CUCUMBERS AND ONIONS IN A RANCH SAUCE
This Ranch flavor cucumber salad is always a big hit at a gathering , if I want to have some left overs ,I better save some at home cause I never seem to come home with any extra's.I've even doubled it and still none left over ...LOL

Steps:
- 1. Mix together ; sour cream , milk ,ranch mix , lemon juice , salt & pepper and dill weed in a medium bowl.
- 2. Mix prepared cucumbers and onion ring slices in ranch mixture.
- 3. Chill for at least 30 minutes ; just too get cold and to let the flavor set.

Sliced cucumbers and onions in a light homemade sweet/tart vinegar dressing. This recipe is easy, tasty and down right yummy. Make early in the day and let marinate in fridge. Really good served with fried chicken, mashed potatoes and creamy gravy. I make them sugar free with splenda.

- 1. Layer sliced cucumber and onions alternately into bowl, set aside.
- 2. Mix remaining ingredients together, stir until sugar is dissolved. Pour dressing mixture over cucumber and onion mixture. Cover and refrigerate for a couple of hours to marry flavors.
- 3. Notes: This recipe can easily be doubled. If my cucumber and onion are large I will double the dressing ingredients. I like the dressing poured over tomato chunks, chopped cucumber chunks, chopped green onions, green and red pepper chunks and sliced celery for another salad variation. Enjoy!

GRANDMA'S CUCUMBER AND ONION SALAD
Both of my grandmothers made this salad every summer when their gardens produced baskets of cucumbers. It's a cool, fresh side dish for any meal. One of my grandmas omitted the green pepper and the celery seed. She also put ice in it to chill it quickly and cut the vinegar taste.

- Place cucumber slices in a colander and liberally sprinkle salt over cucumbers; set aside until water starts to release from cucumbers, about 15 minutes. Drain and rinse cucumbers.

RANCH CUCUMBER, TOMATO AND ONION SALAD
So easy, so good. My newest summertime addiction. My SIL Jeni actually gave me the idea for this, so I want to make sure she gets credit! I'm sure this isn't a completely original recipe though, lol. I can usually only wait about 1/2 hour for the salad to meld together, but it has lasted a whole 24 hours in the fridge before I devoured the leftovers!

Steps:
- Slice the cucumbers and put in a bowl. Sprinkle with a little salt.
- Halve or quarter the tomatoes depending on the size of the tomatoes and how big you like the pieces. Mix with the cucumbers.
- Thinly slice the onion. I prefer it sliced, but I'm sure you could do a chopped onion instead. Mix with cucumbers and tomatoes.
- Add salt and pepper to taste.
- Mix with ranch dressing. Let sit for at least 30 minutes.
