- Press the cucumber through a colander to remove excess moisture.
- Process cream cheese and mayonnaise in a blender or food processor until smooth.

- Lightly toast bread or roll.
- Toss avocado slices with a tiny bit of lemon juice to keep from getting brown.
- Spread some of the honey mustard on the bread.
- Place lettuce on bread, followed by tomato slices, cucumbers, red onion, and avocado slices.
- Drizzle remaining honey mustard over the vegetables.
- Top with sprouts and close up sandwich, securing with a toothpick.
- Note: To make honey mustard, combine honey and prepared yellow mustard together to taste.
- To make honey mustard salad dressing, simply add a little mayonnaise to the same mixture and thin with a tiny bit of milk if needed, to suit your taste.
- Of course, both honey mustard and honey mustard salad dressings are now sold in stores if you prefer to use ready made.
SMOKED TROUT SALAD, CUCUMBER AND ROASTED PEPPER SANDWICH
For this sandwich I use canned smoked trout - it's packed in oil and not dry, so it lends itself to a mixture like tuna salad. I flake it in my mini-processor, then mix it up with a little yogurt and mayonnaise.

- Drain the trout. Place the fillets in a bowl or in the bowl of a mini-food processor, and flake them. Mix in the yogurt and 1 teaspoon of the mayonnaise. It should have the consistency of tuna salad. Stir in the chopped celery and dill.
- Lightly toast the English muffins. Spread a little mayonnaise on both halves. Spread half the trout mixture over the muffin bottoms. Top with cucumber slices, and douse with a little lemon juice. Layer half the roasted pepper over the cucumber slices. Place the other halves of the English muffins on top, press down, slice in half if desired and serve. Alternately, you may wrap the sandwiches in plastic, refrigerate and serve later.

- In a mini-processor (or if multiplying the recipe, in a food processor fitted with the steel blade), blend together the goat cheese, cottage cheese and yogurt until smooth. Add the sumac and mix together.
- Spread half the cheese mixture on one slice of the bread. Sprinkle with dill. Top with a layer of thinly sliced celery. Top the celery with a layer of cucumber slices. Season if desired with salt and pepper and sprinkle on more dill. Spread the remaining cheese over the top slice of bread and sprinkle the walnuts over the cream so that they stick. - Peel the cucumber and cut in chunks. If it's got a lot of big seeds, scoop some out and discard. Put it in a food processor and chop fine. If it's really moist, or you didn't seed it, then you may want to squeeze off some of the excess juice.

- CUCUMBER DRESSING: Mix vinegar, dill, onions and pepper in a bowl.
- Add cucumber slices and marinate overnight.
- Drain; discard liquid. Stir in yogurt. Makes about 4 cups; more than enough for the sandwiches.
- FALAFEL PATTIES: Preheat oven to 350ºF. Spray baking sheet with cooking spray.
- Microwave potato for about 3 minutes; cool, peel and mash with a fork. Set aside.
- Heat oil in skillet over medium heat and saute onions, jalapeno and garlic till soft; about 3 minutes. Stir in parsley and saute another minute.
- In a large bowl, combine beans with onion mixture; mix well.
- Stir in mashed potato, yogurt, paprika and lemon juice.
- Form into 24 patties using 2 tablespoons mixture for each. (It's easier to spoon 2 tablespoons on baking sheet and form into rounds).
- Place patties on baking sheet and bake for 10 minutes; turn patties over and bake for another 10 minutes.
- Assemble sandwiches by placing 2 patties in each pita half. Top with lettuce and 1 tomato slice. Serve with cucumber dressing.
- Serving = 2 pita halves with 4 patties and toppings.

- 1. In a medium bowl, add chicken and onions. Mix to make chicken flakey. Add in mayonnaise until well blended.
- 2. Lay 4 slices of bread down. (I spread a little mayo on the slices) Top each with the chicken salad. (I add a little salt & pepper) Cover chicken salad with slices of cucumbers, about four slices, then top cucumbers with tomato slices ( I like mine without tomato )
- 3. Then add the alfalfa sprouts on top of the cucumbers. Add as much as you like. Top with remaining bread.
- 4. I like to cut my sandwiches in half and add a slice of cucumber on top with a toothpick if serving guests. Makes a pretty presentation.
- 5. I made this with Rose Mary's salad (pictured) and delish! But also goes well with chips, fruit or a light soup.
