CLASSIC MEATLOAF RECIPE

This Classic Meatloaf recipe was my dad's claim to fame, at least in our house! It's tender and juicy and has a uniquely delicious flavor. The brown sugar and ketchup glaze just puts this meatloaf over the top!

2 pounds ground beef (85/15)
1/2 cup minced onion
2 eggs
1/2 cup ketchup
1 tablespoon Worcestershire
1 cup crushed crackers (quick cook oats or breadcrumbs)
2 teaspoons Porterhouse seasoning
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked black pepper
1/2 cup ketchup
2 tablespoons brown sugar
2 teaspoons yellow mustard

Steps:

  • Preheat oven to 350 degrees F. Spray a 9"x5" loaf pan with nonstick cooking spray.
  • Combine meatloaf ingredients in a large bowl using your hands, just until combined. Do not overmix - The less you mess with it, the better it will be!
  • Shape into a loaf and place into a loaf pan.
  • In a small bowl combine 1/2 cup ketchup, brown sugar and mustard. Brush about 1/3 of the mixture over the top of the meatloaf.
  • Bake in the preheated oven for 45 minutes, then pour remaining sauce over the meatloaf. Return to the oven and bake for an additional 15-25 minutes or until meatloaf is completely cooked through. Meat should register between 155 and 160 degrees F.
  • Let stand for 5-10 minutes before slicing and serving. Garnish with parsley if desired.

Extra-virgin olive oil
1 onion, finely diced
2 garlic cloves, minced
2 bay leaves
2 red bell peppers, cored, seeded, and finely diced
2 tomatoes, halved, seeded, and finely diced
1/4 cup chopped fresh flat-leaf parsley
1 (12-ounce) bottle ketchup
1 tablespoon Worcestershire sauce
Sea salt and freshly ground black pepper
3 slices white bread, crusts removed, torn into chunks by hand
1/4 cup whole milk
1 1/2 pounds ground beef
1 pound ground pork
2 eggs
Leaves from 2 fresh thyme sprigs
Salt and freshly ground black pepper
3 to 4 bacon slices

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.
  • Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.
  • This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small "hamburger" patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.
  • Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.
  • Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!

My Dad made this meatloaf at least once a month and it was always my favorite dish. Even my meatloaf hating husband loves it! Sure to be a hit with both the meatloaf lovers and haters alike!

1 1/2 lbs hamburger
2/3 cup dry breadcrumbs
1 cup tomato juice
2 eggs (beat)
1/8 teaspoon pepper
1 teaspoon salt
1/4 cup onion (chopped)
3 tablespoons brown sugar
1/4 cup ketchup
1 teaspoon dry mustard

Steps:

  • Mix hamburger, bread and juice together until well blended.
  • Add eggs, pepper, salt and onion and mix together until well blended.
  • Cook in loaf pan for 1 hour at 350°.
  • Mix together brown sugar, ketchup and dry mustard.
  • Place on top of meatloaf after 1 hour and cook for another 30 minutes.

2 lb ground turkey breast or ground lean beaf
1-1/2 c italian-style bread crumbs
2 eggs
1/2 c water
2/3 c ketchup, divided
1/2 tsp each, salt & pepper
1/2 tsp garlic powder
1/2 c all purpose flour
2 eggs
1-1/2 c panko bread crumbs
1/2 tsp each, salt & pepper
1 c canola oil

Steps:

  • 1. Heat oven to 350. Spray a 9" x 13" baking pan w/ cooking spray. In lg bowl, combine ground turkey, or beef, italian bread crumbs, 2 eggs, water and ketchup, except reserve 1/3 cup ketchup.
  • 2. Add 1/2 tsp salt and pepper and garlic powder. Mix well w/ hands and place on baking sheet. Shape into a lg loaf. Spread reserved ketchup over loaf. Bake for 1 hr. Cool 2 hrs.
  • 3. When cool, slice meatloaf into 3/4" slices. Place flour in a shallow bowl. Place eggs in another shallow bowl and lightly beat. Place panko crumbs in another shallow bowl. Add 1/2 tsp salt and pepper to panko crumbs and mix. Coat each slice of meatloaf in flour, then eggs, then panko crumb mix. Heat oil in lg skillet over med-high heat. Fry meatloaf slices in oil 2 mins on each side. Drain on paper towels.

1 1/2 pounds ground beef
1 1/2 pounds ground pork
3/4 cup grated carrots
1/2 cup chopped shallots
1/2 cup grated pecorino cheese
2 cups (1/2-inch-diced) bread cubes, such as crusty sourdough
2 tablespoons fresh thyme leaves
2 large eggs
1/2 cup whole milk
2 teaspoons kosher salt
6 to 8 twists of a pepper grinder
1/2 cup packed light brown sugar
3/4 cup ketchup
1 tablespoon Dijon mustard

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large bowl, add all meatloaf ingredients and mix with your hands until combined. Do NOT overmix it! Divide the mixture between two 9 x 5-inch loaf pans and set aside.
  • For the glaze, in a medium bowl, stir together the sugar, ketchup, and mustard. Brush the top of each meatloaf with a thick coat of the glaze. Transfer to the oven and bake until an instant-read thermometer inserted in the middle registers 150 degrees F, about 45 minutes.
  • Let the meatloaves rest for 10 to 15 minutes, unmold, cut into slices, and serve.

8 ounces ground pork
2 eggs
4 ounces fresh bread crumbs
2 ounces chopped garlic
1/4 cup olive oil
3 ounces chopped parsley
1/2 cup tomato relish, recipe follows
4 large tomatoes
3 red peppers
2 onions
4 ounces ketchup

Steps:

  • Meatloaf:
  • In a large mixing bowl combine beef, pork, eggs, bread crumbs, garlic and tomato relish. Finish with olive oil, and then pack into a 9-inch loaf pan and place in the middle of a preheated 350 degree oven. Bake for 35 to 40 minutes or until the center of the meat loaf reaches 170 degrees.
  • Finish the meat loaf with remaining tomato relish and broil at 500 degrees until tomato relish begins to crust. Allow meatloaf to cool before slicing.
  • Chop tomatoes, peppers, and onions into a medium dice. Saute over high heat. Finish with ketchup. Lower heat. Reduce to a simmer.

DAD'S MEATLOAF

This is the meatloaf that I grew up on, and is pretty much the only meatloaf my friends and I will eat. Our family believes that less is more when making meatloaf so there is nothing strange in it that anybody would object to, unless they just do not like beef. The onion powder is for children and people who say that they don't like onions because of the texture. However, if you actually like onions feel free to substitute real onions chopped fine.

3 lbs ground beef
1 (12 ounce) can tomato paste
3 eggs
1 cup oatmeal
1/8 cup onion powder
salt and pepper
ketchup

Steps:

  • Preheat oven to 350°F.
  • Combine all of the ingredients except for the ketchup. It is easiest to just mix it up with your hands.
  • Form into two loaves.
  • Spread ketchup over the top of each loaf, and wrap each in foil sealing the foil tightly without squishing the meatloaf. Note: Sealing the foil slows the cooking time, which is why it takes so long to cook, but it also keeps the meat from drying out.
  • Line a baking pan with foil, and place the foil wrapped loaves in it.
  • Bake for 1 hour 45 minutes.
  • Poke holes in the foil that is wrapped around the meatloaf and let any grease drain out into the pan while baking another 15 minutes.

A slight variation on Tyler Florence's "Dad's Meatloaf." After my sister raved about it, I tried my hand at it and it was a hit. This is a healthier version with less fat and one less egg yolk.

1/2 lb lean ground beef
1/2 lb ground veal
1/2 lb ground lean pork
1 egg
1 egg white
4 ounces fresh whole wheat bread crumbs
3 garlic cloves, chopped
2 tablespoons olive oil
1 ounce dried parsley
4 large tomatoes
3 red peppers
2 onions
4 ounces ketchup

Steps:

  • For the tomato relish, chop tomatoes, peppers, and onions into a medium dice. Saute over high heat. Finish with ketchup. Lower heat. Reduce to a simmer.
  • For the Meatloaf, in a large mixing bowl, using a fork, combine 1/2 cup of the tomato relish, the ground meats, egg and egg white, bread crumbs, garlic and skim milk.
  • Finish with olive oil, and then lightly pack into a 9-inch loaf pan.
  • Cover with half the remaining relish and place in the middle of a preheated 350 degree oven.
  • Bake for 45 minutes to one hour or until the center of the meat loaf reaches 170 degrees.
  • Allow meatloaf to cool 15 minutes before slicing.
  • Serve with additional relish.
