Southern-Style Macaroni & Cheese image

The BEST baked Macaroni & Cheese EVER. A custard-style recipe for baked southern Mac & Cheese using eggs and evaporated milk.

1 pound elbow macaroni noodles
24 ounces cheddar cheese, shredded
3 12-oz cans evaporated milk
3 eggs
1 1/2 teaspoons salt
1 teaspoon pepper
1 teaspoon dry mustard powder
Pinch of cayenne pepper
1/2 stick (1/4 cup) butter

Steps:

  • Cook noodles in liberally salted water one minute less than the package instructions for al dente preparation. Drain noodles then set aside.
  • While noodles are cooking, shred cheese, reserving two cups of cheese for the top layer.
  • Combine evaporated milk, eggs, salt, pepper, mustard powder and cayenne pepper in a large bowl and mix thoroughly (make sure the eggs are well combined into the mixture).
  • Spray a 3-quart 13x9 baking dish with cooking spray.
  • Layer noodles and cheese evenly into baking dish (aim for about 4 layers of noodles.
  • Sprinkle reserved 2 cups of cheese evenly over everything then pour milk mixture evenly over noodles and cheese.
  • Cut butter into thin pats then place them evenly on top of cheese.
  • Bake, uncovered for 40-45 minutes at 350 degrees or until cheese is lightly browned and dish is bubbly.
  • Remove from oven then let rest 20-25 minutes before serving. Don't skip this step... if you dig into this right out of the oven the inside will be soupy. The dish needs time to "set up".

1 package (16 oz) elbow macaroni
4 eggs, slightly beaten
4 cups milk
1 teaspoon salt
1 teaspoon ground mustard
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground red pepper (cayenne)
5 cups shredded sharp Cheddar cheese (20 oz)
1 1/2 cups soft bread crumbs (about 2 slices bread)
1/4 cup butter or margarine, melted

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain macaroni as directed on package, using minimum cook time.
  • In large bowl, stir eggs, milk, salt, mustard, black pepper, red pepper and 2 cups of the cheese with wire whisk until blended. In baking dish, place half of the cooked macaroni. Sprinkle with 2 cups cheese. Top with remaining macaroni. Pour egg mixture evenly over all.
  • Cover; bake 35 minutes. Uncover. Sprinkle with bread crumbs; drizzle with melted butter. Sprinkle with remaining 1 cup cheese. Bake 5 to 8 minutes longer or until golden brown and set.

1/2 lb macaroni
1 tablespoon butter
1 egg, beaten
1 teaspoon dry mustard
3 cups grated sharp cheddar cheese
1 cup milk

Steps:

  • Cook macaroni in water until tender.
  • Drain thoroughly.
  • Stir in butter and egg.
  • Mix mustard and salt with 1 Tbsp. HOT water, and add to milk.
  • Add cheese (saving some for top) to milk.
  • Pour macaroni into a buttered casserole and add milk/cheese mixture.
  • Sprinkle top with reserved cheese.
  • Bake at 350º for approx. 40 minutes, or until custard is set and top is crusty.

Ingredients:
1 1/2 cups macaroni
2 teaspoons salt
3 large eggs
1 1/2 cups skim or low fat milk
1 teaspoon salt
1/2 teaspoon paprika
2 cups shredded Cheddar cheese, divided
1/4 cup cracker crumbs
Preparation:

Steps:

  • Cook the macaroni in a large pot of salted water, following package directions. Cook until tender. Rinse in cold water and drain well. Preheat the oven to 325° F. Grease a 10x7x2-inch casserole dish. In a mixing bowl, whisk together the eggs, milk, salt, and paprika. In the casserole dish, layer the cooked macaroni with 1 1/2 cups of the cheese; pour milk and egg mixture over all. Bake the casserole for 40 to 45 minutes, or until set in the center. In a small mixing bowl, combine remaining shredded cheese and crumbs. Spread over the casserole, then put under broiler to brown. Serves 4.

Kosher salt
1 pound macaroni
3 cups whole milk
4 eggs
3/4 pound yellow Cheddar, grated (about 4 cups)

Steps:

  • Preheat the oven to 350 degrees F. Butter a 3-quart casserole dish.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook until tender, about 7 minutes; strain well. Transfer the macaroni to a large bowl, add the butter and toss to coat.

This is my mother in law's recipe. She's from KY where Mac and Cheese is considered a staple on the kitchen table. It's custard style so that when cooled can be cut into squares. It's hers and now my most requested dish for potlucks. So easy with only 4 ingredients. Hope you enjoy it!

4 1/2 c milk
32 oz block sharp cheddar cheese cut into chunks
8 eggs
16 oz cooked macaroni
salt and pepper to taste

Steps:

  • 1. Cook macaroni according to directions. Drain and set aside. In a bowl, whisk eggs and then add milk. Add salt and pepper to taste. Stir thoroughly. Place egg mixture in a large greased baking dish. Add cooked macaroni and stir thoroughly. Add cheese chunks and again stir thoroughly so that everything is evenly distributed. Place in a 350* oven and bake for 55 min. or until the top is a golden brown. Try to let rest for 15 min. before cutting into it.

1 cup cottage cheese (not low-fat)
2 cups milk (not skim)

Pinch of ground nutmeg
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 pound sharp or extra-sharp Cheddar, grated
1/2 pound elbow pasta, uncooked

Steps:

  • Heat oven to 375 degrees and position an oven rack in upper third of oven. Use 1 tablespoon butter to grease a 9-inch round or square baking pan.
  • In a blender, purée cottage cheese, milk, mustard, cayenne, nutmeg and salt and pepper. Reserve 1/4 cup grated Cheddar for topping. In a large bowl, combine remaining grated Cheddar, milk mixture and uncooked pasta. Pour into prepared pan, cover tightly with foil and bake 30 minutes.
  • Uncover pan, stir gently, sprinkle with reserved cheese and dot with remaining tablespoon butter. Bake, uncovered, 30 minutes more, until browned. Let cool at least 15 minutes before serving.
