CRUNCHY SWEET POTATO PIE

I first tried this delicious pie at a church potluck dinner and was immediately hooked. I've spent many years perfecting my own recipe.

Dough for single-crust pie
1-1/4 cups sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 large eggs
1 can (12 ounces) evaporated milk
1 teaspoon vanilla extract
1-1/2 cups mashed cooked sweet potatoes
TOPPING:
1/3 cup butter
1/3 cup all-purpose flour
1/2 cup packed brown sugar
1/2 cup sweetened shredded coconut
1/2 cup chopped pecans
Whipped topping or ice cream

Steps:

  • Preheat oven to 425°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., In a bowl, blend sugar and spices. Beat eggs; add milk and vanilla. Combine the sugar mixture. Stir in potatoes; beat until smooth. Pour into pie crust. Bake for 15 minutes. Reduce heat to 350° and bake for an additional 30 minutes. Combine topping ingredients. Remove pie from the oven; sprinkle with topping. Bake until topping is golden brown, 10-15 minutes. Cool on wire rack. Store in the refrigerator. Serve with whipped topping or ice cream.

2 pounds sweet potatoes, for 1 1/2 cups puree
1/4 cup (1/2 stick) unsalted butter
Pinch salt
3 eggs
1/2 cup sugar
1 cup heavy cream
1 tablespoon grated orange zest
1 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1 1/4 cups all-purpose flour, plus more for dusting
1 tablespoon sugar
Pinch salt
1/2 cup (1 stick) unsalted butter, cold and cut into small chunks
2 tablespoons ice water, plus more if needed
1 egg white, lightly beaten
1/2 cup pecans
1 (8-ounce) package frozen cranberries
1 (2.3-ounce) package amaretto cookies (about 12), such as Amaretti di Saronno

Steps:

  • Heat the oven to 375 degrees F.
  • Prick the sweet potatoes with a fork and bake them until they are soft, about 1 hour. Remove from the oven and set aside until they are cool enough to handle.
  • While the potatoes are cooking make the pastry: combine the flour, sugar, and salt in a large mixing bowl. Add the butter and mix with a pastry blender or your hands until the mixture resembles coarse crumbs. Pour in the ice water and work it in to bind the dough until it holds together without being too wet or sticky. Squeeze a small amount together, if it is crumbly, add more ice water, 1 teaspoon at a time. Form the dough into a ball, wrap it in plastic wrap, and refrigerate it for at least 30 minutes.
  • Sprinkle the counter and a rolling pin lightly with flour. Roll the dough out into a 10-inch circle. Carefully roll the dough up onto the pin and lay it inside a 9-inch pie pan. Press the dough firmly into the bottom and sides so it fits tightly. Trim the excess dough around the rim and pinch the edges to form a border. Place a piece of parchment paper over the crust and fill with uncooked beans or pie weights. Bake the pie crust until it sets, about 20 minutes. Remove the parchment and beans. Brush the bottom with the beaten egg white and set aside.
  • While the crust is cooking make the filling: When cool enough to handle, peel the sweet potatoes and puree the pulp in a food processor with 1/2 stick butter and a pinch of salt. Measure 1 1/2 cups puree into a bowl. In another bowl beat the eggs and sugar until the sugar has melted. Add the eggs to the sweet potato puree and whisk well. Add the cream, orange zest, cinnamon, and nutmeg and stir well to combine. Pour the mixture into the pie shell. Place the pie pan on a sturdy cookie sheet to catch any spills. Lower the oven temperature to 325 degrees F and bake until the pie is set but still jiggles slightly, about 40 minutes. Remove from the oven and allow it to cool.
  • Meanwhile, put the pecans on a baking sheet and bake them with the pie for about 10 minutes to toast them. Remove them from the oven and let them cool. Thaw the cranberries in a strainer set over a bowl to catch the liquid. Put the cookies, pecans, and cranberries into a food processor and pulse them a few times until they are coarsely chopped. Sprinkle the topping evenly over the cooled pie and serve immediately.

Holiday breakfast material, right here! Cinnamon, nutmeg, and sweet potato meet baked oatmeal in this easy breakfast recipe. The crunchy pecan streusel totally seals the deal.

1 cup mashed cooked sweet potato (1 medium sweet potato)
1 cup unsweetened almond milk or other milk of your choice
1 large egg
1/4 cup pure maple syrup
2 teaspoons pure vanilla extract
1 1/2 cups rolled oats
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon fine-grain sea salt
1/2 cup chopped raw pecans
2 tablespoons dark brown sugar
2 tablespoons white whole wheat flour or all-purpose flour (or substitute your favorite gluten-free blend)
1 tablespoon coconut oil (Earth Balance butter, or butter, cut into small pieces)

Steps:

  • Preheat oven to 375 degrees Fahrenheit. Grease a standard-sized pie pan or coat with non-stick spray.
  • Add sweet potato to a large bowl. Mash until as smooth as possible. Add milk, egg, maple syrup, and vanilla. Stir with a whisk until well-combined. Add the oats, cinnamon, nutmeg, ginger, and salt. Stir with a wooden spoon until combined. Pour into pie plate and smooth slightly with the spoon.
  • Make the streusel topping. Add the pecans, brown sugar, and flour to a small bowl. Add the coconut oil or butter. Use your fingers to distribute the oil or butter throughout the mix until the butter pieces are approximately sunflower-seed-sized. Distribute topping over the top of the oatmeal mix.
  • Bake until the nuts are toasted and the oatmeal is no longer jiggly, about 35 minutes.
  • Serve with an extra drizzle of maple syrup if desired. You can also add a dollop of coconut whipping cream or whipping cream and/or a sprinkle of cinnamon if you wish.

1 3/4 c dark brown sugar,divided
2 Tbsp pumpkin pie spice,divided
1 (9-inch) unbaked pie crust
2 c chopped sweet and crunchy peanuts,divided
3 sweet potatoes
1 c milk
3/4 c hazelnut liquid creamer
2 egg whites
1 pkg (8 ounces) cream cheese,softened
1 tsp coconut extract
1 c crushed pretzels

Steps:

  • 1. In a small bowl,combine 1/2 cup melted margarine,3/4 cup dark brown sugar and 1 tablespoon pumpkin pie spice;whisk well.
  • 2. Brush the mixture into a pie crust.Sprinkle 1 cup chopped sweet and crunchy peanuts all over the crust. Cover with plastic wrap and refrigerated for 3 hours.
  • 3. Preheat oven to 350 degrees F.Place sweet potatoes in an aluminum foil-lined baking sheet.
  • 4. Bake in preheated oven until the potatoes are easily pierced with a fork skin loosens,35 to 40 minutes.Allow potatoes to cool.
  • 5. Peel the potatoes and place them in a large bowl and mash them with a potato masher.
  • 6. Beat milk,liquid creamer,egg whites,cream cheese,coconut extract and remaining melted margarine,brown sugar and pumpkin pie spice into mashed sweet potatoes with an electric mixer until fluffy,about 5 minutes.
  • 7. Stir in crushed pretzels and remaining chopped sweet and crunchy peanuts.
  • 8. Pour sweet potato mixture into a prepared pie crust.
  • 9. Bake in preheated oven for 40 to 45 minutes or until the pie is set and the crust is browned.
