This classic 7 Layer Bean Dip recipe is the ultimate game day appetizer. It's layered with refried beans, guacamole, sour cream, cheddar cheese and our favorite toppings making for a colorful, delicious, make-ahead dip that everyone loves.

2 16-oz cans Refried Beans
1 ½ cups Salsa
2 tsp Taco Seasoning
1 ½ cups Sour Cream
13 ounces Guacamole
1 cup Shredded Cheddar Cheese (or any cheddar mix)
1 large Tomato (diced)
4 whole Green Onions (thinly sliced)
1 4-oz can Black Olives (sliced)
2 Tablespoons Cilantro (finely chopped for garnish)
1 large Lime (cut into wedges)
Tortilla Chips (for serving)

Steps:

  • In a medium-sized mixing bowl, add the refried beans, taco seasoning, and 1/2 cup of salsa. Mix well and spread into the bottom of a 9x13" baking dish using a spoon or an offset spatula.
  • Next, spread the sour cream evenly over the bean mixture, followed by the guacamole.
  • Spoon the remaining cup of salsa evenly over the guacamole, then sprinkle the shredded cheese, diced tomatoes, green onions, and finally the black olives. Cover and refrigerate until ready to serve.
  • Just before serving, lightly sprinkle with chopped cilantro and squeeze lime juice over the top. Serve with tortilla chips. Enjoy!

At every family gathering, I am asked to make this dish. It's so yummy, it's always the first thing to go. Serve dip with chips or spread onto tortillas. It's great when topped with guacamole!

1 (16 ounce) container sour cream
1 (8 ounce) package cream cheese, softened
1 (1 ounce) package taco seasoning mix
1 pound ground beef
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon garlic powder
1 teaspoon salt
ground black pepper to taste
1 (30 ounce) can refried beans
1 (16 ounce) jar salsa
1 (16 ounce) jar salsa con queso
2 cups shredded Mexican cheese blend
1 plum tomato, chopped
1 (6 ounce) can sliced black olives, drained
3 green onions, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix sour cream, cream cheese, and taco seasoning mix together in a bowl.
  • Heat a large skillet over medium-high heat. Cook and stir beef with the cumin, oregano, garlic powder, salt, and black pepper in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Spread refried beans into the bottom of a 9x13-inch baking dish. Layer ground beef mixture over refried beans, lightly pressing beef into beans; top with sour cream mixture.
  • Stir salsa and salsa con queso together in a bowl; pour over sour cream mixture layer. Spread Mexican cheese blend, tomato, olives, and green onions, respectively, over sour cream mixture layer.
  • Bake in the preheated oven until heated through and bubbling, about 30 minutes.

2 tablespoons olive oil
1 shallot, finely chopped
2 cloves garlic, finely chopped
2 cups black beans, cooked
1 teaspoon ground cumin
1 pinch cayenne pepper
fine sea salt, to taste
freshly ground black pepper, to taste
1 ¼ cups sour cream
½ lime, juiced
fine sea salt, to taste
4 avocados, chopped
½ lime, zested
½ lime, juiced
fine sea salt, to taste
1 ½ cups shredded cheddar cheese
2 cups cherry tomato, chopped
¾ cup black olive, sliced
¾ cup scallion, sliced
1 cup cilantro leaf, whole
tortilla chip, to serve
hot sauce, to serve

Steps:

  • In a large saucepan heat the oil. Add the shallot and garlic and sauté until tender, 3 to 5 minutes.
  • Add the black beans and mash until smooth. Season with ground cumin, cayenne pepper, salt, and black pepper.
  • Spread the bean mixture in an even layer over the bottom of a 9-inch (25-cm) clear glass dish.
  • In a medium bowl, stir together the sour cream and lime juice and season with salt. Spread the sour cream mixture over the bean layer.
  • In another medium bowl, mash together the avocados, lime juice and zest, and season with salt. Spread the avocado mixture over the sour cream layer.
  • Sprinkle with the cheese, tomatoes, olives, scallions, and cilantro. Serve with tortilla chips and hot sauce.

If you are having a party, or attending one, and need to bring a dish, this is the dish to bring. It is cheesy, has lots of meat, and a ton of flavor, and is always a big hit at any party. Serve it with lots of Tortilla chips, Guacomole, sour Cream & Salsa, and they will be asking for the recipe. Each time I take this to a party there is never any left. I made this one for my husbands work party, by his special request. It is best served hot but I have known my neighbors to dig in and eat it cold. You and your guest will not be disappointed with this tasty appetizer, that fills you up.

4 pound(s) ground round or lean ground beef
1 tablespoon(s) cumin
5 clove(s) garlic minced
4 can(s) refried beans (16 oz)
2 can(s) diced tomatoes with green chilies 10 oz. drained
1 large can black olives, drained & chopped
4 package(s) taco seasoning mix
1 pound(s) shredded sharp or mild cheddar cheese
1 pound(s) shredded monterey jack cheese
1 jar(s) medium or mild salsa (1 lb 8 oz.)
- garnish 6 sweet mini peppers assorted colors
ACCOMPANIMENTS
- chopped green onions, jalapeno peppers(optional)
- chunky salsa, sour cream
3-4 package(s) tortilla chips

Steps:

  • PRE HEAT OVEN TO 350 DEGREES F. Spray a 9X15 size baking dish with cooking spray and set aside till needed.
  • Add ground Round to a large pot, add cumin, minced garlic and taco seasoning packets. Cook over medium high heat, and stir as ground beef begins to cook. When completely cooked, drain excess liquid in a colander or strainer. set aside till needed.
  • Next Line prepared dish with 2 cans of the refried beans. I slice mine then place the rounds in the dish and using a spatula, press down on them to bring them together to cover the entire bottom.
  • Next drain 1 can of tomatoes, then sprinkle over the beans. then chop the black olives and add along with tomatoes. Then top that with half of the salsa.
  • Now add a good portion of the cooked ground meat, be generous, then press down on it with hand, so you can top it with shredded cheeses. Repeat till you have used all of the ingredients.
  • Top the top layer with meat, and then add a generous amount of the shredded cheeses. Place the sweet peppers into the casserole, and then bake.
  • Place dish on a large cookie sheet to catch any potential drips while cooking. Then place in oven and bake for 35 to 40 minutes or until cheese is hot and bubbly. Remove from oven and serve while still hot with the accompaniments.

1 (19 ounce) can refried beans
2 teaspoons chopped garlic
2 green onions, finely chopped
1/3 cup salsa (mix with beans)
1 lb cooked ground beef
chili powder
2 -3 tablespoons salsa (mix with meat)
2 cups shredded cheddar cheese
1 cup salsa (as a layer itself)
2 avocados, pitted and peeled
1/4 cup chopped cilantro
3 tablespoons finely chopped red onions
2 tablespoons lime juice
1/2 teaspoon salt
1 cup sour cream
tortilla chips

Steps:

  • In a bowl, mix beans, garlic, gr onions and salsa. Spread on bottom of greased casserole dish or serving dish.
  • Season cooked hamb meat with chili powder and salsa to taste. Layer on top of beans.
  • Sprinkle cheese next as a layer then hot sauce layer.
  • Microwave until piping hot, making sure to cook evenly.
  • Meanwhile, in a bowl mash avocadoes til chunky. Stir in cilantro, red onion, lime juice and salt.
  • Spoon avocado mixture over hot dip mixture and spread sour cream on top. Sprinkle w/remaining green onions. Serve w/chips and hot sauce, if any left.
