1 large Cauliflower (800 grams) (approximately 28 ounces)
2 zucchini
2 shallots
3 garlic cloves
15 grams ginger
200 milliliters Coconut cream (canned)
1 tsp Curry powder
1 tsp ground Cumin
1 tsp ground cilantro
0.5 tsp Chili powder
1 tsp sweet ground paprika
1 pinch cinnamon
500 milliliters Tomato juice
salt
1 Tbsp Limes (juice)
minced cilantro (for garnish)

Steps:

  • Rinse the cauliflower, cut into florets and finely chop the stems. Rinse the squash, cut in half lengthwise then cut into 1 cm (approximately 1/3 inch) thick slices. Peel the shallots, garlic and ginger and finely chop.
  • Seat 1 tablespoon coconut cream aside. Melt 1 tablespoon coconut cream in a large saucepan, add the spices and cook until fragrant. Add the shallots, garlic and ginger and sauté briefly. Add the cauliflower, tomato juice and coconut milk, cover and simmer for about 20 minutes, stirring occasionally.
  • Sauté the squash in the reserved coconut cream until light golden brown. Add to the curry during the last 5 minutes. Add the lime juice, season with salt and garnish with cilantro.
  • Serve with naan, if desired.

¼ cup plain Greek yogurt
2 tablespoons curry powder, or more to taste

Steps:

  • Core cauliflower, leaving enough core that it remains whole.
  • Mix mayonnaise, Greek yogurt, and curry powder in a bowl.
  • Spread curry mixture over cauliflower head to cover; place in deep microwave-safe bowl and cover the bowl with a plate.
  • Cook on High in microwave until cauliflower is tender, 9 to 15 minutes; let stand covered for 2 minutes.
  • Cut in quarters and serve.

1 large head cauliflower, broken into small florets
1 (10.75 ounce) can condensed cream of chicken soup
¾ cup mayonnaise
¼ cup milk
2 teaspoons curry powder
12 wheat crackers
¼ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place cauliflower in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm. Drain, and place in a greased casserole dish.
  • In a large bowl, mix together soup, mayonnaise, milk, and curry powder. Pour over cauliflower. Crush crackers, and mix with butter. Sprinkle over cauliflower.
  • Bake in preheated oven for 30 minutes.

A flavourful blend of curried vegetables that can be served as an entrée on top of a bed of rice or greens, or a side dish.

1 head cauliflower (cut into florets)
1 zucchini (slice thick and halve each into semi-circles )
4 sprigs celery (chopped)
1½ cups red onion (diced)
1⅓ cups walnuts (chopped)
⅓ cup fresh ginger (finely chopped)
2 tbsp olive oil
1 tsp garlic (minced)
3 tsp curry powder
1 tsp cumin
1 tsp Kosher salt
½ tsp black pepper (ground)
¼ tsp turmeric
Hemp seeds
Fresh herbs (dill, parsley, etc. )

Steps:

  • Heat either oven or BBQ to approx. 400°F
  • Chop and dice each ingredient as described, and combine in a large mixing bowl
  • Place the contents on a parchment paper covered baking sheep or BBQ safe pan or mat. Roast for approximately 45 minutes in oven or 30 minutes on BBQ, stirring every 10-15 minutes.
  • Serve hot or cold as a side dish, or on top of a bed of greens or rice as an entrée. Sprinkle fresh herbs and seeds on top to garnish and provide extra nutrients and protein.

1 medium onion, diced
1/2 green pepper, seeded and diced
2 jalapeno peppers, diced
1/2 cup margarine
1 teaspoon masala
1/2 teaspoon cayenne pepper
1 head cauliflower or 4 -6 medium zucchini, sliced
2 medium potatoes, cubed (optional)

Steps:

  • In a large skillet, melt margarine. Add diced vegetables, onion, green pepper and Jalapeno peppers, cook at medium heat, uncovered, for ten minutes.
  • If using cauliflower, divide florets, halve, cut up stems and add to onion mixture. Otherwise add zucchini at this point.
  • Cook covered at medium heat for 15 minutes.
  • OPTIONAL: If desired add cubed potatoes 5 minutes after the cauliflower or zucchini.
  • Add Masala and cayenne pepper. Continue cooking for another 5 minutes.

2 cups low-sodium vegetable broth
One 13.5-ounce can unsweetened coconut milk
4 cloves garlic, finely grated
1 tablespoon finely grated peeled fresh ginger (from a 1- to 2-inch piece)
1 serrano chile pepper, stemmed and finely chopped (remove seeds for less heat)
2 1/2 teaspoons curry powder, preferably Madras
Kosher salt
Two 15.5-ounce cans chickpeas, drained and rinsed
2 cups lightly packed baby spinach, roughly chopped
1 1/2 cups basmati rice
1/2 medium head cauliflower, cut into small florets (about 3 heaping cups)
1/2 small red onion, thinly sliced
Cilantro leaves, plain whole-milk yogurt and lime wedges, for serving

Steps:

  • Preheat the oven to 425 degrees F. Spray a 9-by-13-inch baking dish with nonstick spray.
  • Whisk the vegetable broth, coconut milk, garlic, ginger, serrano, curry powder and 2 teaspoons salt together in a medium bowl until combined. Add the chickpeas and spinach and stir to coat.
  • Spread the rice evenly in the bottom of the prepared dish. Pour in the coconut-milk mixture, distributing the chickpeas and spinach evenly over the rice. Scatter the cauliflower and onion over the top, making sure to go all the way to the edge of the pan (it's okay if the cauliflower is not completely submerged in liquid).
  • Cover tightly with foil and bake until the vegetables have softened but are still vibrant, about 25 minutes. Remove the foil and bake until the cauliflower is charred in spots and the rice is cooked through, 20 to 25 minutes more. Let sit for 5 minutes to allow the rice to absorb more of the moisture. 1 tablespoon extra virgin olive oil
1 small onion, chopped
2 garlic cloves, minced
2 pounds zucchini, diced (about 7 cups diced)
2 teaspoons curry powder
6 cups chicken stock, vegetable stock or water
1/4 cup basmati rice
Salt to taste
Freshly ground pepper (I like a lot of it in this soup)
Pinch of cayenne
2 tablespoons fresh lemon juice
2 tablespoons chopped chives
1 small zucchini, sliced paper-thin, tossed with salt and, if desired, lemon juice, and marinated for 15 minutes or longer
Garlic croutons (optional)

Steps:

  • Heat the olive oil over medium heat in a large, heavy soup pot and add the onion. Cook, stirring, until it is tender, about 5 minutes. Add a generous pinch of salt, the garlic and the zucchini and stir for about a minute, until the garlic smells fragrant. Add the curry powder, stir together, and add the stock or water, the rice and salt to taste. Bring to a boil, reduce the heat, cover and simmer 30 minutes. Taste and adjust salt.
  • Purée the soup with an immersion blender or a food mill or in batches in a blender, taking care to remove the lid or take out the center insert and to cover with a towel to avoid hot splashes. Return to the pot, heat through, add pepper and cayenne to taste and stir in the lemon juice. Serve, garnishing each bowl with paper-thin slices of zucchini, chopped chives and croutons if desired.

1/2 head of cauliflower, cut into florets
2 zucchini, large dice
2 cloves garlic, minced
1/2 tsp dried Italian seasoning
1/4 tsp onion powder
1/4 tsp Celtic sea salt
Pinch of red chili flakes
1/4 cup coconut oil
Optional Italian flat-leaf parsley garnish

Steps:

  • In a large saute pan or skillet, melt the coconut oil at medium-high heat. Add the cauliflower in first, moving often, and sauté for a few minutes or until the cauliflower has a little color to it. Cauliflower takes longer than zucchini, so we need to give it a head start. Next add the zucchini, garlic and spices. Toss to bring everything together and continue to sauté for another 7 minutes or so. Really just until the zucchini has softened and taken on some color too. If you're not a seasoned cook, you'll learn to cook with your nose, not just your eyes. You can smell when garlic is still raw, when it is at its sweet spot and when it has crossed over into burnt and bitter. Obviously we're aiming for the sweet spot! When your veggies look like this, you're done! Transfer to a serving dish and top with some fresh chopped Italian flat-leaf parsley, if you feel like it.
