2 tablespoons olive oil
1 large onion, thinly sliced
5 teaspoons curry powder
1/4 teaspoon cayenne pepper
3 14-ounce cans vegetable broth
1 large bunch or 2 small bunches Swiss chard, tough stalks removed, coarsely chopped (about 12 cups)
1 pound red lentils (about 2 1/4 cups)
1 15-ounce can garbanzo beans (chickpeas), drained
Plain yogurt

Steps:

  • Heat oil in heavy large saucepan over medium-high heat. Add onion; sauté until golden, about 13 minutes. Mix in curry and cayenne. Add broth and chard. Increase heat; bring to boil. Add lentils and garbanzos; reduce heat to medium.
  • Cover; simmer until lentils are tender, stirring twice, about 10 minutes. Divide stew among bowls. Top with yogurt.

½ cup raisins
1 cup warm water
1 tablespoon olive oil
1 small red onion, diced
1 clove garlic, minced
1 ½ teaspoons curry powder
½ teaspoon ground cumin
½ teaspoon dried cilantro
¼ teaspoon ground ginger
2 cups vegetable broth
1 (15 ounce) can garbanzo beans, drained
1 cup quinoa
½ cup diced roasted red peppers
¼ cup toasted almonds
salt to taste

Steps:

  • Soak raisins in 1 cup warm water in a bowl while you complete remaining steps.
  • Heat olive oil in large saucepan over medium heat. Cook and stir onion and garlic until onion has softened and turned translucent, about 5 minutes. Stir in curry powder, cumin, cilantro, and ginger and cook until fragrant, about 30 seconds.
  • Stir in vegetable broth, garbanzo beans, and quinoa. Bring to a boil, then reduce heat to medium-low heat, cover, and simmer until quinoa is tender, about 20 minutes.
  • Drain raisins. Lightly toss quinoa mixture with raisins, roasted red peppers, and toasted almonds. Season with salt.

2 tablespoons olive oil
1 teaspoon mustard seeds (black or yellow)
1/2 teaspoon crushed red pepper flakes
1/2 cup shallot, peeled and minced
2 (15 1/2 ounce) cans garbanzo beans
1/2 teaspoon turmeric
1 teaspoon ground cumin
1/2 teaspoon ground ginger
salt, to taste
1/4 cup fresh cilantro, chopped

Steps:

  • Heat oil in a large saucepan over medium-high heat.
  • Fry mustard seeds in oil until they begin to pop. Add red pepper flakes and shallot and saute until shallot is soft.
  • Add garbanzos, turmeric, cumin, ginger, salt and enough water to prevent sticking. Simmer for 15 minutes.
  • Sprinkle with cilantro and serve.

This recipe is really easy to prepare, and it is SO delicious. You will love the mango relish with it, too!

4 cloves garlic, chopped roughly
1 inch fresh gingerroot, peeled and chopped roughly.
2 fresh red chilies, seeded and chopped (use more or less to your tastes)
3/4 cup cold water
1 tablespoon safflower oil (vegetable or sunflower will work too)
1 1/4 teaspoons coriander seeds
1 teaspoon cumin seed
1 1/4 teaspoons ground cumin
2 green cardamom pods, seeds removed and then ground
1/4 teaspoon ground turmeric
14 ounces chopped tomatoes
3/4 lb mushroom (you can cut them if they are too large)
8 ounces garbanzo beans (cooked)
8 ounces okra, trimmed and cut into 1/2 inch slices
2 tablespoons cilantro, chopped
1 large ripe mango, weight equally approximately 1 1/4 pounds
1 clove garlic, crushed
1 yellow onion, finely chopped
2 teaspoons gingerroot, grated
1 -2 fresh red chile, seeded and chopped finely (more or less to your tastes)
1 pinch salt
1 pinch sugar

Steps:

  • For the Relish: First you will want to peel your mango and then cut off the flesh from the pit.
  • Place the mango in a bowl, and process it with a food processor, or simply mash it with a hand masher, whatever you choose to do.
  • Mix in the rest of the ingredients and set aside.
  • For the curry: In a clean food processor bowl, place the garlic, ginger, chiles and 3 tablespoons of water, and process until smooth.
  • Next, heat your oil in a large saucepan, and add the whole coriander seeds, cumin seeds, and allow them to sizzle for a few seconds, allowing for the flavors to release a bit.
  • Then add the ground cumin, the ground cardamom seeds, and turmeric and cook for about a minute or so.
  • Then add the garlic paste that you made in the processor, along with the tomatoes and remaining water.
  • Stir to mix well, and then add the mushrooms, okra, and garbanzo beans.
  • Stir again, and then bring to a boil.
  • Reduce your heat and then cover and simmer for 5 minutes.
  • Remove the lid and turn your heat up slightly and cook for about 8-10 more minutes (maybe less depending on your okra), until the okra is tender but not too soft (you dont want mushy okra).
  • Remove from heat and add your chopped cilantro, stirring lightly.
  • Serve with your mango relish and rice (I like it with basmati).

1 tablespoon canola oil
1/2 white onion, chopped
15 ounces garbanzo beans, 1 can
1/2 cup frozen baby peas
1 tablespoon and 1 tsp garam masala, ground
1 tablespoon tikka masala, ground
3 generous dashes smoked paprika
salt and pepper
red chili pepper flakes
2 tablespoons coconut cream
1/2 cup low sodium vegetable broth
1/2 cup low sodium vegetable broth

Steps:

  • Over medium-high heat, add oil to a medium-size frying pan. Once it's hot add your onions. Add a pinch or two of salt and let brown slightly for about 2-3 minutes, stirring occasionally.
  • Add the garam masala, tikka masala, paprika, red chili flakes, and salt and pepper (to taste). Mix spices to evenly coat onions. Allow to cook for 2-3 minutes.
  • Add in peas (they don't have to be thawed) and garbanzo beans. Again, stir to combine all ingredients.
  • Lastly, add in coconut cream, veggie stock and tomato paste. Once everything as been stirred to combine, turn the heat down to medium-low and allow to simmer for 10 minutes while stirring occasionally.
