HONEY GARLIC BAKED PORK BITES



Honey Garlic Baked Pork Bites image

Moist and tender, with charred bits too, these Honey Garlic Baked Pork Bites are delicious and easy to prepare. Despite the long cooking time, this main is perfect for a family dinner anytime. Sweet and garlicky, with an optional kick of spice and heat. Yum!

4 pounds pork shoulder, (fat cap removed, cut into 1.5 - 2" pieces)
1 tablespoon olive oil
1 large yellow onion, (sliced 1/2 inch thick)
1/2 teaspoon salt
1/4 teaspoon pepper
8 cloves garlic, (finely minced)
1 cup honey
1/2 teaspoon dried red chili flakes
1 teaspoon sesame seeds, (plus more for garnish)
parsley, (chopped for garnish)

Steps:

  • Preheat the oven to 350 degrees.
  • In a large oven-safe baking dish, gently toss the pork with salt, pepper, onion, and olive oil. Cover the dish with aluminum foil and bake for 1 hour.
  • In the meantime, stir together the honey, dried red chili flakes, and garlic. Set aside.
  • Remove the pan from the oven and add the honey and garlic mixture. Stir into the pork bites. (There will be a lot of water in the pan - do not drain!) Bake for 30 minutes, uncovered.
  • Remove dish from oven, stir, and bake for 30 minutes. Then, repeat this step once more.
  • Lastly, remove the dish from the oven again, add the sesame seeds, stir, and return to the oven for 30 minutes.
  • Remove from oven, and allow to cool for five minutes. Sprinkle with chopped, fresh parsley and sesame seeds. Serve.

1 pork tenderloin (3/4 to 1 lb)
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon packed brown sugar
1/4 teaspoon garlic powder
1/8 teaspoon ground red pepper (cayenne)
1/2 cup mayonnaise or salad dressing
1/2 teaspoon ground mustard
1 medium green onion, finely chopped (1 tablespoon)

Steps:

  • Cut pork into 32 (1-inch) pieces; place in medium bowl. In small bowl, mix chili powder, cumin, brown sugar, garlic powder and red pepper. Reserve 2 teaspoons spice mixture; sprinkle remaining mixture over pork pieces; stir to coat completely. Let stand 15 minutes.
  • In small bowl, mix mayonnaise, mustard, reserved 2 teaspoons spice mixture and the onion; set aside.
  • Heat gas or charcoal grill. Spray grill basket (grill "wok') with cooking spray. Spoon pork into basket.
  • Place basket on grill. Cover grill; cook over medium heat 10 to 12 minutes, shaking basket or stirring pork once or twice, until pork is no longer pink in center. Serve with toothpicks and mayonnaise mixture for dipping.

Thanks to social media, food bloggers, and celebrity chefs with too much time on their hands, pork belly was/is all the rage. It's a common sight on menus across the land, and you can't channel-surf past a food show without seeing it. It also helps that people are no longer terrified to eat a little fat.

½ pound whole pork belly, skin removed
½ teaspoon smoked paprika, or to taste
kosher salt and ground black pepper to taste
1 tablespoon olive oil, or to taste

Steps:

  • Preheat oven to 200 degrees F (95 degrees C).
  • Season pork belly all over with smoked paprika, salt, and black pepper. Wrap pork in parchment paper; wrap a second time in aluminum foil, and a third time in another sheet of aluminum foil. Place pork packet in a baking dish.
  • Roast in the preheated oven until tender for 6 hours. Let cool in wrappings to room temperature; place cooled packet in refrigerator and chill for 8 hours or overnight.
  • Unwrap chilled meat. Save any rendered fat that falls away when unwrapping pork.
  • Cut meat into 6 equal-size portions. Cut 1/8-inch by 1/8-inch slashes in the fat-side of the pork. Season with salt.
  • Heat 2 tablespoons reserved pork fat in a skillet over medium heat. Place pork belly, fat side down, in hot fat; cook until well-browned on all sides and heated through, 5 to 10 minutes. Transfer pork belly to a plate, drizzle with olive oil and season with pepper.
