YOTAM OTTOLENGHI'S CAULIFLOWER SALAD

Steps:
- Preheat oven to 220°C/425°F (200°C fan).
- Toss cauliflower with oil, salt and pepper. Spread on tray, roast 20 minutes, turn, then roast for a further 5 to 10 minutes until the edges are golden brown and the cauliflower is cooked through. Don't let it get overcooked, sad and soggy!
- Transfer to bowl and let cool for 20 minutes.
- Turn oven down to 160°C/320°F (140°C fan). Spread hazelnuts on tray then roast for 5 minutes until they smell amazing.
- Cool slightly, then roughly chop (most skin will naturally fall off).
- Place hazelnuts, parsley and celery into the bowl. Sprinkle over cinnamon, allspice, salt and pepper. Drizzle with olive oil, maply syrup and vinegar. Toss gently with hands or rubber spatula.
- Plate up: Taste, add more salt or pepper if needed. Transfer to serving bowl. Scatter over pomegranates. Serve at room temperature.

Steps:
- Whisk olive oil, vinegar, lemon juice, salt, and pepper together in a bowl until dressing is smooth.
- Mix cauliflower, red onion, parsley, and garlic together in a large bowl. Drizzle dressing over cauliflower mixture; toss to coat. Gently fold tomatoes into salad. Chill salad in refrigerator up to 3 hours before serving.

CRUNCHY AND SWEET CAULIFLOWER SALAD
I am always looking for low calorie dishes that are quick and easy. They also have to pass the husband test. This one did. Great to make ahead in a big bowl to have it all week. Add any other of your favorite ingredients, like cucumbers, hard boiled eggs, and nuts. This is one that you can be creative with. It is all about the sweet with the crunchy!

- cut up head of cauliflower and remove stem. (I steam mine to soften a little)Cut up into bite size pieces and put in large bowl.
- add celery and red onion. Add any other veggies you would like at this point. Be creative! (Sometimes I add red, yellow peppers, cucumbers or even peas. What ever you have on hand.
- Make the dressing in seperate bowl. Mix the Mayo, splenda, apple cider vinegar and pepper to taste. Whisk until mixed. Add more apple cider vinegar to thin the dressing if you would like.
- Mix the salad with the dressing and refrigerate for about two hours before serving. Top with sunflower seeds or nuts for that extra added Crunch!
SWEET AND SOUR CAULIFLOWER

- Preheat the oven to 425 degrees F. Line a baking sheet with foil and lightly grease with oil.
- Combine the cauliflower and 3 tablespoons of the oil in a large resealable plastic bag. Seal and shake until well coated. Add 1/2 cup of the cornstarch, 1 teaspoon salt and the pepper, then reseal and shake until well coated.
- Heat the remaining 1/3 cup oil in a large skillet over medium-high heat. Once hot, add the cauliflower and fry, tossing to cook on all sides, until deep golden brown in spots, about 10 minutes. Transfer the fried cauliflower to the prepared baking sheet and bake until the cauliflower starts to get crispy, 10 to 15 minutes
- While the cauliflower bakes, prepare the sauce. Whisk together the sugar, vinegar, soy sauce, ketchup, garlic powder and the remaining 1/2 teaspoon salt in a medium saucepan. Place over medium-high heat and bring to a boil; the sauce should thicken slightly.
- Whisk together the remaining 1 tablespoon cornstarch with 2 tablespoons cold water in a small bowl until fully dissolved. Add the cornstarch slurry to the boiling sauce, reduce the heat to low and cook until thickened, about 30 seconds.
- Transfer the cauliflower to a large bowl and add half of the sauce. Toss until the cauliflower is well coated, then add the remaining sauce and toss. Garnish with the scallions and sesame seeds and serve with rice.
- Place the rice and 2 1/4 cups cold water in a medium saucepan. Put the pan over medium-high heat. Bring to a boil, reduce to a simmer, cover and cook until the rice is tender, 18 to 20 minutes. Remove the lid and fluff the rice before serving.
