Number Of Ingredients 7

2 lb boiled potatoes cooled and sliced
1 medium yellow onion chopped
3 Tbsp olive oil, extra virgin plus extra as needed
1/2 tsp salt
1 tsp curry powder
3 eggs whisked
salt and pepper to taste

Steps:

  • 1. Heat 1 tablespoon of the olive oil in a skillet over medium high heat. When the oil is hot but not smoking add the onions and cook until soft and beginning to brown. Transfer to a bowl.
  • 2. Add 2 tablespoons of olive oil to the skillet and when hot add the potatoes and the salt. Cook until they are browned on all sides. Be careful not to turn too often or the potatoes will break apart.
  • 3. Add more oil as needed to ensure a crispy finish. Add the onions to the potatoes and gently stir in the curry powder.
  • 4. Pour the eggs over the potatoes and cook for another 2 minutes until the eggs are set. Gently flip the potatoes and cook for another minute. Add salt and pepper to taste. Serve immediately.

A "Company's Coming" recipe. This is a versatile meat sauce, you can use more or less curry to your liking. Makes a good, quick meat sauce.

1 tablespoon oil
2 lbs lean ground beef
3/4 cup chopped onion
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon ground sage
3 tablespoons all-purpose flour
2 cups milk
1 teaspoon curry powder

Steps:

  • Combine oil, ground beef, and onion in frying pan.
  • Brown, stirring frequentlty to break up.
  • Sprinkle with salt, pepper, and sage.
  • Stir in flour until well mixed with beef mixture.
  • Add milk all at once.
  • Stir as mixture boils and thickens.
  • Stir in curry powder.
  • Add more liquid if needed, especially if reheating.
  • Serve with rice or oodles of noodles.

1 tablespoon butter
2 cups diced white potatoes
salt and pepper to taste
2 tablespoons minced red onion
2 tablespoons chopped fresh cilantro
1 tablespoon chopped green onion
½ teaspoon curry powder

Steps:

  • Melt the butter in a large skillet over medium heat; cook and stir the potatoes in the butter until browned, about 10 minutes; season with salt and pepper. Add the onion and cook until the potatoes are tender, another 3 to 5 minutes. Reduce heat to low. Stir in the cilantro, green onion, and curry powder; mix and cook another 2 to 3 minutes.
