Steps:
- 1. Toss together peeled and sliced cucumbers, tomatoes, and onions in a large bowl.
- 2. Whisk together sugar, vinegar, oil, water, salt, and pepper. Whisk until the sugar is dissolved.
- 3. Pour vinegar mixture over the veggie mixture and toss.
- 4. Cover and refrigerate at least 2 hours before serving.
SIMPLE CUCUMBERS AND ONIONS
My mom always had a bowl of this in the fridge during the summer, and now I do too! My mom sliced her cucumbers and onions in cold salt water for a few hours first, but I usually do not. I do not notice difference when they are not soaked. Instead of peeling the cucumbers completely, I leave a few stripes of green to add color to the salad. Note: Cooking time includes time to chill salad before serving.

- Combine oil, vinegar, and sugar in a medium to large bowl (big enough to hold all completed salad). Stir until sugar is dissolved (Note: You can heat the dressing to help keep it from separating. It is not necessary, but I do if I have time. If you heat the dressing, be sure to cool it before adding to cucumbers).
- Add cucumbers and onions to dressing. Toss to coat veggies.
- Cover and chill at least 2 hours before serving. The longer it chills, the better it gets!

- 1. Mix mayo, sour cream, vinegar, sugar, garlic, onion, & dill weed in a medium bowl.
- 2. Peel and slice cucumbers and onions and put in a strainer. Pour salt over the cucumbers and mix until well coated. Allow to sit for 1/2 an hour or so. Rinse salt off and pat cucumbers dry with a paper towel. This process brings the moisture out of the cucumbers so the recipe stays creamy instead of liquidy.
- 3. Stir cucumbers into mayo mixture and refrigerate for at least 2 hours. It will even taste better the next day just as the old fashioned cucumbers and onions would!

Steps:
- Peel and slice the cucumber very thin.
- Chop the green onions (including the tops). Mix with the cucumber.
- Sprinkle the salt and sugar over all and toss lightly with a fork to distribute sugar and salt evenly over the cucumber slices.
- Let stand 15 to 20 minutes.
- Drain thoroughly, pressing cucumber to extract as much moisture as possible. Stir the vinegar into the sour cream.
- Add a dash of white pepper.
- Pour over cucumber and onion.
- Refrigerate until ready to serve. NOTE: I usually double this recipe as it is better the longer it sits in the refrigerator.
- I also like more onion so I usually use 3 to 4 if they are small.

- One tip to score the cucumber's skin is to run the tines of a fork from end to the other, working your eay around the entire cucmber.

- Preheat oven to 450F. Make pork rub: 1. In a small bowl with a fork, stir together all pork rub ingredients until well combined. 2. Pat pork dry and press rub into meat (expect uneven clumping) 3. In a nonstick skillet, heat veg. oil over med-high heat until hot but not smoking and brown pork, turning occasionally, about 5 min. 4. Transfer pork to shallow baking pan and roast in middle of oven until 155F (about 15 minutes) 5. Transfer pork to cutting board, let stand 5 min. Toast rolls in oven. Make basting sauce: 1. While pork is roasting, in a bowl stir together all basting sauce ingredients Make BBQ sauce: 1. While pork is roasting, in a small sauce pan heat peanut oil over med-high heat until hot but not smoking and cook shallot, garlic, red pepper flakes, cumin, and chili powder, stirring 2 minutes. 2. - Preheat oven to broil, with rack about 8 inches below heating element. Brush a rimmed baking sheet with 1 tablespoon oil, and arrange onions on it in a single layer. Brush onions with 2 tablespoons oil; season with salt and pepper. Broil onions until golden brown on top, about 15 minutes. Flip onions and broil until golden brown on other side, 5 to 7 minutes more. Transfer to a large bowl.
