Steps:

  • In a large bowl, combine the apples, celery, raisins and walnuts. Add mayonnaise; toss to coat. Cover and refrigerate until serving.

This is a great sandwich to have for a light lunch , even kids will like it. I found this in a Canadian living mag. last year and just found the recipe again in a box of papers. Hope that you enjoy it as much as I did.

1 boneless chicken breast, skin removed
1/4 cup finely diced peeled apple
1 green onion, finely diced
1/4 cup mayonnaise
1 teaspoon lemon juice
1/4 teaspoon curry powder (optional)
salt and pepper
6 slices bread
2 tablespoons butter, softened

Steps:

  • Pour water in pan to 3/4 in and bring to simmer.
  • Add chicken , cover and poach over med/low heat for about 12 -15 minutes.
  • Put on a plate and refrigerate till cool enough to handle. Then finely dice.
  • In a bowl stir all remaining ingredients including the chicken.
  • Butter the bread with the softened butter and spread 1 slice with the mixture. Top with remaining slice of bread. Trim the crust and cut the sandwich into triangles or squares for little hands.
  • If you want to make ahead , place on a baking sheet and cover with a damp cloth and cover tightly with plastic wrap for up to 24 hours.

APPLE HARVEST CRUNCHY CRISP SALAD
2 large green apples, diced (for color use 2 color apples)
2 large red apples, diced
1 Cup chopped and diced celery fresh chilled and cold
1 1/2 C raisins, crazins, or pitted chopped dates
1 Cup walnuts, or pecans chopped
1/2-3/4 C mayonaise
2 Tbs sugar

Steps:

  • 1. Combine Mayonaise and Sugar together, Stirr well til sugar is disolved. set aside
  • 2. In a large Bowl chop apples into salted water, to help retain their color, when chopped, drain well. toss on to paper towel to drain & pat with paper towels the excess water.. Return to Bowl the Drained apples. Add Chopped celery, raisins, and nuts, toss well.
  • 3. Add the Mayonaise that was set aside, and Toss well. Cover and Chill well in refer, until serving time. Serves about 15-20
  • 4. Tip/Hint: for Kids Lunches, I have taken a flour Tortillas, Drizzled Honey and Cinnamon and Sugar then Spooned apple salad into them, then Rolled then up for Kids lunches. Wrap with Saran wrap. also added Peanut Butter, Cinn. & sugar then apple Salad rolled up, Kids love them. Garanteed to be eaten!!

3 medium apples, peeled, seeded and diced small
lemon juice
1 cup red seedless grapes or 1 cup green seedless grape
1 cup celery rib, diced small
3/4 cup low-fat fruit yogurt (your choice flavor-I add a touch of honey to the yogurt)
1/4 cup sliced almonds, plus
2 tablespoons sliced almonds, toasted
mint sprig

Steps:

  • Toss the cut up apples with a bit of lemon juice to avoid browning. Cut the grapes in half.
  • Mix the apples, grapes, celery, yogurt and 1/4 cup almonds together. Toss well to coat.
  • Arrange on lettuce leaves if desired.
  • Sprinkle each serving with the reserved 2 tablespoons of toasted almonds and add a sprig of fresh mint leaves.

2 Tbsp agave nectar - can be found on the baking isle
1/2 tsp ground cinnamon
1 firm pear - cubed
1 large crisp apple - cubed
1/2 c slivered almonds
1/2 c chopped walnuts
2 c halved grapes
1 stalk(s) celery - sliced (optional)
1 c shredded coconut

3 tbsp crunchy peanut butter
3 tbsp sweet chilli sauce
4 lean pork steaks
juice 2 limes
1 tsp Thai fish sauce
pinch of sugar
2 apples , cored and thinly sliced
small pack coriander , leaves roughly torn
½ a small pack mint , leaves roughly torn

Steps:

  • Heat grill to high. Mix the peanut butter and sweet chilli sauce together, then season with pepper (the peanut butter is salty enough). Arrange the pork on a baking tray, brush the tops with half the nutty mixture, then grill for 3 mins. Carefully turn the pork steaks over, brush with the remaining mixture, then grill for 3-4 mins more until just cooked through.
  • Meanwhile, make the salad by mixing the lime juice, fish sauce and sugar in a bowl. Stir in the apple slices so they are well coated in the dressing, then toss with the coriander and mint. Serve the crunchy apple salad alongside the pork steaks, with jasmine rice on the side.

For the lemon dressing:
