DAD'S BREAKFAST POTATOES

The kids love these potatoes and eat every bite!

6 medium russet potatoes
1/2 c vegetable oil
salt

Steps:

  • 1. Wash and slice potatoes into 1/3 inch cubes.
  • 2. Soak potatoes in water for a half hour while you heat 1/2 cup (or if bigger pan 1/2 inch) of oil in a cast iron skillet. (Note: Soaking the potatoes is important to get the starch out so they will crisp up nicely!)
  • 3. Drain and pat dry potatoes with a paper towel.
  • 4. Fry potatoes in pan turning occasionally until golden brown.
  • 5. Place cooked potatoes on a paper towel lined plate. Be sure to salt potatoes while still hot. Enjoy!

1 (16 ounce) package bulk pork sausage
3 cups frozen hash brown potatoes, thawed
¼ cup milk, or as needed
1 (16 ounce) can refrigerated buttermilk biscuit dough (such as Pillsbury Grands!®)
1 ½ cups shredded Mexican cheese blend
5 eggs

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat a large skillet over medium-high heat and stir in the sausage. Cook and stir until the sausage is crumbly, evenly browned, and no longer pink, about 5 minutes. Drain and discard any excess grease. Stir in the hash brown potatoes, cooking and stirring until potatoes are browned, about 5 minutes more.
  • Line the bottom of the prepared baking dish with a layer of buttermilk biscuits, splitting the biscuits in half to completely cover the dish. Spread the sausage and hash brown mixture evenly over the biscuits, and sprinkle the Mexican cheese on top. Whisk together the eggs and milk in a bowl, and pour over the cheese.
  • Bake in the preheated oven until the eggs set, about 25 minutes.

3 tablespoons olive oil
5 medium red potatoes, peeled and sliced
4 slices cooked bacon, crumbled
1 teaspoon salt
¾ teaspoon ground paprika
¼ teaspoon ground black pepper

Steps:

  • Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add potatoes. Add bacon crumbles, remaining olive oil, salt, paprika, and pepper. Cook, stirring occasionally, until potatoes are tender and browned, about 20 minutes. Serve hot.

2 medium potatoes, peeled and sliced
1/4 cup sliced onion
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon garlic salt
1/4 cup shredded cheddar cheese

Steps:

  • Coat a 9-in. microwave-safe plate with cooking spray. Arrange potato and onion slices on plate; sprinkle with seasonings. Cover and microwave on high for 9-10 minutes or until potatoes are tender, adding cheese in the last 30 seconds of cooking.
