- In a medium bowl, mix together cream cheese, smoked salmon, dill, garlic powder, and black pepper.
- Using a vegetable peeler or mandoline, peel the cucumbers lengthwise into thin slices. Discard the outer peel.
- Pat the peeled cucumber slices with paper towels to absorb any excess moisture.
- Spread a small spoonful of filling over a cucumber slice.
- Starting from one end, tightly roll the cucumber into a spiral. Repeat with remaining cucumber slices and filling.
- Enjoy!

PHILADELPHIA ROLL RECIPE BY TASTY
Here's what you need: sushi rice, seasoned rice vinegar, sushi grade nori, smoked salmon, cream cheese, small cucumber

- Season the sushi rice with the rice vinegar, fanning and stirring until room temperature.
- On the rolling mat place one sheet of nori with the rough side facing upwards.
- Wet your hands and grab a handful of rice and place it on the nori. Spread the rice evenly throughout the nori without smushing the rice down.
- Arrange, in a horizontal row 1 inch (2 cm) from the bottom, smoked salmon, cream cheese, and cucumber.
- Grabbing both nori and the mat, roll the mat over the filling so the extra space at the bottom touches the other side, squeezing down to make a nice tight roll. Squeeze down along the way to keep the roll from holding its shape.
- Transfer the roll onto a cutting board. Rub a knife on a damp paper towel before slicing the roll into six equal portions.
- Enjoy!

CUCUMBER, SALMON & CREAM CHEESE ROLLS

- Using a mandolin slicer (or being very attentive with a knife) slice your cucumber lengthwise into 12 even strips. Lay cucumber strips out on a flat surface and set aside.
- Divide salmon into 12 equal-sized pieces.
- Take a knife and gently spread cream cheese in the center of 1 piece of salmon. Carefully roll salmon onto itself and place on one end of cucumber strip.
- Gently roll the cucumber away from yourself, thoroughly wrapping the salmon and cream cheese.
- Secure roll with a toothpick or skewer and continue with remaining salmon rolls.
- Transfer to serving plate, garnish with lemon wedges and enjoy!

- First, make the rice. Rinse the sushi rice in a colander, massaging it with your hands until the water runs clear. Leave to drain for 15 mins.
- Put the rice in a saucepan with 200ml water and the sake or mirin, if using. Bring to the boil, then cover with a lid, reduce the heat to low and simmer for 20 mins until the liquid is absorbed. Remove from the heat. Set aside, covered, for 15-20 mins.
- Transfer to a large bowl. Dissolve the sugar, if using, in the vinegar with a good pinch of salt, pour over the rice and mix. Cover with a damp tea towel and set aside at room temperature until ready to use.
- Put 1 nori sheet on a bamboo mat and cover the surface with half of the cooled rice. Lay half of the salmon and cucumber slices along the length of the rice in a strip, being careful not to overfill it. Run a pea-sized blob of wasabi (more if you like it really hot) along the edge of the filling with your finger.
- Roll up tightly and squeeze to seal when you reach the end. Repeat with the remaining nori, salmon and cucumber, and more wasabi. Slice each roll into 6 pieces, and serve with extra wasabi, ginger, soy sauce and salmon roe, if you like. Will keep in the fridge for 1 day.

CUCUMBER CUPS WITH DILL CREAM AND SMOKED SALMON
Classic combos are classic because the flavors go well together! Dill, cucumber, and smoked fish are combined with a bit of lemon to perk things up.
