Don't have time to make a pie crust? Then you might want to try this fast making, crunchy topping, apple pie. I had to put down an amount of apples but use as many as it takes to fill your pie tin.You could also just use a can of apple pie filling. Good plain or with a scoop of ice-cream or cream whip on top before you serve it.

- Coat a 10-in. pie plate with cooking spray. In a bowl, combine apples, cinnamon and nutmeg; place in pie plate. , In a bowl, beat the sugar, milk, baking mix and egg whites until smooth. Pour over apples. Combine topping ingredients in a bowl until crumbly. Sprinkle over pie. , Bake at 325° for 70-75 minutes or until a knife inserted in the center comes out clean. Cool.

CRUSTLESS APPLE PIE WITH VANILLA ICE CREAM
Steps:
- In a medium heated skillet add the butter then add the apples. Cook for about 2 to 5 minutes then add the cinnamon, brown sugar and orange juice. Swirl the apples around to make sure they all get coated. Cook another 5 minutes until apples are soft and caramelize. Serve warm with scoop of vanilla ice cream.

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking pan.
- In a medium bowl, combine apples with lemon juice; use enough juice to cover all apple pieces. In a separate bowl, mix together flour,3/4 cup sugar and cinnamon. Divide flour mixture into four parts.
- Place 1/4 of apples onto the buttered baking pan, sprinkle some raisins and walnuts on top, then add 1/4 of the flour mixture. Repeat this step until all flour mixture is used. In a medium bowl, beat yolks with milk and pour evenly over apples. Bake in preheated oven for 35 minutes or until toothpick comes out clean.
- To Make Meringue: In a large glass or metal mixing bowl, beat egg whites until foamy. Gradually add 3 tablespoons sugar, continuing to beat until whites form stiff peaks. Spread meringue over pie, covering completely. Put pie back in oven for a 6 or 7 minutes, or until meringue is slightly golden. Can be served warm or cold.

I can't make decent pie crust. So I make my pies crustless in a casserole dish instead. When I lived in Massachusetts, where apples are in great abundance every fall, I'd take this to church potlucks where half a dozen heart patients would see to it that I took home an empty, washed plate. They'd missed pie on their low-fat, low-sugar diets. A very controlled portion of real butter, and the natural sweetness of a good apple, make this dessert rich enough to satisfy.

- 1. Put apples in food processor and blend for about 5 seconds or until apples re coarsely chopped. Add remaining ingredients and blend until apples are finely chopped but not pureed. Place apple mixture in a buttered 9 inch pie plate and bake at 350 for 35 minute or until pie is almost set. Spread top with Lemon Meringue Topping (recipe follows) and return to oven. Continue baking for about 20 minutes or until top is golden brown. Allow to cool and cut into wedges to serve. Serves 8 Note: The only thing to watch is that the apples don't get pureed in blending. If you blend too long, apples with turn into a soupy sauce and pie will not bake properly Lemon Meringue Topping: 2 egg white 1/4 cup sugar 1 T. grated lemon peel Beat egg whites until foamy. Gradually add sugar and beat until meringue is stiff. This is not a light meringue, but a denser version. Beat in the lemon peel. - 1. Slice apples and fill pan/dish.
- 2. Sprinkle with 1/2 cup white sugar. Sprinkle nutmeg and cinnamon (use your judgement) over the sugar and apples.
- 3. Mix together flour, brown sugar, butter. The vanilla is optional. Spread paste over top and cover as many apples as you can. Bake at 375 degrees for 40 minutes.
CRUSTLESS APPLE PIE WITH GRANOLA FROZEN YOGURT
Steps:
- Mix the frozen yogurt and granola together in a medium bowl. Freeze until firm, at least 1 hour.
- Preheat the oven to 400 degrees F. Spray a broiler-safe 8-inch square baking dish with cooking spray.
- Peel and core the apples, then cut them in half vertically. Place the apple halves, cut-side-down, on a cutting board and make 1/8-inch-thick crosswise slices, stopping before you cut through to the bottom to keep the halves intact. Arrange the apples in the prepared baking dish.
- Melt the butter and mix in the apple pie spice. Use half of the spiced butter to brush the apples and add to the bottom of the baking dish; reserve the other half for the crumb topping. Add 2 tablespoons water to the baking dish. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and continue to bake until the apples are just tender and golden brown, about 30 minutes more.
- Remove the dish from the oven and set aside until cool enough to handle, about 10 minutes. Preheat the broiler to high.
- Meanwhile, mix the remaining spiced butter with the panko, pecans and sugar.
- When the apples have cooled, gently separate each of the slices and spoon a small amount of the panko mixture in between. Sprinkle any remaining mixture on top.
- Broil the apples until the topping is golden brown, about 2 minutes. Serve warm with the granola frozen yogurt.

CRUSTLESS APPLE PIE
Steps:
- Put the oven rack in the middle position and preheat to 190 C (375 F). Add the rolled oats, flour, sugar and salt to the bowl of a small food processor and pulse a few times to break up the oats. Add the butter and pulse 1 second at a time until the mixture looks like a fine gravel. Add the ice water and pulse until the mixture looks like a coarse gravel that's barely coming together. Add a bit more water if needed. Place the topping in the freezer while you work on the filling. Remove the pits from the dates. The dates should be the consistency of a soft caramel. If you're using dried dates, you may need to soak them in some boiling water for a few minutes to soften them up. Mash the dates together with the tapioca starch, nutmeg, cinnamon, and melted butter. Cut the apples in half from top to bottom and use a metal measuring spoon or melon scoop to remove the core. After the apple halves are cored, continue carving pieces of apple out and add the pieces to the date mixture. You want to leave at least 1 cm (1/3-inch) of apple around the skin so that the apple holds its shape while being baked. Mix the date mixture and apples together until they are well combine and then divide the mixture into the apples. Take the topping mixture out of the freezer and top each apple with it. Place the stuffed apples on a parchment lined baking sheet and bake until the apples are soft and the topping is golden brown (about 35-45 minutes).
