White crabmeat, mayo and chives make a delicious afternoon tea sandwich filling that's special enough for a celebration treat

200g white crabmeat
6 tbsp mayonnaise
zest 1 lemon , plus a squeeze of juice
small handful chives , finely snipped
9 slices wholemeal or granary bread
a little butter , softened
½ cucumber , very finely sliced

Steps:

  • Mix the crab, mayo, lemon zest, a little juice, the chives and a good grind of black pepper in a bowl. Butter one side of each slice of bread.
  • Divide the crab mayo between 3 slices of bread, top each with another slice, butter-side up, then arrange the cucumber slices on top, season, and finally sandwich with the final pieces of bread, butter-side down. Cut off the crusts, then cut into little triangles.

CUCUMBER CRAB PASTA SALAD

This is best when it has time to chill. I've only had this using imitation crab, let me know if you used real crab with it. This is another recipe from my dad that people ask for every time they eat it. It's a good make ahead dish for pot lucks, etc. Prep time does not include chill time, although you could keep all your ingredients (including prepared noodles) in the fridge until you have time to assemble it.

1 (16 ounce) box medium shell noodles
1 English cucumber, sliced
2 (8 ounce) packages imitation crabmeat
1 1/2 tablespoons dried dill (or to taste. Can use fresh.)
salt (optional)
pepper (optional)
1 (16 ounce) bottle kraft creamy cucumber salad dressing

Steps:

  • Please note: cucumber and crab amounts are to your preference. The amounts listed here are a pretty good veggie/crab to noodle ratio.
  • Do not use noodles larger than the medium shells. You can use smaller shell noodles, though.
  • Boil noodles. Rinse well and let drain for quite a while. Stir them often when draining them to make sure all the water is out of the shells. The less water on them, the better the salad dressing sticks to them.
  • Slice cucumber (with or without skin) to your preference. I typically slice it in half lengthwise, then do about 1/8 thin slices.
  • Chop the imitation crab into chunks and add to the noodles.
  • Sprinkle with salt and dill over entire mixture and stir. Dill should have a nice amount of "speckling" throughout the dish after stirring.
  • If serving right away, pour approx 1/2 the bottle of dressing onto the cucumber crab mixture and stir, then slowly add more to lightly cover everything. You don't want the noodles sopping wet with dressing, but you want a nice thin coat on everything in the bowl.
  • Chill until serving.
  • If you are taking this to a pot luck or making it ahead, assemble everything but the dressing and keep refridgerated. Pour the dressing on just before serving.
  • Keep dressing handy for left-overs because it tends to get sucked into the noodles if it sits in the fridge for any length of time.
  • Optional: For presentation you can decorate with cherry tomatoes on top and sprinkle with dill for garnish.

English cucumber, unpeeled
fresh herb (to garnish)
1/4 cup fresh crab
1 teaspoon fresh lime zest
1 teaspoon fresh lime juice
1 tablespoon green onion, sliced fine
1/4 cup celery, diced fine
1 tablespoon olive oil
kosher salt
cracked black pepper

Steps:

  • Mix all the ingredients together, taste for seasoning; set aside. This can be covered and refrigerated for 1 day.
  • Cut the unpeeled cucumber into 1-1/2" thick slices; with the cucumber slice still laying on it's side, make a diagonal cut, now you have two diagonal cut pieces of cucumber.
  • Use a melon baller to make a small round hole in the center of the cucumber where the seeds are to make a cup; do not cut completely through to the other side.
  • Lightly salt each cucumber cup; place on a paper towel to drain. They can be refrigerated at this point and finished later.
  • When ready to serve remove the cucumber cups from the refrigerator and place a small amount of the crab mixture in the center of each round hole in the cucumber and serve; garnish with fresh herbs.

CRAB, AVOCADO AND CUCUMBER TIAN WITH GAZPACHO COULIS

3 ounces jumbo lump crab, picked over to remove cartilage and bones
1 ounce avocado, diced
1 ounce cucumber, diced
1 ounce tomato concasse
1/4 ounce shallots, finely chopped
1/4 ounce chives, finely sliced
1/2 lemon, juiced
2 ounces mayonnaise
2 ounces stiffly beaten whipped cream
Salt and pepper, to taste
2 tablespoons Gazpacho Coulis, recipe follows
3 to 4 sprigs chervil or leaves of basil, for garnish
1 tomato, peeled and seeded
1/2 teaspoon tomato paste
1 small cucumber, peeled and seeded
1 red bell pepper, seeded
1 clove garlic, peeled and cleaned
1 rib celery, cleaned and trimmed
Extra-virgin olive oil
Salt

Steps:

  • In a small bowl, gently fold the crab with the avocado, cucumber, tomato concasse, shallots, chives and lemon juice together. In a larger, separate bowl, fold the mayonnaise with the whipped cream. Using a spatula, fold the crab mixture into the mayonnaise mixture. Adjust seasoning with salt and pepper.
  • Place a 3-inch round cookie cutter in the center of a chilled plate. Fill the cookie cutter with the crab salad and remove the cookie cutter. There should be a cylinder of crab salad. Drizzle the Gazpacho Coulis around the crab salad, and garnish with chervil or basil.
  • In a food processor, liquefy the tomato, tomato paste and cucumber. Juice the red pepper, garlic, and celery. With the food processor running, add the juice and olive oil to the tomato puree. Season with salt.

3 medium-size English cucumbers
Kosher salt
One 8-ounce block cream cheese, at room temperature
1/2 cup mayonnaise, at room temperature (no more than 2 hours)
1 stalk celery, finely diced (1/2 cup)
1/2 red bell pepper, finely diced (3/4 cup)
1/2 yellow bell pepper, finely diced (3/4 cup)
1/2 pound lump crabmeat, picked through to remove any shells
1 1/2 teaspoons seafood seasoning (I like Old Bay)
1 teaspoon lemon zest
1 teaspoon fresh lemon juice
1 tablespoon chopped fresh dill, plus more for garnish

Steps:

  • Cut the cucumbers in half lengthwise. Use a spoon to scrape out the seeds. Cut each cucumber half crosswise into 4 pieces and place on a paper towel-lined baking sheet. Sprinkle with salt. Let stand while making the filling.
  • Beat the cream cheese and mayonnaise in a medium bowl until smooth. Fold in the celery, bell peppers, crabmeat, seafood seasoning, lemon zest, lemon juice and chopped dill.
  • Pat the cucumbers dry (to remove the liquid and salt). Spoon the crab salad into the hollowed cucumbers. Garnish with more dill. Refrigerate until ready to serve.

1/2 cup (generous) shredded crabmeat (about 2 ounces)
1/4 cup chopped green onion (white and green parts)
3 tablespoons light sour cream
3 tablespoons chopped fresh cilantro
2 tablespoons finely chopped red bell pepper
1 tablespoon finely chopped pink pickled ginger slices*
1/2 teaspoon minced jalapeño chili with seeds
1 English hothouse cucumber, cut into 3/4-inch-thick slices
Fresh cilantro sprigs
*Pink pickled ginger slices are available at Asian markets and also at some specialty foods stores.

Steps:

  • Combine first 7 ingredients in medium bowl. Season to taste with salt and pepper. (Can be prepared up to 6 hours ahead. Cover and refrigerate.)
  • Using small melon baller, scoop out centers of cucumber leaving bottom shell intact. Fill centers and slightly mound crab mixture atop cucumber. Garnish each with cilantro sprig. Transfer to platter and serve.

2/3 cup uncooked short-grain white rice
3 tablespoons rice vinegar
3 tablespoons white sugar
1 1/2 teaspoons salt
4 sheets nori, seaweed sheets
1/2 cucumber, peeled, cut into small strips
2 tablespoons pickled ginger
1 avocado
1/2 lb imitation crabmeat, flaked

Steps:

  • In a medium saucepan, bring 1 1/3 cups water to a boil.
  • Add rice, and stir. Reduce heat, cover, and simmer for 20 minutes. In a small bowl, mix the rice vinegar, sugar ,and salt. Blend the mixture into the rice.
  • Preheat oven to 300°F (150°C). On a medium baking sheet, heat nori in the preheated oven 1 to 2 minutes, until warm.
  • Center one sheet nori on a bamboo sushi mat. Wet your hands. Using your hands, spread a thin layer of rice on the sheet of nori, and press into a thin layer.
  • Arrange 1/4 of the cucumber, ginger, avocado, and imitation crabmeat in a line down the center of the rice.
  • Lift the end of the mat, and gently roll it over the ingredients, pressing gently. Roll it forward to make a complete roll. Repeat with remaining ingredients.
  • Cut each roll into 4 to 6 slices using a wet, sharp knife.

½ cucumber, peeled, halved, deseeded and cut into thin strips
150-200g picked crabmeat (all white meat, or a mix of white and brown, if you like)
1 tbsp crème fraîche
squeeze of lemon juice
1 tsp chopped dill
4 crumpets

Steps:

  • Tip the cucumber into a colander, sprinkle with salt and leave to drain for 10 mins.
  • Tip the crabmeat into a bowl with the crème fraîche and lemon juice. Season. Squeeze the strips of cucumber to remove any excess water, then mix with the dill. Toast the crumpets, then top with the crab mixture, a small tangle of cucumber strips and a few extra dill sprigs.
