1 pound fresh spinach
1 teaspoon garlic salt
1 pound cod, cut into large pieces
1 lemon, zested and juiced
1 tablespoon chopped fresh dill
1 teaspoon sea salt
½ teaspoon cracked black pepper
1 cup shredded sharp Cheddar cheese
¼ cup Italian-seasoned bread crumbs
¼ cup panko bread crumbs

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Evenly spread spinach in the bottom of prepared casserole dish; sprinkle with garlic salt. Arrange fish atop spinach, keeping the pieces side by side and larger pieces toward the outside of dish. Top fish with lemon zest, lemon juice, dill, sea salt, and black pepper.
  • Combine Cheddar cheese, Italian-seasoned bread crumbs, and panko bread crumbs in a bowl; spread evenly over fish. Cover dish with aluminum foil.
  • Bake in the preheated for 12 to 15 minutes; uncover and cook until fish flakes easily with a fork and topping is lightly browned and crunchy, 5 to 8 more minutes.

2 boxes (5 oz each) Betty Crocker™ three cheese scalloped potatoes
4 cups boiling water
1 1/3 cups milk
2 tablespoons butter
1 1/2 teaspoons Dijon mustard
1 bag (12 oz) frozen broccoli, cooked as directed on bag
3 cups cheese-flavored crackers, crushed

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Make potatoes as directed on box for stove-top directions. Stir in mustard. Add half the potatoes to baking dish, spreading evenly. Sprinkle broccoli over top. Pour remaining potatoes on top of broccoli. Sprinkle crushed crackers on top.
  • Bake 12 to 15 minutes or until sauce is bubbling. Let stand 5 minutes before serving (sauce will thicken as it stands).

8 ounces egg noodles
1 1/4 cups small-curd cottage cheese
1/2 cup sour cream
1 cup grated sharp Cheddar
1/2 cup sliced green onions, plus more for garnish
2 cups crushed potato chips

Steps:

  • Preheat the oven to 375 degrees F. Bring a large pot of salted water to a boil.
  • Cook the egg noodles until al dente as per the package directions. Drain and set aside.
  • In a medium bowl, combine the cottage cheese and sour cream. Add plenty of freshly ground black pepper. Add to the noodles and stir. Add the Cheddar and green onions, then stir.
  • Add the contents of the bowl to a 9-by-13-inch baking dish and bake for 15 minutes. Remove and top with the potato chips. Return to the oven and bake until golden, another 5 minutes.
  • Garnish with green onions, then serve.

3 lb boneless, skinless chicken breast, cooked and cubed
1/2 lb bacon, cooked crisp and crumbled
1 c each - frozen corn, thawed & thin sliced celery
salt & pepper to taste
10 3/4 oz can, cream of chicken soup
1 c sour cream
1 Tbsp dried parsley
1/2 c green onion, sliced - tops too
3 - 4 clove garlic, minced
1 c shredded, sharp cheddar cheese & 1/2 cup mild cheddar cheese
1/3 c melted, butter
1 1/2 c seasoned, panko crumbs

Steps:

  • 1. Preheat oven to 350 degree F. Spray an 11 x 7 baking dish with non stick cooking spray or grease. Cook bacon crisp and drain, crumble. Par cook celery in microwave, until tender crisp, or could saute in a little butter for a few minutes. If you like it on the crispy side, can add it raw. I prefer to par cook for a few minutes.
  • 2. In a medium sized bowl, stir together the chicken, bacon, celery, onion, salt, pepper, sour cream, soup, corn, parsley and garlic, mix well.
  • 3. Spread into prepared baking dish.
  • 4. Top with cheese and bake for 20 - 25 minutes or until cheese is melted and beginning to bubble.
  • 5. In a bowl, add melted butter and Panko crumbs - toss to coat well. Spread over cheese, evenly.
  • 6. Place back into the oven and continue baking for another 15 - 20 minutes or until bubbly and crumbs begin to golden.
  • 7. Serve hot. This was delicious!

4 -5 yellow squash, peeled and chopped in big chunks (peeling is optional)
1 medium onion, chopped
1 (10 1/2 ounce) can cream of mushroom soup (I have used cream of chicken)
1/2 cup milk
1 -2 inch Velveeta cheese, chopped (off the big block)
2 cups shredded cheddar cheese (use more or less)
1 (12 ounce) bag Doritos, broken up (not to fine, you may not use the whole bag so crumble a layer at a time)
salt and pepper

Steps:

  • Heat soup and milk in sauce pan.
  • Add Velveeta stir until melted.
  • Add squash and onion to mixture and stir gently until mixed.
  • Layer Doritos in casserole sprayed with cooking spray, just enough to cover bottom good.
  • Pour enough squash mixture to cover chips.
  • Sprinkle enough cheese to cover mixture.
  • Repeat layers until all is used, ending with chips then cheese.
  • Cover and bake in 350 degree oven for 25 minutes.
  • Uncover and bake for 10 more minutes until top is lightly brown.

It's an all-in-one dinner - chicken, vegetables, and rice all in one dish. Wild rice adds much more flavor than traditional white rice. It's filled with tender and juicy chicken. On top is a cracker and poppyseed mixture that, once baked, creates a nice crunchy texture. Your family will gobble up this easy dinner.

4 - baked chicken breasts
1 package(s) Steamfresh broccoli
1 can(s) cream of chicken soup (10.5 oz)
1 cup(s) shredded cheddar cheese
8 ounce(s) sour cream
1 package(s) long grain & wild rice mix (cooked to package directions)
1 package(s) Ritz crackers
1 tablespoon(s) poppy seed (more if desired)
1 stick(s) margarine

Steps:

  • For the casserole, bake chicken.
  • After cooled, chop into small cubes.
  • Cook rice to packages directions.
  • Mix those two ingredients together along with broccoli, cream of chicken soup, cheese & sour cream. Stir until well combined. Pour this mixture into greased casserole dish.
  • For the topping, melt the one stick of butter.
  • Put Ritz crackers into a big Ziploc bag & crush.
  • Mix above two ingredients along with the poppy seed. Sprinkle all across casserole.
  • Bake at 350 degrees for 30-45 minutes.

10 chicken thighs plus 2 boneless, skinless chicken breasts - poached and shredded
1 Tbsp creole seasoning
1 tsp salt
2 Tbsp dry, minced onions
1 - 7 oz chopped, green chiles - drained
3 can(s) cream of chicken soup - not family sized
2 - 8 oz bags, shredded velveeta cheese
1 Tbsp red pepper flakes - optional
6 - 8 oz crushed taco flavored doritos or your favorite

Steps:

  • 1. Poach chicken in water with creole seasoning and salt. Drain and remove meat from bones and shred.
  • 2. Place chicken evenly into a 9 x 13 baking dish. Sprinkle with dry minced onion.
  • 3. Preheat oven to 400 degree F. In a large skillet, mix together the soups, cheese and chiles. Bring to a simmer and stir until Cheese is melted and sauce is smooth. Stir in pepper flakes if using.
  • 4. Pour the cheese sauce evenly over the chicken and sprinkle the top with the crushed Dorito's.
  • 5. Bake for 20 - 25 minutes or until heated through and bubbly. Serve hot...my family loves this casserole...they always go back for seconds.

1 pound pasta twists or elbows
pounds 1 to 1.5 lean ground beef
1 teaspoon each (salt, pepper, garlic powder)...use more or less to your taste
1 can (6 oz.) tomato paste
1 can mushroom soup
1 can (14 to 15 oz.) stewed tomatoes (do not drain liquid)
2 cups Kraft Shredded Mozzarella or Cheddar
1 can dried fried onions

Steps:

  • Preheat oven to 375°F. Boil the pasta as per the directions on the package (al dente). While the water for the pasta is heating, in a skillet, brown the hamburger meat, salt, pepper, and garlic powder.
  • In a 2 qt. oven-safe casserole dish (while meat is browning), combine the tomato paste, mushroom soup, stewed tomatoes and shredded cheese and mix well. Set aside until meat is browned.
  • After meat browns, drain off fat and add meat to ingredients already in the casserole dish. Mix well. After pasta is cooked, drain pasta well, and add it to the other ingredients in the casserole dish. Mix well until all pasta is coated.
  • Place uncovered casserole dish in oven and bake for approx 35 minutes (or until the middle is hot and bubbly).
  • Pour the can of dried fried onions on top of casserole and spread out evenly over top. Bake another 5 minutes until onions are browned. Remove from oven and mix well before serving.
