TORTILLA CRUSTED TILAPIA

6 - 8 hard corn tortilla taco shells
2 tsp. cumin
2 tsp. paprika
2 tsp. kosher salt
2 tsp. freshly ground black pepper
1 tsp. garlic powder
1 tsp. cayenne pepper
4 tilapia filets
1/4 cup all-purpose flour
2 eggs, lightly beaten
1/2 cup sour cream
1 chipotle, from a can of chipotles in adobo sauce, minced
1 tbsp. minced cilantro
1 tbsp. fresh lime juice

Steps:

  • Pre-heat to 375 degrees. Place taco shells in a re-sealable plastic bag, seal and crush using a meat mallet or rolling pin, until broken down into coarse crumbs. Add cumin, paprika, salt, black pepper, garlic powder and cayenne pepper to a small bowl. Mix well. Season the tilapia with some of the spice mixture. Place flour, eggs and taco shell crumbs onto separate shallow plates or pie tins. Season flour with a few pinches of the spice mixture. Dredge each filet into, the flour, shaking off excess, then the egg and finally the taco shell crumbs. Press taco shell crumbs evenly onto each filet. Season the filets with the remaining spice mixture. Place fish on a lightly oiled sheet pan and bake for 15 - 20 minutes until fish flakes easily. Meanwhile, whisk sour cream, chipotle in adobo, cilantro and lime juice in a small bowl. Whisk in a pinch of salt and pepper. Taste, adjust seasonings as necessary and keep refrigerated until ready to use. Remove fish from oven and drizzle with chipotle-lime crema. Serve immediately.

This is my take on the cilantro-lime quinoa bowl from everyone's favorite Mexican-inspired coastal fast food chain. It turned out pretty good. You can season the tilapia or buy the pre-seasoned ones at the market. If you have an Aldi grocery nearby, they have a fresh tilapia seasoned with a Southwest rub, which is perfect for this recipe.

½ tablespoon onion powder
½ teaspoon salt

1 cup water
½ cup quinoa
⅛ teaspoon salt
1 large lime, zested and juiced
½ cup chopped fresh cilantro
salt to taste
1 tablespoon vegetable oil
2 cups chopped romaine lettuce, or to taste
1 cup fresh spinach leaves, or to taste
1 (15 ounce) can black beans, rinsed and drained
1 Roma tomato, chopped
1 avocado, chopped
2 tablespoons roasted pepitas, or to taste
2 wedges lime

Steps:

  • Combine paprika, onion powder, salt, black pepper, cayenne pepper, oregano, and garlic powder in a bowl. Rub about 1 tablespoon of the mixture on each side of both tilapia fillets, making sure to use up all the seasoning. Let fillets sit while preparing the quinoa, about 15 minutes.
  • Combine water, quinoa, and salt in a medium saucepan. Bring to a boil; cover and reduce heat to low. Cook until quinoa absorbs all the liquid, 12 to 15 minutes. Remove from heat. Stir in lime zest, juice, and cilantro. Season with salt.
  • Heat oil in a pan over medium-high heat. Cook tilapia fillets until fish flakes easily with a fork, 2 to 3 minutes per side.
  • Arrange romaine lettuce and spinach over 2 bowls. Divide tilapia, cooked quinoa, black beans, and tomato over the bowls. Top with avocado and pepitas. Serve each portion with a lime wedge.

3 tablespoons lime juice
2 cloves garlic, minced
1 pound tilapia fillets
salt and pepper to taste
1 butternut squash - peeled, seeded and sliced
1 bunch fresh asparagus spears, trimmed and chopped
poultry seasoning
½ cup mozzarella cheese

Steps:

  • In a large bowl, mix the honey, lime juice, and garlic. Season tilapia with salt and pepper, place in the bowl, and marinate 1 hour in the refrigerator.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Arrange the squash and asparagus in the baking dish. Place tilapia on top of vegetables, and season with poultry seasoning. Discard remaining marinade.
  • Bake 20 minutes in the preheated oven, until vegetables are tender and fish is easily flaked. Sprinkle with mozzarella, and continue baking 5 minutes, or until cheese is lightly browned.

1 teaspoon ground cumin, or to taste

cooking spray

Steps:

  • Mix olive oil, lemon pepper, cumin, paprika, dried mustard, and garlic powder together in a small bowl. Brush each tilapia fillet with mixture using a pastry brush. Flip; brush the other side. Cover with aluminum foil and refrigerate for 1 hour.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
