0.25 cup dale's Seasoning or dale's Reduced Sodium Blend
2 tbsp salad vinegar (cider vinegar)
0.25 cup lemon juice
1 tbsp honey
2 tsp Dijon mustart
1 tbsp fresh tarragon, basil or oregano, chopped
2 garlic cloves, minced
4 boneless, skinless chicken breast halves

Steps:

  • To begin making Dale's Lemony Herb Chicken first, mix together dale's Seasoning, vinegar, lemon juice, mustard, honey, tarragon and garlic in a medium bowl.
  • Then, place chicken in marinade and turn until well coated.
  • Next, cover and marinate in refrigerator for one hour, or overnight if desired, turning occasionally.
  • Then, remove chicken from refrigerator; discard marinade.
  • Finally, grill chicken over medium heat for 4 to 6 minutes on each side, or until cooked through.

Easy Hawaiian style chicken with a sweet and sour bbq sauce, not much effort at all. Not my original recipe, but I have loved this and have been making it for over 15 years. Thanks to Dale for posting the original.

1 1/2 lb boneless chicken breast
flour, to coat
salt and pepper
cooking oil
8 oz can crushed pineapple, undrained
1 c barbecue sauce
1 Tbsp cornstarch
1/2 tsp ground ginger
1 c pineapple chunks (optional garnish)

Steps:

  • 1. Flatten chicken breast between pieces of wax paper or plastic wrap with a mallet and cut into serving size pieces.
  • 2. Season chicken with salt and black pepper, then dredge in flour, shaking off excess.
  • 3. Heat oil about an inch deep in a large skillet and brown pieces of chicken on both sides and drain.
  • 4. Whisk together the crushed pineapple, bbq sauce, cornstarch and ginger.
  • 5. Place chicken in a clean skillet and cover with sauce. Bring mixture to a boil, then reduce heat, cover and simmer for 25-35 minutes or until chicken is cooked through.
  • 6. Garnish with chinks of pineapple if desired.

1 cup pineapple juice
1/2 cup brown sugar
2 tablespoons soy sauce
2 cloves garlic
1 teaspoon fresh ginger

Steps:

  • Marinate the chicken thighs with the rest of the ingredients for 30 minutes. Place them on the grill over medium heat. Grill thighs until juices run clear.

flour, to coat
salt and pepper
1 teaspoon oil
1 cup crushed pineapple, undrained
1 cup barbecue sauce
1 tablespoon cornstarch
1/2 teaspoon ginger

Steps:

  • Coat chicken with mixture of flour, salt and pepper.
  • Brown in pan, drain.
  • Combine remaining ingredients and pour over chicken in pan.
  • Cover,simmer for one hour.
  • Serve with rice and steamed vegetables.
