CUCUMBER LEMONADE GIN PUNCH
Cucumber Lemonade Gin Punch (or the CLGP, as I like to call it) is one of my favorite summer cocktails. On a warm day out on the porch, I just can't imagine anything better. And because the cucumber lemonade is assembled before adding the gin, the base can be served without the booze for anyone not imbibing. The cucumbers become a sort of fresh pickle in the lemonade and should be devoured, not discarded. It should go without saying that this delicious punch should be enjoyed responsibly. - Juice the lemons into a large pot. Throw the rinds in there, too.
- Add the sugar to the pot and muddle with the lemon rinds and juice for 2 to 3 minutes.
- Add the water and stirThe flavors of cucumber and lemon are delicate, so you don't want to boil the syrup. until the sugar has dissolved.
- Strain into a 3-quart pitcher and add the cucumber. Steep for 1 hour.
- For punch: Add 24 fluid ounces of gin and stir to combine. Serve over ice.
- For a single cocktail: Place 4 to 5 ice cubes in a rocks glass. Add 1 1/2 fluid ounces of gin and 2 1/2 fluid ounces of lemonade. Stir to combine and serve immediately.
LEMON-CUCUMBER COCKTAIL

- In a large pitcher, combine the club soda, gin and lemon juice.
- Place a lemon slice and a cucumber slice in each of 12 glasses. Add 1 cup crushed ice to each glass. Pour the gin mixture into the glasses and garnish each with a mint sprig, if desired.
PIMM'S CUP WITH MUDDLED CUCUMBER
Pimm's No. 1, a gin-based liqueur, is named after James Pimm, the bar owner who created it in the mid 1800s. By the 1860s, it was bottled. At one point, there were other "cups," numbered 2 through 6, based on brandy, rum and other spirits. But the No. 1, a reddish tonic with citrusy and bitter notes, has always been the star, and it is not quite like anything else on the shelf. The Pimm's Cup's skeletal components are nothing more than a measure of Pimm's and roughly three measures of either lemonade, lemon soda or ginger ale (your preference), served over ice in a long glass and typically garnished with cucumber.

- Make a simple syrup: in a small pan, heat sugar and 1 cup water; boil until sugar is melted. Cool. (It keeps in the refrigerator for weeks.)
- In a cocktail shaker, muddle the cucumber. Add the Pimm's, gin, lemon juice and 3/4-ounce simple syrup. Shake.
- Strain into a Collins glass filled with ice. Top with seltzer or sparkling water. Garnish with lemon wedge and mint sprig.
