Easy and delicious, this rich chocolate pudding recipe is one of our favorite desserts!

Number Of Ingredients 7

1 ⅓ cup sugar
⅔ cup cocoa
⅓ cup cornstarch
pinch salt
4 ½ cups milk
3-4 tablespoons butter
1 teaspoon vanilla

Steps:

  • In a saucepan, combine sugar, cocoa powder, salt, and cornstarch. Mix well. Add in cold milk, whisk until combined.
  • Increase heat to medium, stirring constantly until mixture reaches a boil.
  • Allow mixture to boil for 1 minute while stirring constantly. Remove from heat and stir in butter and vanilla.
  • Allow mixture to cool completely, stirring occasionally to avoid a skin forming on the pudding.
  • Serve chilled or warm.

1 quart heavy cream
1/4 cup powdered sugar
1/2 cup creme fraiche
2 batches Chocolate Pudding (recipe follows)
3 cups crumbled chocolate wafer cookies
Four 1.4-ounce chocolate-covered English toffee bars, such as Heath, chopped
4 egg yolks
1 1/2 cups sugar
4 cups heavy cream
1 teaspoon salt
1 cup unsweetened cocoa
1/3 cup all-purpose flour
1 stick unsalted butter, cubed
1 cup bittersweet chocolate chips

Steps:

  • Death by Chocolate:
  • In a large bowl, whip the heavy cream with the powdered sugar until aerated, just before soft peaks have started to form. Gently fold in the creme fraiche.
  • In a large trifle bowl, place a thick layer of the Chocolate Pudding, top with a layer of the whipped cream mixture and then sprinkle on half of the cookies and half of the toffee candy. Repeat the process, finishing with the cookies and candy. Cover with plastic wrap. Chill for 2 hours and serve.
  • Chocolate Pudding:
  • Whisk the egg yolks and sugar together in a medium bowl. Add the cream and salt and whisk until combined. Mix the cocoa and flour together, and then whisk the wet ingredients into the dry.
  • Place the mixture in a heavy saucepan over medium heat and stir continuously until the mixture comes to a simmer. Remove from the heat and stir in the butter and chocolate until melted. Let cool.

A rich, silky homemade chocolate pudding made the same way in our family since the 50's. Cooled pudding will form a dark skin on top, which is our favorite part! Top with whipped cream, if desired.

⅓ cup white sugar
⅓ cup unsweetened cocoa powder
3 tablespoons cornstarch
¼ teaspoon salt
2 ½ cups milk
1 ½ teaspoons vanilla extract

Steps:

  • Sift and whisk sugar, cocoa powder, cornstarch, and salt together in a saucepan.
  • Heat saucepan over medium heat. Pour milk in slowly, whisking constantly until incorporated. Cook, stirring often with a metal spoon, until pudding is noticeably thicker and clings to the spoon, about 10 minutes.
  • Remove from heat and stir in vanilla extract. Divide between 4 small bowls and serve immediately, or chill in the refrigerator for at least 2 hours.

4 tablespoons cornstarch (slightly heaping)
2 tablespoons cocoa (heaping)
1 pinch salt
1 teaspoon vanilla extract
2 cups milk (I use 1%)

  • -Combine all dry ingredients until all lumps are gone and blended well.
  • -Add milk and place on burner turned to high -- stir constantly until desired thickness.

2 3/4 cups milk
2/3 cup sugar
1/4 cup cornstarch
3 tablespoons cocoa
1/8 teaspoon salt
2 tablespoons butter
2 teaspoons vanilla extract

Steps:

  • Place milk in medium sauce pan and begin to heat.
  • Mix together dry ingrediants; gradually whisk into milk and bring to a gentle boil.
  • Stir butter and vanilla; simmer and stir constantly for 20-30 minutes. There may be some small lumps, but they are tasty lumps!
  • Pour immediately into individual serving bowls and enjoy while still warm.
  • Pour left overs into an ice cube tray or popsicle molds for a frozen treat later on.
