If you love quick lunches, you're going to adore this easy Curried Tuna Salad! Made with canned tuna, Greek yogurt, cilantro, and curry powder, it's full of flavor and comes together in about 5 minutes.

10 oz. tuna ((2 5 oz. cans); in water, drained)
1/3 cup Greek yogurt
2 tbsp shallot (minced)
2 tbsp cilantro (chopped)
2 tbsp golden raisins
1 tsp curry powder
1 tsp lime juice
1 scallion (chopped)
salt and pepper to taste

Steps:

  • Drain the water from both cans of tuna, then use a fork to transfer the tuna into a small bowl.
  • In a large bowl, stir the yogurt, shallot, cilantro, raisins, curry powder, lime juice, and scallion together. Then, add the tuna to that bowl and stir to combine. Add salt and pepper to taste.
  • Enjoy on a salad, sandwich or a lettuce wrap!

1 can (5 ounces) light water-packed tuna, drained
1/4 cup reduced-fat mayonnaise
1 tablespoon grated Parmesan cheese
1 tablespoon sweet pickle relish
1 tablespoon minced fresh parsley
1 teaspoon spicy brown mustard
1/4 teaspoon dill weed
1/8 teaspoon onion powder
1/8 teaspoon curry powder
1/8 teaspoon garlic powder
4 slices whole wheat bread

  • In a small bowl, combine the first 10 ingredients. Spread over two slices of bread. Top with remaining bread.

Two 6 ounce cans white meat tuna packed in water, drained
3 tablespoons minced red onion, soaked in cold water for 5 minutes, drained
1 tablespoon finely chopped fresh coriander (cilantro)
1 tablespoon golden raisins, plumped in 2 tablespoons warm water for 10 minutes, drained
2 teaspoons vegetable oil, like soy, peanut, or corn
2 teaspoons Madras-style curry powder
6 tablespoons mayonnaise
Kosher salt and freshly ground black pepper
1/2 teaspoon freshly squeezed lime juice plus more to taste
Serving suggestions: 2 cups mixed lettuces or 3 to 4 pita breads

Steps:

  • In a mixing bowl break the tuna up with a fork. Toss with the onion, fresh coriander, and raisins.
  • In a small saute pan, heat the oil over medium heat, add the curry powder, and stir until fragrant, about 30 seconds. Remove pan from the heat and set oil aside to cool.
  • Add the curry oil to the mayonnaise, season with salt, and pepper to taste and add the lime juice. Gently mix the tuna with the seasoned mayonnaise. Serve on a bed of lettuce or in a sandwich.
  • Yield: 3 to 4 servings

1 tbsp curry powder (more to taste)
1 tbsp mango chutney (more to taste)
1/2 tsp salt
1/4 tsp pepper
15 oz. canned tuna (drained)
1/3 cup red grapes, chopped
1/4 cup celery, diced
1/4 cup carrots, diced
2 tbsp green onions, chopped

Steps:

  • Mix together the mayonnaise, Greek yogurt, curry powder, mango chutney, salt, and pepper. Taste and add more curry powder as needed.
  • Stir in the tuna. Then fold in the grapes, celery, carrots, and green onions.
  • Refrigerate for one hour or more before serving if possible.

APPLE PECAN TUNA SALAD

I grew up eating tuna salad made with sour pickles, onions, and mayonnaise. When I married, my m-in-law made a delicious tuna salad with apples as one of the main ingredients. I LOVED it and began to use that recipe. My husband likes pecans (Texas' state nut) in everything, so I always add a handful, but they are optional. It's better to begin with the chopped apple so you can sprinkle lemon juice over the pieces to keep them from turning brown. I also prefer unpeeled apples. I am saying this makes 6 servings because we like THIN sandwiches. I also sometimes make my sandwich ingredients the night before because allowing to set a while makes the flavors blend.

1 small granny smith apple, unpeeled cored and chopped
1 tablespoon lemon juice (or however much needed to coat apple pieces)
1 (5 ounce) can tuna fish, drained (do not use foil packaged, too fishy)
2 celery ribs, cleaned and chopped
1 tablespoon onion, grated (sweet kind is best)
5 tablespoons mayonnaise (we like the flavor and texture of "Real" better than "Lite")
1/4 cup pecans, coarsely chopped (optional)
1 pinch sugar, to taste
1 pinch salt, to taste
12 slices whole wheat bread, sandwich sliced

Steps:

  • Chop unpeeled Granny Smith (or any tart, crunchy apple -- Fuji and Gala are also good).
  • Sprinkle lemon juice (fresh or bottled) over apples and toss to coat evenly.
  • Add drained tuna fish and flake, mixing with apples.
  • Add celery, onion, and mayonnaise. Amount of mayonnaise may be adjusted according to texture preference. More crumbly (less mayonnaise) is better to eat with a fork on a lettuce leaf. More "pastey" texture is better for sandwiches.
  • Taste, and add a pinch of sugar and salt if needed. (Some apples require a tiny bit of sugar).

1/2 cup fat-free mayonnaise or salad dressing
1 1/2 teaspoons sugar
1 teaspoon curry powder
1 can (8 ounces) sliced water chestnut, drained and cut into slivers
1/4 cup chopped celery
1 can (8 ounces) pineapple tidbit, drained
1/2 cup chopped bell pepper
1 small onion, finely chopped (1/4 cup)
4 slices reduced-calorie whole wheat bread, toasted and cut diagonally in half
2 medium unpeeled eating apples, sliced
2 tablespoons , chopped pecans, , toasted
