Salad
1 1/4 cup fresh cranberries, chopped
1/4 cup sugar
4 cup broccoli florets
4 cup packaged shredded cabbage with carrot (coleslaw mix works well)
1/2 cup chopped pecans or walnuts
1/2 cup raisins
1/3 cup chopped red onion
6 slices bacon, crip cooked, drained
Dressing
1 cup mayonnaise
1/4 cup sugar
1 Tablespoon vinegar

Steps:

  • First make the berry mixture. In a small bowl, combine the chopped berries and 1/4 cup sugar. Chill mixture until serving time. Make the dressing. In small bowl, combine the mayonnaise, 1/4 cup sugar and 1 tablespoon vinegar Make the salad Combine the broccoli florets, the shredded cabbage/carrot mixture, the nuts, the raisins, and the onion. Drizzle the dressing over the salad and toss. Chill salad from 1 to 24 hours. Just before serving, gently fold in the cranberry mixture and the crisp bacon.

Low Carb Holiday Crunchy Cranberry Jello Salad image

This is a tasty recipe to serve at Thanksgiving or Christmas dinner. It's also an optimal addition if you have someone either on a low carb diet or who is Diabetic in attendance. The combination of flavors is awesome ~

1 1/2 cup(s) water
1 12 oz bag(s) fresh cranberries
1 teaspoon(s) almond extract
24 package(s) splenda
1 1/2 cup(s) finely chopped celery
2 - finely chopped granny smith apples
2 package(s) (3 oz) jello sugar free black cherry jello
3/4 cup(s) (3 oz) jello sugar free raspberry jello
1 cup(s) chopped pecans

Steps:

  • Heat 1 1/2 cups water, Splenda, almond extract and cranberries in saucepan over medium heat with cover on pan until most of the cranberries burst open. Stir frequently. It will thicken as you go.
  • While this is simmering, chop celery, apples and pecans (you can buy the pecans already chopped but it costs more).
  • After the berries are ready, remove from heat and stir in the two packages of Black Cherry Jello. Return to heat and add in 3/4 cup water and package of Raspberry Jello. Let reach a boil then remove from heat.
  • Pour into glass pan or I prefer one of those fancy glass bowls on a pedestal for better presentation and refrigerate until set. Can start in freezer if you are in a hurry, but regular setting time in the fridge is overnight. Serve and enjoy!

16 ounces cranberries
1 large orange
2 (3 ounce) boxes Jello gelatin, Red
1 cup pecans, chopped
2 cups celery, chopped
3/4 cup sugar

Steps:

  • Chop cranberries and orange after washing first. The orange can be chopped with the peel on and seads in -- really! Cover the chopped fruit with sugar and let set overnight.
  • Drain and save the juice from the cranberry/orange mixture. Add enough water to the juice to make two cups of liquid (1 hot to dissolve the gelatin and 1 cold). Mix the two pkgs of Jello with the the two cups of liquid. Let partially set.
  • Dump in everything -- cranberries, orange, celery, and nuts. Stir well. Chill (that's the salad -- not you).
  • Serve with the meal. Then hide the rest for you. =).

1 1/2 cup(s) cold water
1 can(s) whole cranberry sauce, broken up
1 cup(s) chopped celery
1 1/2 cup(s) boilng water
1 cup(s) chopped apple
1 cup(s) chopped walnuts

Steps:

  • Dissolve jello in boiling water, then add cold water.
  • Chill in 9 x 13 pan until partially set.
  • Add remaining ingredients and chill several hours or overnight.
