3/4 cup packed brown sugar
2 tablespoons mesquite seasoning
4-1/2 teaspoons garlic powder
4-1/2 teaspoons paprika
1 tablespoon dried minced onion
1 tablespoon seasoned salt
1 tablespoon ground cinnamon
1 tablespoon ground cumin
1 tablespoon pepper
1 teaspoon salt
8 pounds pork spareribs, cut into serving size pieces
3-1/2 cups barbecue sauce

Steps:

  • In a small bowl, combine the first 10 ingredients. Rub over ribs; cover and refrigerate overnight., Place ribs bone side down on a rack in a shallow roasting pan. Cover and bake at 350° for 1 hour; drain. Brush some of the barbecue sauce over ribs. Bake, uncovered, for 30-45 minutes or until tender, basting occasionally with barbecue sauce.

My father was the cook in the family. Any time we would go out to eat, he would come home and try to make a copy cat version. This is his barbecue sauce. I have never purchased any in the store because none of it comes close to this flavor. Don't let the long list of ingredients scare you. They are standard pantry items. It's easy to double the ingredients so you will have some always on tap!

2 teaspoons bacon fat or 2 teaspoons peanut oil
1 medium shallot, chopped fine
2 teaspoons soy sauce
4 teaspoons Worcestershire sauce
2 cups catsup
water
1/4 teaspoon black pepper
1 teaspoon lemon juice
1 teaspoon yellow mustard
3 -4 dashes garlic salt
3 -4 dashes lemon pepper
3 -4 dashes seasoning salt
3 -4 dashes paprika
2 teaspoons wine vinegar
10 dashes Tabasco sauce
2 teaspoons sweetened bread and butter pickle juice
2 teaspoons pickle juice

Steps:

  • In large pot, saute shallot in bacon fat till it turns glassy.
  • With heat on medium, add remaining ingredients.
  • Simmer til sauce bubbles. If necessary, add water to thin sauce to your desired consistency.
  • Pour up, refrigerate and enjoy!
  • This is excellent on chicken for the grill.

DAD'S HAWAIIAN-STYLE BEEF SHORT RIBS

One 4-inch piece fresh ginger, cut into matchsticks
4 green onions, chopped
2 cloves garlic, chopped
1 jalapeno, seeded and chopped
1 orange, zested and juiced, plus orange slices, for serving
One 10-ounce bottle teriyaki sauce
2 pounds Korean-style short ribs (beef chuck flanken cut into 1/3- to 1/2-inch-thick slices across the bones)
Toasted sesame seeds, for garnish
Kimchi, for serving

Steps:

  • In a large resealable bag, combine the ginger, half of the green onions, the garlic, jalapeno, orange zest and juice, teriyaki sauce and short ribs. Swirl around a few times to cover the ribs in the marinade. Marinate for at least 3 hours and up to overnight in the refrigerator. Midway thru, swirl the ribs again to ensure the marinade covers all.
  • Prepare a grill for medium-high heat. Remove the ribs from the marinade and shake off any excess liquid; reserve the remaining marinade for the sauce. Grill the ribs until well caramelized and cooked to desired doneness, 5 to 7 per side. Remove to a serving platter.
  • Meanwhile, pour the marinade from the bag into a saucepan. Bring to a rapid boil over high heat and boil until reduced by half, at least 5 minutes.
  • Pour the sauce over the grilled ribs. Sprinkle with the remaining green onions, and garnish with sesame seeds and orange slices. Serve with kimchi.

1 large egg, lightly beaten
1/2 cup stuffing mix, crushed
3 tablespoons 2% milk
2 tablespoons grated Parmesan cheese
1 tablespoon plus 1/4 cup barbecue sauce, divided
1 pound ground beef

Steps:

  • Preheat oven to 425°. In a large bowl, combine egg, stuffing mix, milk, cheese and 1 tablespoon barbecue sauce. Add beef; mix lightly but thoroughly. Shape into four 4x2-in. loaves in a foil-lined 15x10x1-in. baking pan., Bake until a thermometer reads 160°, 15-20 minutes. Spread with remaining barbecue sauce before serving. Freeze option: Individually wrap cooled meat loaves in plastic and foil, then freeze. To use, partially thaw meat loaves in refrigerator overnight. Unwrap loaves; reheat in a greased 15x10x1-in. baking pan in a preheated 350° oven until loaves are heated through and a thermometer inserted in center reads 165°. Top each with 1 tablespoon barbecue sauce before serving.

DAD'S BEST MARINADE



Dad's Best Marinade image

My dad has been making this for as long as I remember. He usually marinated a chuck roast or flank steak. We love it and I have used it on pork and chicken too. We like to marinate the cubed meat for kebabs and throw on some pineapple. I have also used pineapple juice in place of the water in this recipe and chopped fresh ginger is a good addition. We usually grill our meat for this recipe. I hope you enjoy! This works great on venision too!

1 cup soy sauce
1/2 cup water
1/4 cup vinegar (cider or rice wine vinegar work well)
1/4-1/2 cup brown sugar (I use 1/2 but I like it carmelized on the outside of the meat)
2 cloves chopped garlic
1 teaspoon crushed red pepper flakes (optional)
1/2 cup canola oil

Steps:

  • Place ingredients in a small saucepan.
  • Bring to a boil over med heat, stirring to dissolve sugar.
  • Remove from heat and let cool.
  • Pour cooled marinade over meat and let marinate in fridge at least 4 hours up to 48 hours.
  • Best on the grill!
