Seafood Alfredo Fettuccine - Italian Tutto Mare image

When shrimp, crab, clams, and mushrooms come together in a luscious creamy, cheesy garlic sauce over fresh pasta, you get this delectable Seafood Alfredo Fettuccine!

12 ounces dry fettuccine pasta
2 tablespoons olive oil
8 oz Mushrooms, (we used baby bella)
2 fat garlic cloves, smashed and minced
3 cups half-and-half
1 1/2 teaspoons butter
1 lb shrimp, peeled and deveined (we used 26/30 shrimp per pound)
10 oz can of whole clams, drained
4 oz can crab meat, drained
salt to taste
4-5 grinds black pepper
1/2 teaspoon thyme
1/2 cup grated Parmesan, plus a little for garnish
1/2 cup Provel Cheese or Provolone cheese
1/8 teaspoon red pepper flakes (optional)
1/4 cup Toasted bread crumbs or Panko (toasted in 2 tablespoons butter for a couple minutes, until lightly brown)
2 tablespoons fresh parsley
3 cups "OO" flour, plus more as needed
1 1/2 teaspoons kosher salt
11 large egg yolks
3 large eggs
2 tablespoons extra-virgin olive oil

Steps:

  • Cook pasta according to package instructions, drain reserving a little water and cover.
  • In large skillet, heat two tablespoons olive oil to saute the mushrooms, when those are almost ready add the garlic, being careful not to burn. Remove the mushrooms and set aside.
  • In the same skillet bring half-and-half to a boil. Cook over medium-high heat, stirring frequently, until reduced by about one-fourth. Stir in shrimp, clams, crab meat, butter, black pepper and red pepper flakes.
  • Cook, stirring until shrimp is done about 4 minutes. Add mushrooms back in and stir in Parmesan and Provel; remove from heat. Toss with Fettuccine, add toasted bread crumbs and fresh parsley as garnish and serve immediately.Instructions for fresh pasta:
  • In a stand mixer fitted with the dough hook, combine the flour and salt on low speed. Add the egg yolks, eggs, and olive oil and continue to mix on low speed. Once the flour is incorporated, increase the speed to medium- low and mix/knead the dough for 5 minutes.
  • Lightly flour your works surface. Dump the dough onto the surface and continue to knead for a few more minutes. At this point, the dough may look a little dry, which is fine. Wrap the dough well in plastic wrap and let it rest in the refrigerator for at least 1 hour before rolling it. This rest allows the flour to be fully absorbed by the wet ingredients for a smooth, tender dough. (You can make the dough up to 1 day ahead of rolling it; keep it refrigerated.)
  • Fresh pasta cooks faster (about 1-3 minutes) than dried. So be sure to keep an eye on it.

This creamy pasta is oh so good. My daughter and I love pasta. We love this recipe. It has shrimp and crab meat in it. We think you will enjoy this as much as we do. This recipe was adapted by my manager at work, from her very own cookbook she had published. I'm guessing on the cooking time, I do know it don't take long to make this dish.

2 cups half-and-half cream
1/2 cup provolone cheese
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon garlic
2 tablespoons parsley flakes
3 dashes curry powder
1/2 cup fresh mushrooms, diced
1 tablespoon butter, heaping
1 (16 ounce) package cavatelli, cooked & drained
1/2 cup parmesan cheese, grated
3 ounces shrimp, fresh, cut in small pieces
3 ounces crabmeat, cut in small pieces
1 tablespoon crushed graham cracker (optional)

Steps:

  • Assemble all ingredients in sauce pan.
  • Stir over low heat until thickened.
  • Stir in 1/2°C parmesan cheese, cavatelli noodles, shrimp and crab meat. Stir until shrimp and crab meat are warm.
  • Serve in large pasta bowl, with 1 tablespoons crushed graham crackers on top.

I found this online on a search for recipe's from Cunetto's house of Pasta in St. Louis. I havent tried it yet but I usually order this when I go to the restaurant. It is wonderful.

1 lb linguine
1 cup chicken broth
3/4 cup chopped clam
3/4 cup medium shrimp
3/4 cup crabmeat
1/2 cup lobster
1 3/4 cups sliced mushrooms
3/4 cup butter (do NOT substitute)
1 teaspoon chopped garlic
1/4 cup chopped parsley
salt and pepper
freshly grated parmesan cheese

Steps:

  • Cook pasta until al dente. In the meantime, simmer rest of ingredients 5 minutes. Add fish mixture to drained pasta and simmer additional 3 minutes. Sprinkle liberally with Parmesan.

This is the famous dish from Cunetto House of Pasta on "The Hill" in St. Louis. Recipe published in the Riverfront Times' Recipes 1997. This is not the same as the Pasta House version. . .this is a white sauce, not a pink one! This recipe is fast enough for a mid-week meal, but fancy enough to serve at a dinner party! Feel free to lighten it up a bit with light margarine and fat-free half and half (I have done it many a time with great results).

1 lb spaghetti, cooked (shells work well too)
24 ounces half-and-half cream
1/4 cup butter
1/2 lb small broccoli floret
1 cup sliced mushrooms
1/4 cup minced parsley
1 1/2 teaspoons fresh minced garlic
1 tablespoon black pepper
2 teaspoons salt
3/4 cup freshly grated parmesan cheese (may increase to 1 cup for a thicker sauce if need be)

Steps:

  • Combine cream, butter, broccoli, mushrooms, parsley and seasonings in a sauce pan over medium heat for 3-5 minutes.
  • Increase the heat of the cream sauce slightly and bring to a boil.
  • When cream sauce boils, add cooked and drained spaghetti noodles to the sauce.
  • Reduce over medium heat until cream sauce clings to the spaghetti.
  • Remove from heat and toss in parmesan cheese, a little at a time until desired sauce consistency is achieved.
