This is a nice deli sandwich that is easy to prepare, and is perfect for anyone who is a curry seasoning fan.

4 skinless, boneless chicken breast halves
1 tablespoon peanut oil
1 teaspoon curry powder
4 plain croissants, split in half
4 tablespoons chutney
4 tablespoons mayonnaise
lettuce
tomato slices
red onion slices
salt and pepper to taste

Steps:

  • In a skillet over medium heat, add the curry powder and stir a few seconds until it becomes fragrant. Stir in the oil. Cook the chicken in the seasoned oil for about 5 to 8 minutes on each side, or until done.
  • Spread chutney sauce on one side of each croissant, and the mayonnaise on the other side. Cut the cooked chicken to fit the croissants (I cut them into slices), and layer with lettuce, tomatoes, and red onion. Sprinkle with a little salt and pepper, and serve.

Number Of Ingredients 10

2-1/2 cups cubed cooked chicken
1/2 cup chopped walnuts
1/3 cup finely chopped celery
2 tablespoons grated onion
1/2 cup mayonnaise
2 tablespoons sour cream
3/4 teaspoon curry powder
1/8 teaspoon Cajun seasoning
Lettuce leaves
4 to 6 croissants, split

Steps:

  • In a food processor, cover and process chicken until finely chopped. Transfer to a large bowl; add the walnuts, celery and onion. , In a small bowl, combine the mayonnaise, sour cream, curry powder and Cajun seasoning. Pour over chicken mixture; toss to coat. Cover and refrigerate for at least 1 hour. Place lettuce and about 3/4 cup chicken mixture on each croissant.

These croissant sandwiches are heavenly. They make a great entree for a luncheon. I've served them at a bridal shower and everyone requested the recipe. I cut back on the amount of curry powder -- but that's just personal preference. If you are a big curry powder fan, then you will probably want to add the amount listed in the recipe.

2 tablespoons onions, grated
1/2 cup mayonnaise
2 tablespoons sour cream
3/4 teaspoon curry powder (I use only 1/4 teaspoon)
1/8 teaspoon cajun seasoning
lettuce leaf
4 -6 plain croissants, split

Steps:

  • In food processor or blender, process chicken until finely chopped. Transfer to a large bowl, add walnuts, celery and onion.
  • In a small bowl, combine mayonnaise, sour cream, curry powder, and Cajun seasoning. Mix well.
  • Pour over the chicken mixture and stir well. Refrigerate for at least an hour.
  • Place lettuce leaf and about 3/4 cup of the chicken mixture on each croissant.
  • Note: It is personal preference as to how finely chopped the chicken is.
  • If you use the little mini-croissants, these make a nice addition as an appetizer.
