in medium saucepan on medium heat. Add chicken; cook 8 to 10 min. or until done. Remove chicken from pan; set aside.
  • Add remaining dressing to saucepan. Add carrots, onions, garlic and 1/4 cup basil; cook and stir 5 min. Stir in chicken broth and tomatoes. Bring to boil; cover. Simmer 10 to 15 min. or until vegetables are tender, stirring occasionally. Remove from heat.

3/4 cup chopped onion
1 garlic clove, minced

2 (28 ounce) cans crushed tomatoes
1 (14.5 ounce) can chicken broth
18 fresh basil leaves, or more to taste, finely chopped
1 teaspoon white sugar
1 cup heavy whipping cream
½ cup butter

Steps:

  • Stir tomatoes and chicken brother together in a large saucepan; bring to a boil, reduce heat to medium-low, and cook at a simmer until slightly reduced, about 10 minutes.
  • Stir basil and sugar into the tomato mixture; reduce heat to low and continue cooking until the basil is wilted, about 5 minutes.
  • Stir cream into the tomato mixture; add butter and continue cooking, stirring occasionally, until the butter is completely melted, 5 to 7 minutes more.

10oz can - condensed tomato soup(campbells or whatever)
26oz - water
5oz - milk
1c - cooking wine(i use chardonay)
1tbsp - olive oil
1 - small stock broccolli
1 1/4c - fresh chopped basil
1 - large chicken breast
1c - rice
1tbsp - butter
1 1/2tbsp - lemonpepper
2tbsp - celery salt
1/2 - clove garlic

Steps:

  • Start the soup, 10oz water, milk, 1/2 clove of garlic(crushed and shredded), 1tbsp celery salt, and 1c chopped basil in crockpot on high or in large pot on medium, stirring occasionally. Cut the small green floral parts off of the broccolli and cut the remains of the stalk into almond size pieces. Add all the cut broccolli to the soup. Cook the rice with the remaining 16oz of water and 1tbsp of butter. Add to soup when cooked. Cut the chicken breast into 4 somewhat flat quadrants and rub with lemonpepper and 1/4c chopped basil. Saute with 1tbsp olive oil and 1c cooking wine. Shred chicken however small you want it and add to soup, along with any remaining wine and juice from the chicken. Cook another 10-15 minutes and serve.
