CUCUMBER DELIGHTS
In the summer I get a ridiculous amount of cucumbers from my garden, so I'm always looking for ways to utilize these yummy veggies. These are lovely hors d'oeuvres for any party. They're attractive and tasty!

Steps:
- 1. Combine all ingredients except pecan halves and cucumbers; cover and refrigerate at least 2 hours.
- 2. Thoroughly wash cucumbers. Peel one strip down the side of cucumber, leaving 1/4-inch of peel intact; repeat procedure around the perimeter of the entire cucumber. Slice into 1/4-inch slices.
- 3. Spoon 1 Tablespoon of chicken mixture on each cucumber slice; top each with a toasted pecan half. Yield 3 dozen

Steps:
- In a medium bowl, combine softened cream cheese and ranch dressing mix packet. Stir until well-blended.
- Slice cucumbers into relatively thin slices (I cut mine to approximately 1/4").
- Slice baguette into medium slices (mine were about 1/2"). For a "daintier" sandwich, trim off crusts.
- Spread cream cheese mixture onto one slice of bread. (I prefer a generous layer of the cream cheese mixture!).
- Place 4-5 cucumber slices on top of cream cheese.
- Spread cream cheese mixture onto a second piece of bread and place the bread on top of the cucumbers, cream cheese side down.
- Repeat!
- NOTE: I recently made this recipe for a bridal shower bruch I hosted. I knew the morning of the shower would be crazy, so I sliced the cucumbers and mixed up the cream cheese spread the night before. It tasted great and made things so much easier on the morning of the shower!

Steps:
- Peel the skins on the cucumbers to form a stripe (i.e. peeled, skin, peeled, skin) and slice them into small pieces. In a small mixing bowl, place the cream cheese in and empty the Good Seasons package and mix together well.
- Take one piece of bread and place one piece of cucumber on it. Evenly spread the cream cheese mixture and sprinkle some dill weed on top. Repeat process for all of the slices of bread and cucumbers.
- Place on a dish single layered, and place into the refrigerator for approximately 30 minutes or so. Remove from fridge, serve and enjoy.
