DAD'S JERKY MARINADE
My dad has been making beef jerky for about as long as I can remember. He started on an outdoor smoker before graduating to an indoor dehydrator. He has gotten my husband addicted to it. You can use any type of meat that you like. I usually look for large inexpensive roasts with as little fat and marbling as possible.

Steps:
- Stir together soy sauce, Worcestershire sauce, liquid smoke, and hot pepper sauce in a bowl. Season with garlic powder, onion powder, pepper, and sugar; stir until mixed.
- To use, toss one pound of thinly sliced meat with the marinade until well coated. Place into a resealable plastic bag, and squeeze out the air. Marinate in the refrigerator for 48 hours, mixing twice. Remove meat from marinade, and discard excess marinade. Prepare jerky according to the manufacturer's directions of your smoker or dehydrator.

DAD'S BEST MARINADE
My dad has been making this for as long as I remember. He usually marinated a chuck roast or flank steak. We love it and I have used it on pork and chicken too. We like to marinate the cubed meat for kebabs and throw on some pineapple. I have also used pineapple juice in place of the water in this recipe and chopped fresh ginger is a good addition. We usually grill our meat for this recipe. I hope you enjoy! This works great on venision too!

Steps:
- Place ingredients in a small saucepan.
- Bring to a boil over med heat, stirring to dissolve sugar.
- Remove from heat and let cool.
- Pour cooled marinade over meat and let marinate in fridge at least 4 hours up to 48 hours.
- Best on the grill!

DAD'S HAWAIIAN-STYLE BEEF SHORT RIBS
Steps:
- In a large resealable bag, combine the ginger, half of the green onions, the garlic, jalapeno, orange zest and juice, teriyaki sauce and short ribs. Swirl around a few times to cover the ribs in the marinade. Marinate for at least 3 hours and up to overnight in the refrigerator. Midway thru, swirl the ribs again to ensure the marinade covers all.
- Prepare a grill for medium-high heat. Remove the ribs from the marinade and shake off any excess liquid; reserve the remaining marinade for the sauce. Grill the ribs until well caramelized and cooked to desired doneness, 5 to 7 per side. Remove to a serving platter.
- Meanwhile, pour the marinade from the bag into a saucepan. Bring to a rapid boil over high heat and boil until reduced by half, at least 5 minutes.
- Pour the sauce over the grilled ribs. Sprinkle with the remaining green onions, and garnish with sesame seeds and orange slices. Serve with kimchi.
DAD'S LEMONY GRILLED CHICKEN

- In a small bowl, whisk the first 5 ingredients until blended; stir in onions. Pour 1-1/2 cups marinade into a large shallow dish. Add chicken and turn to coat. Cover; refrigerate overnight. Cover and refrigerate remaining marinade., Prepare grill for indirect heat. Drain chicken, discarding marinade in dish. Place chicken on grill rack, skin side up. Grill, covered, over indirect medium heat 15 minutes. Turn; grill until a thermometer reads 170°-175°, 15-20 minutes longer, basting occasionally with reserved marinade.

My dad always marinated steak in this marinade and was always a favorite of the family. I lost track of it and while I was digging through some old recipes I came across it. It's from Lawry's. It's also great to marinade pork chops.
