2 english cucumbers, cut into 1/2″ slices
8 oz. cream cheese, softened
1 T. chives, chopped
1/2 teaspoon garlic powder
1/4 teaspoon red pepper flakes
1/4 teaspoon dry basil
3 piquillo peppers, thinly sliced

Steps:

  • To a small bowl, add cream cheese, chives, garlic powder, red pepper flakes, and dry basil. Using a hand mixer, blend until all the spices are combined together and cream cheese is smooth and spreadable.
  • Put cream cheese mixture in a small ziplock bag. Closer the bag. Cut off one of the bottom tips.
  • Spread cucumbers out on a serving try. (you can use this as a make shift piping bag to squeeze the cream cheese onto the cucumbers)
  • Top each cucumber slice with a 1-2 teaspoons of the cream cheese mixture.
  • Garnish with 1-2 slices of the piquillo peppers.
  • Serve.

4 ounces cream cheese, at room temperature
2 ounces fresh goat cheese, at room temperature
3 tablespoons butter, at room temperature
2 tablespoons grated Parmesan
2 teaspoons freshly squeezed lemon juice
1 small clove garlic, crushed
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh dill, plus sprigs for garnish
Kosher salt and freshly ground black pepper
6 slices crustless white sandwich bread, cut into quarters
1 Persian cucumber, thinly sliced
4 breakfast radishes, thinly sliced

Steps:

  • Combine the cream cheese, goat cheese, butter, Parmesan, lemon juice and garlic in a small food processor and process until very smooth and light. Transfer to a medium bowl and stir in the chives, parsley and dill. Season with salt and pepper. Refrigerate until chilled but still spreadable, about 30 minutes.
  • Preheat the oven to 350 degrees F.
  • Spread the bread on a baking sheet and bake, flipping the pieces once, until lightly toasted but not colored, about 10 minutes. Let cool.
  • To serve, spread the cheese mixture on the toasts. Top with the sliced cucumber and radishes and garnish with dill sprigs.

2 tablespoons thinly sliced fresh mint
2 teaspoons finely chopped fresh chives
½ teaspoon finely grated fresh lemon zest plus extra for optional garnish
½ teaspoon fresh lemon juice
⅛ teaspoon salt
⅛ teaspoon cayenne (or to taste)
½ medium cucumber
3 medium radishes
Course sea salt for sprinkling

Steps:

  • Stir together cream cheese, herbs, zest, lemon juice, salt and cayenne.
  • Slice 16 (¼ inch thick) rounds from cucumber. Trim bottoms from radishes, then slice thinly using mandolin or sharp paring knife. Top each cucumber slice with a radish slice and 1 teaspoon herbed cream cheese. Sprinkle with additional lemon zest, if desired.
  • Serve immediately or refrigerate up to one hour.
  • Sprinkle with course sea salt just before serving.

2 tablespoons dill pickle juice
¾ teaspoon granulated onion or onion powder
½ teaspoon granulated garlic or garlic powder
Freshly ground black pepper to taste
1 green onion (green part only, minced)

4 ounces (1 Brick) cream cheese, softened to room temperature
1/4 cup ranch dressing
2 tablespoons fresh dill or thyme
3 to 4 long cucumbers, skinned and sliced into 1 inch slices
15 cherry tomatoes, sliced in half
Salt, to taste
Paprika or cajun spice mix, for garnish

  • First, Make the herbed cream cheese: in a stand mixer, mix the softened cream cheese with the ranch dressing and herbs. Mix until well combined. Spoon into a piping bag with a star tip. Prepare the cucumber, remove peel, and using a fork, score the sides. Slice into 1 inch pieces. Using a melon baller, remove a portion of the center of one side of the piece of cucumber, leaving a half moon crater. Pipe the Herb Cream Cheese into the crater. Enough to stick out of the top about 1/2 inch. Add a half Cherry Tomato partially buried into the Herb Cream Cheese Sprinkle additional salt, herbs and spice mix for additional color. 1 tablespoon fresh parsley, finally chopped
