These salmon patties are delicious for lunch or dinner.

Steps:
- Drain and reserve liquid from salmon. Mix egg, onion, bread crumbs and salmon together.
- Make into patties. If mixture is too dry to form into patties, add reserved liquid from salmon.
- In a frying pan, heat olive oil. Place patties in pan. Brown on each side, turning gently. Drain on paper towels and serve.

SKILLET FRIED SALMON PATTIES
Yummy skillet fried salmon patties like I used to eat growing up.

Steps:
- Heat oil in skillet over medium-high heat.
- Open canned salmon; place contents in a medium bowl.
- Remove bones from salmon (optional).
- Break into chunks with a fork.
- Break egg into a small bowl; whisk with garlic, pepper and dill.
- Put cracker or panko crumbs, chopped onion and egg mixture in bowl with salmon. Mix with a fork until well combined.
- Shape fish mixture into 6 cakes/patties about 1/2-inch thick.
- Place patties in the skillet, leaving space between each for easy turning.
- Cook on one side for 4 minutes; cook the other side 4 minutes.
- Continue cooking and turning if needed until both sides are golden brown & crispy.
- Serve with tartar sauce or cocktail sauce and lemon wedges.

Southern Salmon Patties combine canned salmon, cajun seasoning, and cornmeal in this easy crispy Southern style salmon patty recipe.

- In large saute pan over medium high heat, saute onions in butter until golden brown, about 5 minutes. Remove from heat and set aside.
- In large bowl, combine salmon, cajun seasoning, lemon juice, crushed saltines, salt, pepper, egg, and the cooked onions. Stir well to combine. Form into four patties.
- Place cornmeal in shallow dish and coat each patty on both sides.
- Using same pan you cooked the onions, heat the oil over medium high heat. Add the salmon patties and cook until crisp on both sides, about 5-8 minutes each side. Serve hot or cold.

CRISPY SALMON PATTIES
My family has always loved these salmon patties. They come out very crisp and have a wonderful flavor and they're easy to make. I serve them with potatoes or mac & cheese and a vegetable for a great meal. Hope y'all enjoy!

- 1. Open canned salmon and drain. Remove ALL skin and ALL bones from salmon. Place in a large bowl. Crush crackers into crumbs and add to salmon; add eggs. Using hands, mix all ingredients together well.
- 2. Heat canola oil in large skillet. When oil is hot, form salmon mixture into patties and fry 3-5 minutes or until golden brown. Gently turn and brown on other side. Sprinkle with salt and pepper to taste. Drain on paper towels and serve hot.
- 3. HELPFUL TIPS: When forming patties, try not to make them too thin or they may break apart when turning. Be sure to remove all of the skin and bones from the salmon before mixing and forming into patties. When browned well in hot oil, these patties are very crispy and delicious.

- Place salmon on a baking sheet coated with cooking spray; sprinkle with 1/8 teaspoon pepper. Bake, uncovered, at 350° until fish flakes easily with a fork, 14-17 minutes. - Heat 1 tablespoon butter and 1 tablespoon oil in a large saute pan over medium-low heat. Add onion, celery, parsley, capers, salt, and pepper; cook until tender, 8 to 10 minutes. Remove from heat; set aside; cool slightly.
- In a large bowl, combine cooked salmon, mayonnaise, bread crumbs, mustard, dill, and eggs. Add sauteed vegetables, and stir well to combine.
