1 bunch thin asparagus (about 1 pound), trimmed
3 tablespoons olive oil, divided
3/4 teaspoon kosher salt, divided
1/2 teaspoon freshly ground black pepper, divided
4 (6-ounce) skin-on salmon fillets
8 teaspoons country-style or whole-grain Dijon mustard
3 tablespoons panko (Japanese breadcrumbs)
1/4 teaspoon smoked paprika
2 tablespoons chopped fresh tarragon

Steps:

  • Preheat oven to 275°F. Line a rimmed baking sheet with parchment paper. Toss asparagus with 2 Tbsp. oil, 1/2 tsp. salt, and 1/4 tsp. pepper on prepared sheet, then arrange in a single layer on one half of baking sheet. Bake asparagus 5 minutes.
  • Meanwhile, spread each salmon fillet with 2 tsp. mustard. Sprinkle fillets with 1/4 tsp. salt and 1/4 tsp. pepper total. Toss panko with remaining 1 Tbsp. oil in a small bowl. Sprinkle panko mixture evenly onto salmon fillets, then dust with smoked paprika.
  • After asparagus has baked for 5 minutes, remove baking sheet from oven. Place prepared salmon fillets skin side down on empty half of baking sheet. Return to oven and bake until salmon is firm but still pink in the center and asparagus is tender, 14-16 minutes more for medium rare salmon. Divide salmon and asparagus among four plates and top with tarragon.

1 pound salmon fillets
salt and ground black pepper to taste
½ cup mayonnaise
1 teaspoon minced garlic
1 teaspoon chopped fresh dill
½ medium lemon, juiced
½ cup pecans

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Cut salmon into smaller, equal-sized portions if needed. Pat dry. Season with salt and pepper.
  • Mix mayonnaise, garlic, dill, and lemon juice together in a bowl. Season with salt.
  • Place the pecans in a food processor. Pulse for 1 second and check the size of the pieces. You want it to be not quite powdery, but still with some larger chunks. Continue to pulse in 1-second bursts until desired consistency is achieved.
  • Place the salmon on a baking sheet. Layer the top of the salmon with aioli, then with pecans, until completely covered.
  • Bake in the preheated oven until fish flakes easily with a fork, 15 to 20 minutes.

Four 7- to 8-ounce wild salmon fillets
4 tablespoons extra-virgin olive oil
1/2 lemon, juiced
Freshly ground black pepper
8 ounces feta cheese
6 ounces white wine

Steps:

  • Preheat the oven to 375 degrees F.
  • In a small baking dish arrange the sprigs of thyme along the bottom.
  • Wash the fillets and dry them with paper towels. Rub the fish with the extra-virgin olive oil and the lemon juice, and then season with black pepper, to taste.
  • Arrange the fillets in the baking dish on top of the thyme. Next, break up the feta and sprinkle on top of the salmon. Add the white wine to the dish and bake for 20 minutes. Remove the fish from the oven and serve.

1/2 teaspoon black pepper
1/2 teaspoon dried Italian seasoning
3 tablespoons caesar salad dressing (creamy)
1 tablespoon lemon juice
16 ounces salmon fillets (four 4 oz fillets, fresh or frozen)

Steps:

  • Stir together cornmeal and seasonings in a shallow dish.
  • In separate shallow dish, combine dressing and lemon juice.
  • Dip each salmon fillet in Caesar mixture, then dip in cornmeal mixture to coat well on both sides.
  • Place on a baking sheet (that has been sprayed with non-stick cooking spray) in single layer.
